Well I am back in Southern California, and it has been great to see everyone back here in my life. I can’t believe I was gone for like 6 weeks but now is the time to get back into the swing of things the best I can. Had some amazing trips and made some HUGE life decisions that will be coming to light shortly. And just know that these decisions are all based on all the amazing people that read my blog and I will always need and love your support. You all drive me to be great and I want to fulfill that. This recipe will take you 5 minutes and you will love it. And here is my new Spiral Slicer’s first product, a 6 Foot Cucumber Noodle
Lemon Cucumber Noodles with Cumin
Ingredients
- 1 whole cucumber
- 1 whole lemon zested and juiced
- 1 tablespoon sea salt
- 1 teaspoon cumin
Instructions
- To make the cucumber into noodles I used my new Spiral Slicer I got off of amazon.
- You could also use a Julienne Peeler or just make this recipe with diced cucumber
- Once your cucumber is prepared how you like it, place it in a bowl and toss with the lemon juice, sea salt, and cumin
- Transfer to a bowl and garnish with lemon zest
- Enjoy

I tripled this recipe for my family and it turned out REALLY salty. I couldn’t even eat more than a few bites. I don’t know what I did wrong, since all of the other comments say it was good… Any advice?

With cucumber we use about 1/8 tsp salt rather than the 1 tablespoon of salt.

This sounds delish and I need more recipes for my new Paderno Spiralizer!

Perfect! Sounds easy and tasty.
This one will be added to my recipes-i-really-need-to-make list :)

Ooooh! Never thought of cucumber! You clever dude!! I always make “tagliatelle” with courgettes/baby marrow/zucchini (whatever you like to call it in your neck of the woods lol). SO going to try this with snozzcumbers (sorry grew up on Roald Dahl) Thank you for the inspiration!
George Bryant
Haha your welcome
Lori Carroll
Yippee!!! Something else I can make with my new spiral slicer (one of my Christmas presents to myself…) This looks like a nice, light cool side… which I eat most of the year here in central FL.
George Bryant
Oh it is Lori. Enjoy

This is DELICIOUS! I just made it with the Lime Cumin Pork Chop recipe. Fantastic combo with both having the cumin. I peeled my cukes, then just grated them on the larger grate of a my retired cheese grater. Fantastic and QUICK.
George Bryant
Awesome, that sounds like a delicious meal

My first thought when I found this recipe is that it would be an excellent paleo base for a cold vietnamese “noodle” salad. I’m gonna get myself a julienne peeler and give it a shot. Thanks for the inspiration!
George Bryant
Oh your so welcome Diane, please let me know how that works
Rena
I just bought this spiral splicer (actually using your link in this post) and have to say that was a great investment!! I have been missing noodles, and these are really the best!! I’ve tried the kelp noodles and they just are not for me. But these veggie noodles, I tell ya, something else!! And my three-year-old loves them too, so win-win!! Thanks for the link!! I’ll be using your generic Amazon link as well in the future. Hope you get some good kickbacks!
George Bryant
Thank you so much Rena, I am so glad you loved them
Jenn
I FINALLY caved and bought a julienne peeler after seeing all your awesome uses for it. Why did I wait so long? The ‘noodles’ were so easy to make and refreshing. Whenever I have an extra cucumber about to go bad I quickly make this as a small side dish. Also used curry powder once and it was good too, I’ll have to keep experimenting!
George Bryant
Thank you Jenn. I am so glad that you loved it and cracked and got a julienne peeler. Keep up the awesome work
George Bryant
So glad you enjoyed. And the transparant watermark is done by controlling the opacity in photoshop

The recipe was pretty good but a little salty from the 1 tbsp of salt. I added some New Mexico chili powder to give it a kick. I think I’ll use 1 tsp of salt next time. Good base though.
CivilizedCaveman
Haha I think I fat fingered it. Your prob right
Nicole
Amazingly simple and super delicious! Thank you!!!
CivilizedCaveman
You are so welcome, thanks for commenting, if you like it can you give it some stars :)

Got my slicer yesterday and just made this. Didn’t have lemon so used coconut vinegar instead. Yummy! Thanks for the recipe.
CivilizedCaveman
You are so welcome I am so happy you enjoyed
Jen Hollett
Thank you so much for the link to the spiral slicer!! I am in love!! Was able to make some zucchini and squash “spaghetti” that even the kids (8 & 10) help make and enjoy! Now to play around and see what else I can slice into noodles!!! LOL!
CivilizedCaveman
You are so welcome. I am just super happy you like it
Melissa B.
U just eat the noodles plain or do u use with other recipes. Looks light and refreshing! I need a slicer. I would live that for zucchini!
CivilizedCaveman
I just used this one as a side dish but you can add chicken, shrimp etc. Go to town with possibilities

How great! I literally ordered mine last week, so it should be waiting for me when I get home from work. I’m going to do a zucchini pasta with it and pair it with Brick Chicken (marksdailyapple just posted their rendition). Thanks!
Civilized Caveman
That sounds so awesome
Jecka
Well, I need to get myself a spiral slicer!!!
Civilized Caveman
Jecka it is the best thing ever
Allie
That looks DELISH!!! I have a “noodler” as well & I absolutely love it. I make zucchini pasta with it several times a week!! Thanks for this new idea. I think I’ll make it today! :) (p.s. I follow the SCD diet? Are you familiar with it? A dish like this would be a hit among the SCDer community!)
Civilized Caveman
Allie, I am not familiar with it but please feel free to share with everyone you know :)
tee_w
so you don’t deseed the cucumber? or does it just use the outside? it looks good!
Civilized Caveman
Tee, I don’t deseed anything, most of them fall off the noodles and the ones that don’t I eat anyways
tee_w
awesome, thank you!
