Chocolate Caveman Crunch Bars

A sweet tooth mixed with the fact that I need food to eat while I go camping this weekend is what inspired this delicious goodness to keep me fed and fueled. These are amazing snacks, keep at room temperature, and I would love to see some children eating these instead of candy bars or processed crap snack bars. Hope you enjoy.

Chocolate Caveman Crunch Bars

Ingredients
  

  • 3/4 cup roasted almonds
  • 3/4 cup raw macadamia nuts
  • 1/4 cup raw pepitas
  • 1/4 cup raw sunflower seeds
  • 1/4 cup shredded unsweetened coconut
  • 1/2 cup cranberries
  • 1/2 cup enjoy life chocolate chips
  • 1/2 cup coconut oil melted
  • 1/4 cup raw organic honey
  • 2 eggs
  • 2 tablespoons cinnamon

Instructions
 

  • Preheat your oven to 400 degrees fahrenheit
  • Place your roasted almonds and macadamia nuts in your food processor and continue to pulse until you have tiny chunks, you don't want the consistency of flour, keep it rough
  • Transfer the mixture to your mixing bowl
  • Heat your coconut oil and honey in the microwave to help is blend well
  • Add your heated liquid and all remaining ingredients to the bowl with processed nuts
  • Mix well by hand to ensure an even distribution of ingredients and your enjoy life chocolate chips should melt making it a chocolate looking batter
  • Grease a 9x9 or a 9x13 baking dish with coconut oil and then transfer your nut mixture to the dish
  • Bake in your preheated oven for 20-25 minutes or until the center of your bars pass the toothpick test
  • Once done, remove from the oven and let cool on the counter in the pan
  • Once you can handle the pan without oven mitts, place the bars in the refrigerator and let cool completely
  • Remove from the fridge and then slice into bars of the size of your choice
  • Individually wrap them in plastic wrap and leave at room temperature or place back in the refrigerator and take them everywhere as snacks.
  • Enjoy

    We didn’t have macadamias unfortunately so I just swapped with walnuts.

    Just did this recipe a second time too, and subbed out half the coconut oil with Kerrygold butter. Oh, and switched out the macadamia nuts with cashews…..OH SO GOOD!

    I made this twice – first with chocolate chips with a greased pan, next with 1/4 cup cocoa powder instead of chocolate chips and I used parchment paper to make it easier to lift bars out of the pan and cut. Definitely cuts back on the sweetness, but still satisfies my sweet tooth! (though my sweet tooth has been tamed by training myself to use less sugar in everything)
    Still not sure how to fix the crumbling though, besides storing in the fridge and wrapping in plastic wrap when on the go.

    THANK YOU FOR YOUR SITE. I have PCOS which means I have to change my diet. As daunting as that was at the beginning, you make it A LOT easier for me. I am so grateful. I have yet to make these BUT I made the caveman crunch and it lasted ONE DAY! My partner who dosnt need to be on any diet ATE THE LOT. My partner is a miner also and he dosnt break for the whole 12 hours he works so I can make him these bars to carry him throughout his day which. Thanks again.

    I just wanted to say thank you so much for your recipes and your website! I was probably 90% paleo before but still “cheating” with desserts and chocolate-y things. Your recipes are so good and satisfying that I’ve cut all that out and now my only “cheats” are basically from your website (plus the occasional glass of wine :) ). Everything I’ve tried has been so good- way, way better than the “regular” dairy and grain version. I feel great, and your page has helped me make the transition to fully paleo. Thank you so much!

    Wow! I had quite the adventure making this recipe: I bought my ingredients from Walmart and figured I wouldn’t be able to do total Paleo, but failed to realize how un-Paleo is really would be! Sweetened coconut, Reese’s peanut butter chips and sweetened cranberries all made their way in (not to mention roasted, salted pepitas and sunflower seeds). I over-baked them by a mile to combat crumbling when cut. They turned out delicious, but I won’t feel too proud of myself until I’ve mastered the full Paleo version!

    I love this!! Made 2 batches the first time I didn't heat the coconut/honey mix enough to melt the chips, different but still good. Today I made a batch with sun dried goji berries, very good. Thanks very much for this recipe.

    An extra egg might help hold it together or a little more coconut oil. Removing the coca will not reduce the sweetness since it is unsweetened. You will need to reduce the honey and play with the consistency.

    Mine also crumbled and I had to keep them really cold just to hold together. I followed the recipe except omitted the sunflower seeds ('cuz I didn't have any on hand). Should I add an extra egg to help it hold together better?

    Also, these were a bit too sweet for me (but otherwise completely delicious!). I was thinking of either cutting down on the chocolate or reducing the honey, but then thought the honey might be needed to hold them together? If I cut down on either of these what should I know?

    made these tonight, and while the taste is spectacular they fell apart completely into a "crumble".
    i subbed hazelnuts for macadamia, because that's what i had on hand, but otherwise followed the recipe to a T. would love to know what i did wrong – i can see where they'll make delicious bars… anyone else have this problem?

    I haven't seen Henry's market carries cranberries sweetened with apple juice, mostly sugar :( Hopefully they'll do soon since they're merged with Sprouts. This recipe looks so yummy! :D

    Melanie the cranberries I use are sweetened with apple juice and I get them from Sprouts. That is the best you can get with cranberries and thank you for stopping by I love my fans too :)

    These look SO good! We are doing a 6 week paleo challenge at my CrossFit and I have cut out ALL paleo sweeteners (I didn't realize how much I loved my paleo treats until they were gone!)to see if it makes a difference. I will definitely be making these on September 17!! :)

    For the cranberries – are those just regular dried cranberries? I haven't found any that don't contain added sugar. Is there such a thing?

    I do feed the caveman crunch to my grandkids when they come over. INSTEAD of candybars. Makes me smile knowing they are getting good stuff, loving it and not knowing Nanna has a leg up on em. Thanks for all you do!
