It’s so amusing to me to look back over my blog from when I started it back in April, and watch it progress to where it is now, still a Rookie Junior Varsity blogger. I am ok with that title but I must thank you all for supporting me in the beginning, it was rough haha, and some of the photos were not appetizing at all, thank god they tasted yummy.
I have pretty much come to the realization that my new Sunday ritual begins with a delicious Almond Milk Latte which you can read about here and me sitting in the coffee shop typing away for some new recipe posts for you all. Reason I am telling you, is so you don’t expect the ADHD splattered across these posts to diminish anytime in the near future. K now that we covered that, let’s address this weekend.
It was great, end of story k. For some reason I had a productive gene kick my ass and it felt great to be done with everything by Saturday morning at noon. It left me time to cook some amazing food for a few friends coming over to watch Jon Jones kick Rampages ass, which happened. I went back through my own website and whipped up some go to favorites of mine as well as some new creations. I made some delicious Lime Cilantro Coleslaw and used Lime infused Avocado Oil from Bella Vado instead of the EVOO. After that the super simple Sun-Dried Tomato Broccoli soup with some quick Cauliflower rice to serve with my new creation I will talk about in a minute. I had a Lemon Garlic Chicken making itself delicious in the crock pot while I slaved away making an amazing Pumpkin Chicken Chili which will get itself posted sometime in the near future. Pretty much when I have something interesting to say and the patience to type it :)
On top of all that amazing food, I may have indulged in a few NorCal Margaritas which helped loosen me up and made my night. Made the dishes more fun too, quite random but buzzed dish washing is just a little more fun than average dish washing, especially while it feels like your in a boat in rough seas swaying back and forth. I am a true kitchen guy to the end too, couldn’t go to bed with dishes dirty or food out, so in my infinite intoxication I cleaned. It’s sad on how well of a house wife I would make :( Well enough of me blabbing, go enjoy this simple and delicious meal :)

Ingredients
Method
- Cook your spaghetti squash following the instructions above and set aside
- In a sauce pan over medium heat saute your onions, garlic, and peppers until your onions are translucent. You can saute them in the oil of your choice
- Once translucent add in your ground beef and saute until your beef is cooked through
- Add in all remaining ingredients and stir well, cover and let simmer for 10-20 minutes stirring occasionally
- Plate your spaghetti squash and spoon your sauce over the top
- Enjoy
