Paleo Burger

Normally I don’t post new recipes until Sunday, but this burger was soooo perfect and simple I had to type it right away to share.  Given the current temperature in Southern California, I am sure I am not the only one using the grill to beat the heat.  So here you go just in time for the weekend to knock your socks off, which you shouldn’t be wearing anyways because it is too hot.  I have been on a ground beef kick lately, which is great since I have a ton of it from Butcher Box.  The flavor is amazing and I love that all I have to do is season it with salt and pepper and it tastes delicious every time.  On top of that, I get to support a hard working family owned business fighting the good fight so thank you Travis for working so hard so I can eat so good.  Now onto this burger……

PaleoBurger

Now before the Paleo Police come knocking down my door, this is local goat cheese from a farm near my house.  Why?  Because it tastes amazing, and doesn’t upset my stomach. Therefore, I eat it occasionally.  I can not have regular dairy and even sometimes grass-fed dairy tears my stomach to pieces.  One of the keys to eating the way we do, is listening to your body and learning what works and what does not for YOU.  There is no template for everybody, it is more of a framework that you can mold to work for your needs.  I think it is important to remind ourselves of that before we start black and white labeling everything Paleo or Not.  Life is meant to enjoy a little and that is what I intend you to do, hopefully just making educated healthy choices.  So with that being said, feel free to substitute with grass-fed cheddar or leave it off if you like, I won’t lose any sleep.

Guess what?  I forgot to tell you up top but I got a new cave mobile the other day.  My trusty 2006 Honda Civic was just not loving life anymore and she needed to be put away and rested.  I upgraded to an Accord and got rid of the stick.  I do love manuals but my left leg is considerably stronger after living in California traffic for 4 years.  Hopefully now I won’t be lopsided.  Anyways, I need help naming her so offer any suggestions you have.  Other than that, I think I am fresh out of things to talk about.  I will leave you with a question, do you like the dark photos?  I have been practicing hard at my photography and love to know what you think.  Let me know in the comments please.  Enjoy.

Perfect Paleo Burger

Ingredients
  

Burgers

  • 1 pound grass-fed ground beef
  • 4 small slices of sharp cheddar goat cheese
  • sea salt and black pepper to taste
  • juice of 1 lemon divided

Toppings

  • 2 tablespoons bacon fat or coconut oil, duck fat, etc
  • 1 sweet potato peeled
  • Pinch of sage
  • 2 cups baby spinach washed
  • 1 roma tomato
  • 1 avocado sliced
  • sea salt and pepper to taste

Instructions
 

Toppings

  • You want to prepare these before cooking your burgers so you can dress your burgers when done and enjoy
  • Preheat a cast iron skillet or pan over medium heat
  • Using a spiral slicer or julienne peeler, make your peeled sweet potato into noodles
  • Place your bacon fat in your pan and once melted add your sweet potatoes and your pinch of sage
  • Saute for 8-10 minutes stirring often as to not burn your sweet potatoes until they are at the consistency you desire
  • Remove from the heat and set aside
  • Wash and slice your roma tomato
  • Cut your avocado in half, remove the pit, peel the skin off and slice
  • Wash your baby spinach and set aside

Burgers

  • Preheat your grill on high heat
  • Ensure your ground beef has been at room temperature for a minimum of 30 minutes
  • Place your ground beef, salt and pepper, and half your lemon juice in a mixing bowl and combine everything with your hands
  • Divide the meat in half and form two even-sized 3/4 inch patties ensuring you depress the center of your burgers with your thumb making a well
  • Place your burgers on your preheated grill and cook covered for 3 minutes
  • After 3 minutes, flip your burgers and cook for another 2 minutes covered
  • Open the lid and top with your goat cheese and leave your burgers until your cheese is melted and remove from the grill
  • If you have a meat thermometer, you can use it to cook your burgers to the doneness you desire since grills have different temperatures and burger thickness will vary

Assembly

  • Place 1 cup of spinach on each plate
  • Top with a burger on each bed of spinach
  • Add your avocado and then garnish each burger with your sauteed sweet potatoes and put your tomatoes on the side
  • Use your remaining lemon juice and sprinkle over everything if you'd like
  • Enjoy

    I’ve been looking at a few paleo websites but this is the first recipe that I have made – thank you, it was terrific! It also gave me a chance to use the spiralizer, which is always fun.

    I actually really like your dark photography. I don’t think it meshes very well with the look and mood of your site, though, specifically your logo and background color. It’s very friendly and more cartoony while your photos are dramatic and (still friendly) but are just edgier. I think the look of your blog would benefit from maybe moving in the more edgy/grungy look to go along with your pictures. I still think you have a great logo and site there is just a little bit of a disconnect for me. I hope this makes sense! I’m a graphic designer/know web design as well so if you’d like to email me I can elaborate more. Thanks for all the great recipes and work :)

    It really has been SO HOT in SoCal lately!!! But I am sure it’s been hot everywhere. I don’t actually have a grill so I have to suffer and cook in my HOT HOT HOT kitchen, it’s miserable, however, the food that turns out – always yum! :) Speaking of yum, I am drooling from your photos!!!

    I did some research when i saw u used goat cheese and everyone says it is NOT paleo. What do you think? Just trying to learn! I dont want to spend my life not eating grains and make the mistake of eating goat cheese and defeat the whole purpose of avoiding food secondary to the disease process.

      I eat it because it has no negative effects on me. I use paleo to make informed decisions and listen to my body. I maybe have it once a month or less and I like the way it tastes and it doesn’t upset my stomach. Honestly, no one can tell you what is paleo and what is not since it is a framework for you to take control of your health.

    After seeing the photo you posted in the CCN FB page, here I am! This looks so good! I try and do a lo of Paleo if I can because of my RA. I even did an auto immune Paleo and almost passed out!

    I have heard that goats milk can be easier on the stomach than cows milk so I hope it helps you.
    Love the sp on top of the burger..yum!
