So all the credit to this one goes out to my awesome friend Tim.  He just started his Paleo Journey and is destroying it one awesome meal at a time.  This man is dedicated and has a huge heart and always goes out of his way to show his appreciation for anything you do as well as passing on all his knowledge to anyone who needs it. Thanks Tim keep up the great work.  Enjoy

Prep Time 10 mins
Cook Time 8 hrs
Total Time 8 hrs 10 mins
Servings 6

Ingredients

  • 3-5 pounds boneless chuck roast
  • 1 large white onion
  • 1 red bell pepper
  • 1 orange bell pepper
  • 2  teaspoons garlic powder
  • 1  teaspoon dried basil
  • 1  teaspoon dried oregano
  • 1  teaspoon paprika
  • 1  teaspoon chili powder
  • 1  teaspoon black pepper
  • 1  teaspoon sea salt
  • 1/4 cup beef broth

Instructions

  • Mix all of your dry spices together in a mixing bowl and set aside
  • Cut up your onions into large chunks and cut your peppers into long slices
  • Using a very sharp knife, cut your chuck roast into 4-6 large pieces ensuring you cut against the grain
  • Toss all of your cuts of meat in the seasoning mixture and ensure you coat all sides of every piece of meat
  • Using half of your vegetables, line the bottom of your crock pot and then place half of your meat on those vegetables
  • Put the other half of your vegetables in your crock pot and then put in the rest of your meat
  • Pour in your beef stock, cover and cook on low for 8 hours
  • When the meat is done, remove all the meat pieces and vegetables and drain the crock pot
  • Place all the meat back in and shred with two forks
  • Pour in as much as my new Beast BBQ Sauce as you would like and mix well
  • Cover and place on low for 30 minutes to let all the flavors meld together
  • Serve and Enjoy with anything you like, this would work great over a bed of Cauliflower Rice

question! I’m making this right now and it smells divine. Do you shred up the peppers and onions with the meat or do you just serve them with the meat? thanks!

This is my FAVORITE paleo meal. I am trying to track my nutriontal values for better control of my intake and output. Where can I find the nutrional info for this? thanks.

So excited to try this I just stuck it in the crock-pot! Do you think it would change anything if I cooked it on high for 4 hours instead of on low for 8?

Thanks for all the great recipes!

I love slow cooking my meats, but give it a try and let me know how it comes out!

Go for it. I like low and slow because it comes out really tender, but give it a try!

I just made this today. It smelled like heaven cooking and it tasted like it too. This is seriously delicious. I’m doing a 21 day sugar detox and this hit the spot to get me through.

    Hi George,
I’m making this with the linked BBQ sauce for dinner – it tastes great so far as I sample it! Thank you for all of your recipes – I love following your blog because they’re always so good. Anyway, is there any possible use for the drained beef broth/juices, or is it only good for the garbage/drain??
    Thanks again,
    Brandae

Brandae I think the best thing is to either use it to maybe make a soup with it as beef broth but you should use it right away. I always throw mine out.

Great recipe, but I do have one note about #11.
You say to let the flavors “MOLD.” Might I suggest you use the word “MELD” instead? I think it would be a better word when describing a food unless you are speaking of blue cheese, even though they are both correct.
Anyway, this is a great recipe and I made it this weekend.
    Keep up the good work.

Thanks for posting this recipe. I’m slowing getting the family converted to paleo and this sauce served with the pulled pork was absolutely delicious. We’re making another batch tonight to go with the beef pot roast. Yum!!
