Bacon Crock Pot Roast

We have been on a huge pork kick this weekend, so this time we are using beef as our main protein but of course, stuffing it with BACON, and we all love bacon so we shall see how it goes. Hope you enjoy.

Bacon Crock Pot Roast

Ingredients
  

  • 3 pounds chuck roast
  • 1 white onion sliced
  • 3-4 slices of bacon cut into 1 inch pieces
  • 6 garlic cloves halved
  • 2 teaspoons sea salt
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon smoked paprika
  • 1/4 cup chopped parsley
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 teaspoon garlic powder
  • 1 tablespoon red wine vinegar

Instructions
 

  • Using a thin knife create about 12 holes deep into the meat about 1/2 inch wide, you need to be able to fit some garlic and bacon in the hole
  • Place bacon and garlic in each hole and set aside
  • In a small mixing bowl, mix your sea salt, paprika, parsley, oregano, thyme, garlic powder, extra virgin olive oil, and red wine vinegar and mix well
  • Rub your spice mixture all over both sides of your roast
  • Line the bottom of your crock pot with your sliced onions and whatever left over pieces of bacon you have
  • Place your roast on top and cook on Low for 7-10 hours. Remember chuck roasts are tougher cuts of meat so the longer it cooks the better
  • Enjoy

    My mother used to cook her roast with garlic stuffed in little slices. So special to get this recipe. My husband loved it! Just sent the recipe to my daughter in law to try using a pork loin! What could not be good with garlic,bacon n onions??

    Omg this is heavenly. I made it with what I had, with a super thick fatty cut of organic meat. It falls apart. Its a beautiful red on the inside. The spices are spot on. I’ve sectioned it our into 6oz portions and eat it with a runny egg on top. It truly is keto heaven.

    Made this today, yummy but so rich! What can I do to cut the richness and follow Paleo? I thought maybe mashed sweet potatoes for a “paleo-ish” meal but hubby and I need something to by the full smokey flavor – charred broccoli just isn’t cutting it :)

    I turned on the crock-pot late last night and the house smelled AMAZING in the morning. It’s like the roast was converted to 3 pounds of bacon flavored beef. I simmered the drippings with some bone broth & red wine then put it in the Vitamix with some of the cooked onions for a wonderful au jus/gravy. It made for an awesome breakfast and i’m sure many more delicious meals in the days to come. BTW, i tried to give this 5 stars but it would not allow me to go that high.

    This recipe came up when I Googled pot roast with bacon. I’m not even on the Paleo diet, but man, this recipe is fantastic. Amazing flavor.

    I made mine in my Le Creuset dutch oven. Set oven temp at 250 degrees and braised almost five hours.

    This recipe was delicious!! I did sear in coconut oil first after coating with coconut flour and the seasonings. My husband loved it too. Got the spiral slicer and enjoyed cucumber noodles w/ lemon, garlic and fresh dill. The banana bread recipe is delightful. After 1 week I’ve lost 4# and feel so much better. Thanks George for the terrific cookbook and this blog site. Keep doing what you’re doing as I am positive you have made a real difference for many people not just me.     Sorry if this has been addressed already… I looked through the comments and didn’t notice it. How much olive oil is it? 1/4 what… cup, I’m guessing, but I don’t want to throw in 1/4 cup if its supposed to be something tiny like 1/4 teaspoon! Thanks!!

      Okay so I knew the chances of a super quick response were very slim so I guessed :) I cooked my bacon about halfway thru along with my garlic whole and that alone was super yum to eat. This was by far, one of the best roasts I’ve ever made. Very, very good and bummed that I don’t have enough to make JBs burger special (paleomg) with leftovers.

    This recipe is awesome with kale! Makes it a real 1-pot meal. Put in the onions and then pack the slow cooker full with a whole mess of kale. Top it with the beef. The kale adds some moisture/liquid, if you’re worried about it being dry. Once its cooked, shred the beef, pour some of that tasty juices over it, and smother it with all that kale and onions. So. Good. Thanks so much for the recipe!

    Lori I would not try it again in the same crock pot. The temperature could be off which would over cook it. If you do it again in the same pot, your going to have to add some beef stock to ensure it doesn't dry out

    yup, low for 9hours It's my grandmothers crockpot so maybe the temp was off. Definitely have to try again.

    Lori, how long and what temperature did you cook it at? If you followed the recipe there is a very good chance that the temperature in your crock pot is way off. You did cook it on low right?
