Prep Time 10 minutes mins
Cook Time 12 minutes mins
Total Time 22 minutes mins
Servings 3

Ingredients

For the burgers:

  • 1 lb 455 grams ground beef
  • ¼ medium red onion minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon granulated garlic
  • salt and pepper to taste

For the shoestring parsnip fries:

  • 2 medium parsnips peeled
  • ½ cup 100 grams coconut oil, melted

Garnish with:

  • sliced red onions
  • ¾ cup 180 mL Avocado Mousse
  • romaine hearts
  • shoestring parsnip fries from above

Instructions

  • In a medium mixing bowl, mix together all of the ingredients for the burgers without overworking the meat.
  • Divide meat into 3 equal portions and form into ½-inch (12-mm)-thick patties. Use your thumb to make an indentation in the center of each burger. Set aside.
  • Using a spiral slicer or julienne slicer, cut the parsnips into strings.
  • Preheat a grill to medium-high heat, and preheat a medium saucepan over medium-high heat.
  • Once grill is hot, place the burgers on the grill and close the lid. Cook 6 minutes.
  • While the burgers are cooking, add the coconut oil to the saucepan. Test the oil by placing one parsnip shoestring in the oil to ensure the oil bubbles. Add the parsnips to the oil and cook for 1 to 2 minutes until golden brown. When the parsnips finish cooking, place them on a paper towel−lined plate to drain.
  • Flip the burgers and cook for 2 to 3 minutes for medium-rare, or until desired doneness. Remove the burgers from grill and let rest for 5 to 7 minutes.
  • To assemble the burgers, place each on a bed of lettuce and top with sliced red onions, ¼ cup (60 mL) avocado mousse, and parsnip fries.

Recipe looks great, would love to make it tonight, but I don’t understand why you would post a recipe that includes something you will not provide a recipe for as an enticement to buy your book. If I made a complete recipe from a blog and loved it, that would make me go buy the book.

I live north of the Arctic Circle, so variety produce is hard to come by. Would substituting zucchini, or something like that, be OK for the parsnips? Thanks!

I am Cajun, and my comfort foods are nowhere near paleo. I love muffalatas and etouffee and dirty rice (which is pretty good with cauliflower rice), but the one I miss most is chicken and sausage gumbo. I have tried to adapt different recipes for it with disastrous results. I would love to see a paleo version of a good chicken and sausage gumbo.

I’m so happy you have a book. I bought it immediately because I love your ebook Caveman Feast. In there everything has a picture and you have a table of contents so I just find a recipe and click on it and it takes me there. So many ebooks don’t have a table of contents or the the click links. Plus I love your recipes in there. I admit I’m hung up on the crock pot chuck roast with the slits in it to stuff bacon and garlic. The whole thing melts in your mouth! So I am sure your new book will be great because your pictures have been great and the thought you put into the recipes and the layout. Way to go George! I also love your enthusiasm.
