Lemon Poppy Seed Muffins

I feel bad because I haven't posted in a few days.  The truth is I am currently typing this on my 5th day straight of being in bed.  What started as me thinking I had food poisoning ended up being a nasty stomach flu and I have been bed ridden for 5 days.  This is honestly the sickest I have ever been in my life but I am keeping positive and feel like I am on my way out of it.  I actually slept in bed last night instead of on the bathroom floor so that is a major improvement but probably TMI.  I suppose we should talk happy talk instead of shooting the s**t.  <— That was a bad joke given what my body has been doing the past few days ;)

Lemon Poppy Seed Muffins

So I don't know if you saw the delicious Lemon Poppy Seed Cake Pops I posted but these are my lazy version.  Pretty much same recipe but there is no laborious process of coating them and freezing them etc.  So in other words you can just mix, bake and eat and that is what we all love isn't it?  I had honestly never eaten a lemon poppy seed anything before this recipe or going Paleo so I didn't understand what all the fuss was about.  That was until I tasted these bad boys and they became my new addiction.  I might make it a New Years resolution to just eat one a day for an entire year because it will make me happy.  Yes I think I will, I am already happy thinking about it.

Lemon Poppy Seed Muffins

Lemon Poppy Seed Muffins

Ingredients

Lemon Poppy Seed Muffins

  • 2 cups almond flour 185 grams
  • 3/4 cup coconut flour 90 grams
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking soda 3 grams
  • 2/3 cup raw honey melted
  • 2/3 cup coconut oil melted
  • 4 large eggs
  • 1/2 cup plus 3 tablespoons unsweetened full-fat coconut milk
  • 1-2 teaspoons pure lemon extract
  • Zest of 1 lemon
  • 1 tablespoon poppy seeds

Instructions

  • Preheat oven to 350 degrees Fahrenheit (176 Celsius).
  • Sift almond flour, coconut flour, sea salt and baking soda in a large mixing bowl and stir with a whisk to combine.
  • Place oil and honey in the bowl of a food processor and process for 2 minutes.
  • Add eggs, one at a time, mixing after each addition.
  • Add coconut milk, lemon extract, and lemon zest, and poppy seeds. Continue to process until well combined.
  • Make a well in the center of the dry ingredients and pour in the wet ingredients and thoroughly combine using a wooden spoon until smooth
  • Pour batter into muffin liners in a muffin pan and bake for 20 minutes
  • Remove from the oven, remove from the pan and let cool
  • Enjoy

    Hi George! Delicious, moist muffins, YUM! I added fresh lemon juice from half a lemon, maybe 1/2 tsp. vanilla & extra poppy seeds. l may add even more lemon juice as these needed more of a lemony flavor to suit me. So, check this out, my son, age 14, loved these muffins & they gave him a MAJOR burst of energy & joy! He’s in puberty & struggling with Lyme disease, so I keep hoping it was those poppy seeds! Anyone else have that reaction? ? No wonder you love these George! I’m giving my son a muffin in the morning for sure! ?

    Hello, I am an experienced baker and I’m trying to figure out what I did wrong. The taste is great but the batter was more like dough and they just wouldn’t cook. I followed the recipe to the letter… does coconut milk mean the stuff you put in a curry of the stuff you can use a milk substitute… I thought maybe that was why it was too thick a mixture..? Any advice? Thanks!

        Did you use canned coconut milk for the recipe? And the batter isn’t necessarily going to be smooth, but not chunky either. Make sure you are warming the honey to a loose state before mixing too!

    Absolutely delicious. I tolerate small amounts of dairy, so since I didn’t have full fat coconut milk, I used 1/2 cup cashew milk plus 3 T. of sour cream. Also substituted maple syrup for the honey. I used vanilla extract and the juice of half a lemon in lieu of lemon extract. These came out fantastic. Definitely a keeper. Five stars. Thanks!!

    I didn’t have almond or coconut flour and because I’m gluten intolerant, I used a gluten free flour mix and they turned out amazing! So moist and delicious! Definitely will try these again :).

    Thank you for this awesome recipe. I subbed 1/2 tsp almond extract and 1 tsp fresh lemon juice for the lemon extract, I doubled the amount of poppy seeds, and I baked them for a few minutes longer to ensure they were cooked through.

    They turned out beautifully! I had them for breakfast with coconut butter and homemade paleo blackberry jam. Yum – I will be making these again for sure.

    Thanks for the recipe. The muffins turned out to be delicious and moreish. As I didn’t have lemon extract or raw honey at home, I made do by using juice do 1 whole lemon and normal honey. I also used 5 medium sized eggs. After whizzing the wet ingredients in food processor, I used my Kitchenaid mixer to combine with the dry ingredients. Turned out quite moist and well balanced flavours.

    I’m really sad to say these didn’t turn out for me. This was my first venture into gluten free cooking, so maybe I was just unrealistically expecting them to taste like their flour/sugar/butter filled counterparts. I thought the texture was really nice, but the flavor was not good. I will note that I had the cake pop recipe open in another tab and thus accidentally added two Tbsp instead of two tsp, but I don’t think that was the issue; they were actually quite bland. I otherwise followed the recipe exactly, so I don’t think there were any other issues on my end. My family gave these the thumbs down, but maybe our taste buds are different from those of the other reviewers!

