I was so excited when I found out that US Wellness Meats started carrying bison.  I am a self proclaimed bison addict, I just wish I could go hunt my own.  Just to say I did it and help continue to live out my caveman persona.  If anyone out there in internet land happens to own a ranch, or has access to some bison hunting, help a caveman out since I have some extra time on my hands now.  Seriously though, you can make this recipe with a bison chuck or beef and I made it so simple a caveman really did it.  You can have it prepped in under 5 minutes and have minimal dishes.  That sounds like a winning combination to me.

So I have to know, I spent some time doing a lot of hard work on these photos.  I was going for a dark look and especially with the last one.  I call that my Dexter photo, what do you think?  Be honest, you won’t hurt my feelings.  Well maybe a little but I will cry in solitude and eat some bacon.  That seems to be the best solution to all life problems, BACON.  I forgot to tell you guys, if you ever run across any funny bacon photos, posts, or links please shoot them to me in an email to [email protected]

Like normal, I am out of things to say and am just filling some space for you.  Have you noticed I haven’t been posting many desserts lately?  No I am not mad at you but I was getting a little fluffy and I actually had some complaints that all I posted was dessert.  What do you want to see more of?  Entrees, side dishes, desserts, or all of the above?  Let me know in the comments so I have some direction to take for you.  I will leave you to this recipe, so enjoy.

Crockpot BBQ Pulled Bison

Total Time 10 hours hrs 10 minutes mins

Ingredients
  

  • 1 large red onion sliced
  • 3 pounds bison chuck roast can use beef chuck too
  • 2 tablespoons coconut oil melted
  • Liberal amounts of salt and pepper to taste
  • 1 cup water
  • BBQ Sauce of your choice I used my beasty BBQ Sauce

Instructions
 

  • Wash your bison or beef chuck roast under cold water and pat dry
  • Use your melted coconut oil and rub it all over your chuck roast and then season liberally with salt and pepper
  • Line the bottom of your crock pot with your sliced red onion
  • Place your roast on top of the onions and add your 1 cup of water to your crock pot
  • Set on low and cook for 10-12 hours
  • Once your roast is done, you should be able to shred it with two forks
  • Shred your meat til it is to your liking. I like to leave mine in the juice in the crock pot until I serve it
  • Plate your bison or beef roast and dress it using the BBQ Sauce of your choice (like my Beasty BBQ Sauce)
  • Enjoy

    Just getting ready to drop this in the slow cooker tonight. Wondering if you have any advice if I’m using a top round roast that’s about 5 1/2 lbs. Do I need to use more water?

    To double check – you cook the meat in water and onions, but not in BBQ sauce, right? Most other recipes add BBQ sauce to the crock pot.

    I would always love help with a good side dish to pair with the entree. We just made the Dijon chicken with mango couscous tonight and it was incredible. My husband said the side alone was ok, but combined with the chicken it was delish! Keep up the great work.

    Love your recipes. I also love shopping at U.S. Wellness Meats. They have a great selection of hard to find cuts of meat.

    The one thing I’m always looking for are recipes for side dishes (veggies) that don’t involve root vegetables. I’m trying to keep the carbs down at the mo’.

    Well, the pics didn’t do much for me but the bbq was kickin’ a…!!
    I used a beef chuck roast, all nice and grass fed (actually came from a nearby farm owned by Dave Matthews), cooked it for about 10 hours.

    For the sauce, I added a handful of raisins and some warming spices like allspice and clove and cooked it slow and low for a couple of hours to thicken up after blending it smooth. Yuuumy!
    I am new to this paleo business (doing the Hartwig’s Whole30 plan) so getting to enjoy yummy food food has been one of the unexpected bonuses.

    Theres actually a bison farm down the road from my house, theres a (whisper) Great White Buffalo there too. But alas… I’m in Germany. I really am going to miss all the fresh produce when I leave here. hmph.

    I am making this today! I would suggest more main dishes. As a single working mom I need quick and easy entrees. I can figure out my own sides, and dessert is rarely on the menu.

    Loving this! I used an elk roast. If you want to go primitive paleo, take up elk hunting! Never met a meat eater who didn’t love elk meat. Elk hunting isn’t easy though, so if hunting isn’t really your thing, stick with the buffalo ranch hunts. Back to the food, loved the sauce! I would love to see snacks on the go ideas. I eat pretty healthy when I have time to cook, but revert back to bad eating habits when busy and on the go.

    Amazing! I just made this last night, and not only did I wake up to an amazing smelling house, the taste of this dish is phenomenal! I grabbed myself a beef chuck roast since bison is a treat right now.(^_^) I did add a few cloves of garlic and a bit of cumin.     My suggestion is simple, but very tasty side dishes. I tend to run out of ideas especially when it comes to veggies. So seeing more of that kind of stuff to go on along with this delicious looking recipe would be a major plus! I definitely have to get a crock pot when I move this next month.

    I love all recipes- even the desserts- I have only made you banana bread – and I loved it0 I also try and stay away from desserts – but I LOVE having healthy options!!

