Coconut Cake(Bread) with Chocolate Frosting

Ingredients
  

Cake

  • 6 eggs
  • 3/4 cup coconut flour
  • 1/2 cup coconut oil melted
  • 1 cup dried blueberries
  • 2 tablespoons raw organic honey
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking powder

Frosting

  • 1 cup enjoy life chocolate chips
  • 1/2 cup coconut oil melted
  • 2 tablespoons raw organic honey
  • 1 tablespoon vanilla
  • pinch of sea salt

Instructions
 

Cake

  • Preheat your oven to 350 degrees fahrenheit
  • Mix together eggs, oil, honey, and salt
  • Combine the coconut flour and baking powder and continually whisk into the batter until there are no lumps
  • Fold in the dried blueberries
  • Pour into a greased loaf pan and bake for 40 minutes
  • Remove from pan and cool on rack
  • You can top it with the chocolate frosting recipe below or cut the bread in half like I did and layer it with the chocolate frosting and then put back together
  • Enjoy

Frosting

  • In a small sauce pan over low heat, melt the chocolate chips and the coconut oil together
  • Once melted, add in the honey, vanilla, and sea salt and continue to stir until mixed well
  • Remove from the heat and place in the freezer for 15 minutes to cool
  • Remove from the freezer and whisk until you get the consistency you want
  • Use on cookies, muffins, cakes, or this blueberry bread. Just make sure you only use it on Paleo Food :)

    I can’t see in the recipe what you do with the blueberries. Do you just add them to the batter? In the beginning or end or does it matter? Do you rehydrate them first or add them dry?