        I actually have to amend this. I took the muffins to my extended family for Mother’s Day and to my manager at work (who is Paleo). They all loved them and requested the recipe. So truly is different strokes for different folks!

    I don’t usually comment on recipes, because quite honestly, most of the paleo/gluten free recipes are NOT as good as the raves given.

    THIS recipe is the exception. This one is so good, even my husband loves them and he is really picky.

    My favorite way to keep these are in the freezer. I have found they are better after being refrigerated one day then put in the freezer and eating them cold.

    Did you use coconut milk that you get in the milk section, or the ones that come in a can? If it’s the one from a can, did you use the hard, solidified part at the top after refrigerating overnight, or did you mix it with the liquid part at the bottom of the can?

    My batter was pretty thick but the muffins still rose… but the middle was still really “Dough-y” and it didn’t look baked to me. Is it supposed to be like this? What could I have done wrong? I was so excited about these for my husband!!

    Wow my tastebuds are saying yes please more more more

    I didn’t want to drag my food processor out so I used my blender I loved how the coconut oil and honey fused together this way and I was careful not to over blend the eggs. If you use your blender follow the directions all the same. Except at the end pour in 1/2 the dry ingredients and pulse a few then the rest and pulse just till blended in then pour.
    I din’t have blanched almond flour (no skins) so mine came out a bit darker than the pretty white like yours (I think this is where some people were seeing the difference in color). I also wanted to use real lemon so I used the 4Tablespoons (1 whole lemon) like someone else did and just left out the 3T of extra milk. I also used almond milk because I was out of coconut :(
    *Information for those not used to working with coconut flour. Once everything gets mixed it will start to thicken so get them into the muffin papers while it is still liquidy.

    And lastly I only have jumbo muffin tins and this recipe makes 8-9 of those big boys.

    they turned out very VERY dry- recipe fail. I retried but reduced the coconut flour to 1/4, and they were much better.

      You could whisk by hand, just make sure you don’t leave any lumps in there. And, breathe, it’s going to be a work out for you!

    Second recipe I have tried an d again delicious ( first was the banana bread and French toast with Banana bread.) And now these muffins WOW Best muffins ever! Thank you for the recipe!     Sooo…..my batter was really thick….like cookie dough so the muffins came out looking very lumpy and brown…..not like your photo at all. I used lemon juice instead of extract so they weren’t very lemony-my own fault because I read it wrong. Otherwise I followed the recipe. Was sooooo hoping this would be the recipe that my kids would finally love but they didn’t like it at all. I thought they were OK and definitely moister than any others I have tried. Would be willing to try again if you have any ideas why my batter was so thick???

    Hi, i made these yesterday with maple syrup instead of honey, they turned out much darker in colour (which gave me a scare at first) but they were very delicious. My non-Paleo children ( 8 and 12) even said they were great :-) .Was wondering if i could use coconut sugar instead of honey or syrup and if so, what quantity?

      Well, since one ingredient is dry and the other wet, it won’t work for a direct substitution. You could try doing a mixture of applesauce/coconut sugar.

    Wow, probably the best paleo muffin I’ve had.
    I try to steer clear of fructose, so I replaced the honey with rice malt syrup (no fructose), and also the lemon extract with lemon juice. It worked perfectly!!
    I’m so happy to have a new favourite go to recipe for treats, and simple recipe to :)

      I was nervous to try this recipe as the previous recipe I followed turned out scary & yucky (someone else). But your recipe IS THE ONE!

      I told my boyfriend all about the story, up above, “That was until I tasted these bad boys and they became my new addiction.” while we are on a road trip. When we stopped to get gas, he asked me if he could try one (I packed them for a snack – mini muffins). I ran inside to pay for our gas and when I came back to our vehicle, he had eaten ¾ of what I brought (10 mini-muffins). When he saw my look of shock, he responded with “these are my new addiction”.

      So great. Thank you for sharing!

    Wow – amazing recipe! I am new to paleo and this is the second ‘treat’ I’ve made. The muffins are so delicious, my daughter and I love them! I didn’t have lemon extract so I used lemon juice (4 tbsp) and cut back on the coconut milk a bit.

        Good morning George!
        Well, the first treat was no-bake protein bars from a recipe I received from a nutritionist. They were good, but the raw protein powder gave them a bit of a strange aftertaste.

        BTW, I made your avocado pork chops last night (didn’t smoke them as I don’t have a smoker) and they were also a hit with the family!

        Also, I wanted to give the recipe 5 stars, but for some reason, when I was submitting my comment through my iPad, I wasn’t able to select 5 stars :(

    These are amazing! Hands down the best paleo treat I have ever had!! So moist I almost thought they weren’t done, but they were definitely fully cooked.

    I added fresh blueberries…. :)

    Amazing. Wow.

