Big Tim's Crock-Pot BBQ Beef

Ingredients
  

  • 3-5 pounds boneless chuck roast
  • 1 large white onion
  • 1 red bell pepper
  • 1 orange bell pepper
  • teaspoons garlic powder
  • teaspoon dried basil
  • teaspoon dried oregano
  • teaspoon paprika
  • teaspoon chili powder
  • teaspoon black pepper
  • teaspoon sea salt
  • 1/4 cup beef broth

Method
 

  1. Mix all of your dry spices together in a mixing bowl and set aside
  2. Cut up your onions into large chunks and cut your peppers into long slices
  3. Using a very sharp knife, cut your chuck roast into 4-6 large pieces ensuring you cut against the grain
  4. Toss all of your cuts of meat in the seasoning mixture and ensure you coat all sides of every piece of meat
  5. Using half of your vegetables, line the bottom of your crock pot and then place half of your meat on those vegetables
  6. Put the other half of your vegetables in your crock pot and then put in the rest of your meat
  7. Pour in your beef stock, cover and cook on low for 8 hours
  8. When the meat is done, remove all the meat pieces and vegetables and drain the crock pot
  9. Place all the meat back in and shred with two forks
  10. Pour in as much as my new Beast BBQ Sauce as you would like and mix well
  11. Cover and place on low for 30 minutes to let all the flavors meld together
  12. Serve and Enjoy with anything you like, this would work great over a bed of Cauliflower Rice