    This looks amazing! No surprise though. I’ve yet to be disappointed with any of your recipes. I love the pulled pork, so I’m definitely going to need to find some bison chuck. That BBQ sauce is off the hook too. We totally empty our spice cupboard to make it every time. Love it. Epic as usual.

        One thing I’m always curious about is what you would eat with something. Like this recipe, I’m thinking I’d do a coleslaw. Maybe grab some banana peppers or something too (just cuz I’m obsessed right now). But what would you eat with it. I tend to just eat my pulled pork/beef/whatever on it’s own, but when I make it for non-paleo people I like to try and come up with something that won’t make them wonder “Where’s the bread?”.

          Your onto it, I just eat it with whatever inspires me but maybe make a sweet potato salad to fill them up similar to bread and serve that with your coleslaw. You can also make my honey muffins which pair amazing with this

      i totally agree…the cleaver pic is awesome U can see how good it going to be…then the finished product just gets you salivating.. i love all your recipes but i know u can abuse the paleo/primal desserts & they all look so yummy…i am trying to pull back on them to finish taking off the weight so i am trying to concentrate on no dessert recipes…but DON’T stop them coming George cause u know there is always tomorrow…lol

    So you can go bison/buffalo hunting in Wymoing at Snider Buffalo meats and also in Jackson Hole, WY they have a few.

    I love your recipes and just figured if you really wanted to live out the hunting a buffalo/bison I’d give you some hints. :)

    I have a recommendation for venison, from 81 yr old grandfather, lifelong restauranteur, hunter and resident of both Alaska and Montana–
    He swears by cooking a venison(deer) roast together in the same roaster or pan in oven WITH a pork roast. He says that it makes the venison so tasty, you will actually prefer the venison over the pork. I have never eaten anything from his kitchen (especially meat) that is not AMAZING!! A little old school wisdom..;)
    As a resident of Montana myself, bison is pretty widely available here. Bison has to be my favorite meat, and stands perfectly on its own. No help needed. I prefer it second only to elk. Yum!!

    Love the photos, and of course I love all your crockpot recipes; they were a real revelation for me since they are so easy and so, so tasty! It seems like a lot of other people’s paleo main dish recipes are rather “special occasion”, but I like recipes that provide lots of leftovers so I don’t have to do a “main event” every evening.

    Though I have written down every one of your dessert recipes, I am still in the weight loss mode and don’t make dessert very often (I do use the more portable desserts for trail food though). Where I think I could use some cooking help is in side dishes and snacks.

    Thanks again for all your efforts, you are a really talented guy!

    I have been waiting for the perfect excuse to thaw out and cook the Bison Chuck Roast in my freezer…it now has a purpose. As for requests, i find myself snacking on far too many handfulls of nuts thought out the day. I know they are good fats etc…but pretty high calories…do you have any ideas for “good for you” and filling post/pre or even anytime snacks?

    I love your pulled pork recipes, but my husband isn’t a big fan of pulled pork. I’m sure he will loved the pulled beef / bison though.

    I’m excited to see non-desert recipes! I’m still trying to do this whole thing mostly Whole 30-ish – so I’d love some more main dishes – especially with leaner cuts of meat since I’m trying to lose weight as well. But, thats just me – if I wasn’t trying to lose weight – bring on the fatty cuts!

    Hey George — I know that I would want to be told if I had a typo in a post, so I hope you’re not offended by my pointing out two things to you.

    Step 4 says “ovens” instead of “onions”
    Step 8 says “pork” instead of “bison,” “beef,” or “roast”

    As an aside, I cannot wait to try this recipe. It’s going in the crock tomorrow night!

    How does the beef or bison turn into PORK after its cooked? “plate your pork”

    Sorry Im into finding mistakes lately since my boss keeps yelling at me when I make them.

    I like the photos! They look different than many food photos out there..they set you apart. You could even play it up more. I think the contrast could be boosted a little bit, so that the light areas will be lighter/dark areas darker. But overall it’s cool.
    I think posting more entrees with sides would be great- I love your desserts but would rather have more recipes on what to do with meat/vegetables. Sometimes it’s nice too to have some direction as to which side dish should go with which meats, etc..so that the pairings go well together.

    Have you looked in to buffalo hunting in Colorado. When I lived there lots of my clients would go every fall.
    I like the pictures too.
    And I like whole meals not just parts or maybe sujestions of what to put together.

    I bought a spiral slicer after seeing your zucchini noodles on this site.
    I would love some new ideas and recipes using the slicer both with zucchini and other vegetables!

        I would love know how you get the lovely browned parts. If I put the water in mine never gets that lovely glazed look on top.

    Hey George! These photos are fantastic. I love it, “the Dexter photo”! My favorite is the 2nd one. If you had a coordinating series of these, all featuring different meat, they’d be cool kitchen decor :-)

    Yeah I noticed you were posting a lot of desserts. I’m not a big fan of paleo desserts. Most of the time they include too many ingredients and are complicated. Anyways, stuff like this is what I want to see! This looks amazing and perfect for the summer!

    I really like this look! I may have lightened up that center area on the second photo just a tad more, but I really like the feel! You may like VSCO presets if this look is your thing. I love them because they mimic film and are wonderfully moody. I don’t work for them, just a fan.
    Also, I love bison!
