Cinnamon Swirl Banana Cake

Ingredients
  

Cake

  • 3 mashed bananas spotted
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon

Candied Walnuts

  • 1/8 cup 100% pure maple syrup
  • 1/2 cup walnuts chopped

Swirl

  • 1 banana
  • 1 tablespoon cinnamon
  • 1 tablespoon cinnamon honey If you don't have this, use organic raw honey and then have a total of 2 tbsp cinnamon in the swirl

Instructions
 

  • Preheat your oven to 350 degrees fahrenheit
  • In a mixing bowl combine your cake ingredients and using your hand mixer, mix well
  • In a separate mixing bowl, combine all your swirl ingredients and mix well by hand
  • Grease your 8x8 pyrex baking dish with oil of your choice, I used coconut oil
  • Fold in your cake batter and spread evenly
  • Now drop spoonfuls of your swirl mixture all over your batter and then using a knife cut in the swirl however your little heart desires
  • Place your cake in the oven and start the baking process, should bake for a total of about 30 minutes or until a toothpick comes out clean
  • As soon as you put your cake in the oven, make the candied walnuts
  • As soon as they are done and cool, you should have about 15 minutes of baking time left, pull your cake out and sprinkle your walnuts all over your cake and place back in the oven
  • Finish your baking time, remove from the oven and let cool
  • Slice and enjoy

    So disappointed in your directions…very unclear….you talk about mixing first 8 ingredients, then you say to combine all ingredients well. No mention of syrup and nuts to be used later! I’ve been cooking for years and have done testing for one of your colleagues. It’s in the oven so I’m hoping the addition of the syrup doesn’t mess it up. Please go back and revise this for your followers. Thanks.

      Karin there was a typo in the ingredient list. I adjusted it so the maple syrup and walnuts are separate as they are to be made into candied walnuts. The syrup can’t hurt, just extra sweet :) In the process it says to use the maple syrup and walnuts but it wasn’t clear in the instructions. I apologize

    Made this yesterday. Yummy. By mistake (because I didn’t count the first 8 ingredients!), I added 1/4 cup of maple syrup to the cake mixture. Still came out great, albeit, a bit sweeter than planned perhaps but still good. Loving your Facebook page!

    Do you think there is anything we can sub for the banana in the swirl? I only have 3 bananas (I’ve been waiting for them to spot so I could make this…so excited!) but my car is in the shop and I don’t have a way of getting the 4th banana tonight and don’t want to wait. I know I could make a loaf 2/3 the size and only use the 2 bananas for the bread, but figured I’d ask about substitutions! Thanks!!

    This came out great! I doubled the recipe to make a layered cake, just make sure to put parchment paper down on the bottom of the pan so it doesn’t stick. I put the candied walnuts in the middle and used the cream cheese frosting recipe from Food Lover’s Kitchen. One of the best paleo baked goods I’ve made to date! Its for my friend’s birthday, we’ll see if anyone realizes it’s gluten/grain-free. Thank you!!!

    I made this again for the second time with an alteration that turned out yummy.
    In the swirl, I pureed a banana with about 8 dates (I left them kind of chunky). I did just a bit of honey and no cinnamon. I love dates, so I thought it turned out pretty well. This is one of my favorite recipes! I might add walnuts to the bread next time (but not candy them).

    This may be the best dessert yet. I loved the pumpkin brownies, but I think this is my favorite. I can’t believe how good the Caveman candied walnuts are. It’s as good as any banana nut bread I’ve ever had.

    can you sub the almond flour with another gluten free flour? i have an almond allergy.

      Your other option would be coconut flour and that is not a 1 to 1 swap. You might have to do some google research to figure out the best starting point and experimenting. Hope it works