    Best muffin I’ve ever had!!! I used my nutri-bullet as my food processor and the muffins turned out great! They just melt in your mouth!! I did cook them for about 26 min instead of 20, might be my oven though. Thank you:)

    Thank you so much for the great recipe!! These are the best paleo muffins I’ve ever made. I did have to make some unplanned modifications. I forgot lemon extract at the store so I used 4 TB of lemon juice. I felt they could’ve used more lemon flavor, so next time I will not forget the lemon extract. Also, spilled my remaining poppy seeds out on the floor :( so I didn’t have anything to spruce up the muffins except blueberries. Threw those in and despite my mixups, these muffins are awesome!! I will definitely be making these again by the end of the week!

    Dear Civilized Caveman,

    I have to share this after making this recipe 4 times within one week. My husband, his best friend and my father-in-law LOVE this muffin. I love cooking for others, so I am more than happy to make them often. But every time I bake up a batch, they are gone within 30 minutes.

    Just wanted to let you know, like so many others, these muffins are amazing!

    Made these a few days ago and I am really impressed! It’s unbelievable that there’s no grain in here at all – the texture is just perfect. I used chia seeds instead of poppy and it was a good substitution; I also didn’t melt the oil/honey, but it didn’t seem to affect the final product at all.
    I wonder if the basic recipe can be extended to all sorts of muffins – like using peppermint or lavender extract… At any rate, thanks so much for sharing – looking forward to more!

    I made these this morning and they were WONDERFUL! Hit the spot! I used 7 or so drops of lemon oil instead of lemon extract, because I didn’t have any! And I made a glaze with powdered coconut sugar, juice from the lemon I zested, 3 drops lemon oil, and 1/4 tsp vanilla. WOW!
    When I did GAPS a few years ago I tried an all coconut flour lemon poppy seed muffin, and it was so bad in both texture and taste that my husband, who will eat anything healthy, couldn’t get down more than one, if that!
    These were so bread-like and light! The mixture of almond and coconut flour really makes a good texture. These also came out of the liners very cleanly. Thank you so much for sharing this recipe and pictures to go with it (seeing the final product is SO helpful to me)! I definitely think even people eating a SAD diet would enjoy tasting these!

    Thanks for sharing this recipe, it looks great! I know there’s a difference between lemon juice and lemon extract, but if I don’t have extract on hand, but have a few lemons, can I go ahead and swap them out? Any idea how many lemons I might need to use?

    Just made these and they are amazing, thank you so much for the recipe! :D
    Only thing I changed was the honey for stevia/erithryol mix (about 1/2 cup) and a bit (1 tbsp?) brown sugar.

    So moist and filling, made 12 muffins and I’m stuffed after eating two (one would have been enough :P)!

    OOOOh how I want to make these … but I only have brown rice flour. What would the substitution ratio be for the almond and coconut flours to eggs?? I know I’ve heard that more eggs are needed when using coconut flour. How would I adjust for this change? Thanks in advance for any you or your fellow Cavemen and women can give! :)

      You know what, I am not entirely sure– I have never cooked with brown rice flour. Maybe somebody else will know?

    Really enjoyed these! I used palm shortening instead of coconut oil and did the whole process in my stand mixer. I also did not have poppyseeds so I used some chia seeds instead! Thanks George, this is the first of your recipes I have tried…although you are infamous in the HYH community…I was pushed through Shirley featuring your recipe on All Gluten Free Desserts!

    I substituted the 2 tsp lemon extract for 1 tsp of almond extract and 1 tsp of vanilla extract. Completely addicting! SO delicious!

    Made these today – it’s a good thing I am pregnant and can’t eat raw batter right now because I wouldn’t have had any to bake! The batter smelled amazing and the finished product is AMAZING! I baked it in a bread loaf pan just out of convenience. Thanks for sharing this recipe!

    Lemon extract is a concentrate, so it is much stronger in taste than lemon juice.

    Ugh, I so feel you on the facebook front. I have only 1400 followers as opposed you your….a LOT of followers but seriously, yesterday one of my posts reached ONE PERSON!!!! OUT OF 1400. Ay ay ay. Such a nightmare, but whatever. Newsletter is the way to go I guess.

    Anyways, these muffins looks absolutely delicious. I think with blueberries in them they would be out of this world. You must try lemon blueberry combo…it’s the best! Feel better!

    I saw this recipe and immediately got up to see if I had the needed ingredients. Sadly I didn’t have lemon extract, zest or poppy seeds. :( However I did have orange extract, some oranges and dried cranberries! So I turned your recipe into Orange Cranberry muffins and they are amazing. The extract, zest and added cranberries are the only things I changed. I can’t wait to do the lemon poppy seed! Yum! Thanks for your amazing recipes George! Feel better quickly.

    Having the similar problems with Facebook. Granted I only have 100 fans but it can be super frustrating when only 5 people see a post. Thankfully I stopped using Facebook to see other people’s posts. RSS feeds are the way to go.

    Also, those muffins look amazing. I was actually eyeing some lemon poppyseed muffins at the local coffee shop I hang out in but sadly had to walk away since they weren’t gluten-free. Bookmarking this recipe :)
