Cluck-Moo Breakfast Sausage

Pork, sugar, and water. Those are the first three ingredients in the leading store-bought sausage brand. After I realized how unhealthy the store-bought options were, I decided to make my own and I’m glad I did, because not only is it healthier, it also tastes ten times better.

Cluck-Moo Breakfast Sausage

Ingredients
  

  • 1 pound ground chicken
  • 1 pound grass fed ground beef
  • 1/4 cup almond flour
  • 6 ounces tomato paste
  • 2 tablespoons homemade italian seasoning
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 egg

Instructions
 

  • Combine all the above ingredients in a mixing bowl and using your hands, mix well ensuring an even distribution of ingredients
  • Preheat a large saute pan over medium heat or a skillet
  • Form your meat into patties to your size liking and then cook accordingly in your skillet
  • Serve with some scrambled eggs, or some paleo pancakes :)
  • Enjoy

    Not sure why you need to add flour to this. I have a breakfast sausage recipe I use which basically only calls for the ground meat and seasonings. I’ve used it for years and works out great every time. I will be trying this one too, though, but probably minus the flour. Just a thought. :)

    Yummy – can’t wait to try this recipe. Re Italian seasoning – we like ground fennel seeds in our Italian spice mix; this is a flavor I often recognize in commercially prepared sausage.

      I’m not quite sure about a good substitute for almond flour. You could try sweet potato flour or tapioca flour maybe? Let me know what you come up with!

    I just wanted to tell you again how much we LOVE these in my house! We make them all the time; they're a staple!     Holy crap. I made these this morning with ground beef and sausage instead of the chicken. I can't stop eating them….threw a little dollop of your catsup on them for breakfast with a fried egg on the side and it was killer.

    I always loved the Jimmy Dean sausages back in the day, if mainly because mother made her turkey stuffing using it. Good to have a go-to substitute.
