Blueberry Banana Brownies

These are by far the most delicious brownies I have ever had, Paleo or not.  Maybe its because I love bananas and they add such a distinct taste to these.  I hope you enjoy.

Blueberry Banana Brownies

Ingredients
  

  • 2 eggs
  • 2 cups of almond butter
  • 1 cup raw organic honey
  • 1 tablespoon vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking soda
  • 1 cup chocolate chips
  • 1/2 cup dried blueberries
  • 1 very ripe banana

Instructions
 

  • Preheat oven to 325 degrees fahrenheit
  • In a large bowl, using a hand mixer blend your almond butter to make it a smoother consistency
  • Add eggs and mix well
  • Mix in the honey and the vanilla
  • Add the salt, baking soda, and then SLOWLY add in the cacao powder or else you will take a chocolate powder bath like I did the first time
  • Fold in the chocolate chips and the blueberries and mix well by hand to ensure an even distribution of it all
  • Take your ripe banana and mash it to a paste and mix that in by hand as well
  • Grease a 13x9 inch baking dish with coconut oil or whatever oil you see fit and bake for 35-40 minutes or until it passes the toothpick test.
  • Enjoy

    Is there a difference if I use unsweetened cocoa powder and sweetened? I am not a baker getting better so please excuse my crazy questions! :)

      There is a difference. I would use the unsweetened stuff, that way you can determine the sweetness of your brownies and there is not a bunch of garbage in the unsweetened raw cocoa. Remember to go organic and fair trade!

    I have learned that I must make this recipe in my mini-muffin pan. A regular pan of these is a dangerous thing with my sweet tooth. I have a couple, then put the rest into the freezer. That way I have them handy, but really have to want one to thaw it. But I love these!

    I love these!! I’ve made them several times. About to make them again. I made them with dried cherries one time and fresh blueberries another time. Seemed like a weird concept but they are fabulous!

    These brownies are the sh*t. They are better than any I’ve had before easily, because they aren’t so sweet to make you feel like you shouldn’t eat them. I often eat one for breakfast and don’t really even feel guilty. The protein in the almond butter fills me up and with a green smoothie, they make the morning awesome. They are perfect.

    I made two batches of these with fresh blueberries a while back. Tonight I’m going to make a batch with dried cherries instead. Last time I was short on honey so I used some coconut palm sugar and they were fabulous!

      You could use sunflower seed butter, but I don’t know how it would taste but I imagine delicious

    Wow…we loved them…I couldn’t find the blueberries so I subbed craisins with blueberry juice…I read that we can use fresh blueberries so I will definitely do that next time!!! And there WILL be a next time!!!

    Made these for Thanksgiving and they tasted great and were a big hit! No one could believe they were banana blueberry. Sadly though i think my pan was SLIGHTLY smaller so these rose insanely, looked more like a chocolate cake. b/c it was a smaller pan, I had to cook them a little longer than planned and accidentally burned the bottoms. Luckily my family isn’t too picky so they ate around it. Will def be making these again!

    oh WOW, these were delicious. I ran a nutritional analysis, and if you make 36 servings, they’re only 126 calories per brownie – I left out the dried blueberries. You, sir, have been bookmarked!!

    I noticed you chanced agave nectar to raw honey. I’m allergic to honey (I literally break out in hives) so how do you think these would come out with maple syrup instead?

      Talia you can use maple syrup as well. I would just start with half and then adjust as you taste it

      You could but I have never used Stevia so I would recommend maybe starting with 1/4 of a cup and tasting the batter to get it right

      I don’t know Kelly, I don’t count any calories or counts and it is a very intensive process to try and get all that info for each recipe. You can go plug the recipe in at fitday.com or mypitnesspal.com and get the info. I hope that helps and hope you enjoy these

    Just made them and WOW!! Like you said, best brownies I’ve tasted…I couldn’t stop licking the mixer blades while preparing them (I also got cocoa showered …agghh)….though I believe the nutritional stats are a little over the board (well, for someone not in paleo and not exercising enough) because just the almond butter and the agave are super high in calories…and the brownies use 2 cups!!! Anyway, I enjoyed them and am going to share thm with my paleo friends!

    Yes almond butter is like peanut butter, except peanuts are a legume so I don't have those while on a Paleo diet.

    Made a double batch of these 2 weeks ago. A single batch makes a lot! They held up great in the fridge and were wonderful warmed up for late night snacking. Grandkids totally loved them and could not get enough!
