Here is another simple and delicious Paleo Crock pot recipe. This Apple Rosemary Pork Loin looks and smells amazing and I can’t wait to taste it. I followed the simple crock pot rules to make this, throw some veggies in, some meat, a little liquid to start the cooking process, set it on low and walk away, we shall see what it results in. For the sake of me having already typed this post without tasting it and not wanting to have to make another one to share with all of you, hope this is yummy :)
Crock Pot Apple Rosemary Pork Loin
Ingredients
- 3-5 pounds boneless pork loin roast
- 1 white onion sliced
- 2 granny smith apples peeled and sliced
- 5 cloves of garlic
- 1 sweet potato peeled and chopped into cubes
- 1 tablespoon dried rosemary
- 1 tablespoon dried thyme
- 3 dried bay leaves
- 2 tablespoons apple cider vinegar
- 1/2 cup stock of your choice
- salt and pepper to taste
Instructions
- Line the bottom of your crock pot with some of your sliced onions, apples, and sweet potatoes
- Poke 5 deep holes throughout your pork loin and insert a clove of garlic into each one
- Season both sides of your pork loin with salt and pepper and then place fat side down on top of your veggies in the crock pot
- Sprinkle the pork loin with your rosemary and thyme and throw your bay leaves in the pot
- Scatter the rest of your apples, onions, and sweet potatoes throughout your crock pot
- Pour your apple cider vinegar and stock in the bottom of your crock pot to help get the cooking process started
- Set your crock pot on low and cook for 8 hours or until your pork reaches an internal temperature of 160 degrees
- Enjoy

I do a ton of paleo cooking, and your recipes are among the best I’ve ever had. I have your book, and I will buy every single book you ever publish. Huge fan of yours!

So impressed with Geotge’s Back story. Will look up his book

George, this is going to be our Christmas dinner! One question: Why do you place the roast fat side down in the crockpot? I always thought it was supposed to be fat side up, so it continuously bastes itself?
Cheers,
Jen

I put the fatty side up so the juices from the fat drip into the meat rather than just to the bottom of the pot.

Am trying this tonight. Smells delicious. Thanks
George Bryant
Awesome, let me know how much you love it!

What would the temp and cook time if you wanted to do this in an oven.
George Bryant
Very good question, but I am not quite sure!
Randy
George this looks nice and easy. What do you think about adding bacon to this? Would it be to greasy?
George Bryant
I never say no to adding bacon…!
Maureen
I have this in my crock pot right now! I was reading about the apples, I used 3 Granny’s in mine, but if I want to add more apples towards the end of the cooking time, can I use Mac’s? I am out of Granny’s!
George Bryant
You can add any apples you’d like to :)
Anna
Thanks for the recipe! Put it in the crockpot this morning, can’t wait to come home from work and eat it…
George Bryant
I hope you love it

This is in the crockpot right now. Didn’t see when to pour in 1/2 cup stock?

Is it possible to use Pork Sirloin in this recipe? I have read that sirloin doesn’t work well in the crock pot because it easily dries out but other places in the interwebs say that Pork Loin and Pork Sirloin are interchangeable in recipes.
I have a pork sirloin from US Wellness Meats in my freezer to cook this weekend and this recipe looks fantastic.
Thanks!

I think there is enough liquid in this recipe to keep it moist. I would recommend using a meat thermometer and pulling it out when it’s done instead of letting it simmer

This had so much flavor, it was a hit in my family. I love that it’s healthy and that my kids loved it! Thank you so much for these delish recipes!

So awesome you all loved it

Made this today, and it was EXCELLENT! I did as suggested and added two extra apples about two hours before it was done cooking, and I think four apples ended up being just the right amount. The only thing I might do differently next time would be to wait to add the extra apples until only 30 minutes before it’s done, so they stay intact. I also might add an extra sweet potato next time. SO GOOD!!!
Thank you for the delicious recipe!
George Bryant
Awesome ideas Rebecca. So glad you enjoyed it and I can’t wait to try your suggestion

Made this the other night. By far the most delicious crockpot pork I’ve ever had! Didn’t last long. Thanks so much. Just bought a pair of your socks too. :)
George Bryant
So awesome that you loved it and thank you for buying some socks

Had this for dinner tonight. The entire family enjoyed it. Thanks for sharing. I wish the apples didn’t cook away. Has anyone tried adding them a little later into the cooking process? I might try that next time.
George Bryant
Cindy that is an awesome idea, you can even add the ones in the beginning and then add additional apples an hour or so before its finished
Shelby
Could you substitute butternut squash for the sweet potatoes?!
George Bryant
That sounds amazing

We made this tonight and it had waaaay too much vinegar. Before serving we added some brown sugar to try to cut the vinegar taste. Next time I would use about 1/4 cup vinegar, 1/4 cup wine, 1/4 cup apple juice, and 1/4 cup chicken or vegetable broth. Anything to cut the vinegar flavor. But note: I WILL try it again!

I just made this. Only change is I didn’t have bay leaves and I added some leftover homemade chicken broth. Can’t wait to taste it! Thanks!!! :) Han

Just made this recipe with one change. Due to my poor planning, I didn’t have all day to wait for the crockoot….this recipe was easily changed to a pressure cooker one and came out awesome! Thanks George for all these great recipes, it makes paleo for a newbie so simple
