Shockingly delicious bacon brownies that are totally Paleo and who would have thought. So this dessert totally plays into my recent Pork kick. I was going to just dip some bacon in chocolate but decided to do one better. Here you end up with Chocolate Bacon Brownies which can easily be converted to a cake. The process for this for me was a little long because instead of traditionally cooking the bacon, I baked it in 100% Pure Maple Syrup to try and really give it that sweetness to pair well with the saltiness of the Bacon. I hope you enjoy these as much as I did, especially since I ate about 8 of them.
Chocolate Bacon Brownies
Ingredients
- 2 cups of almond butter
- 2 eggs
- 1/2 cup raw organic honey
- 1 tablespoon vanilla extract
- 1/4 cup cacao powder
- 1/2 teaspoon sea salt
- 1 teaspoon baking soda
- 1/8 cup coconut milk

Instructions
Bacon My Way
- Place bacon slices on a aluminum foil lined baking sheet
- Taking about 2 tbsp 100% raw maple syrup and a basting brush, brush the tops of all the bacon generously with maple syrup
- PLACE IN A COLD OVEN, and then turn the oven on 400 Degrees F
- Come back in 20 minutes and you should have perfectly cooked bacon in maple syrup
- Pull out of the oven, and place on paper towels to absorb the fat
- Place the bacon in your food processor and finely chop to later add to the brownies
Chocolate Bacon Bites
- Preheat oven to 325 Degrees F
- In a large bowl, using a hand mixer blend your almond butter to make it a smoother consistency
- Next blend in your two eggs
- Now blend in the honey and the vanilla
- Add the salt, baking soda, and then SLOWLY add in the cacao powder or else you will take a chocolate powder bath like I did the first time
- Add the coconut milk and continue to mix well
- Now fold in the bacon and mix well by hand to ensure an even distribution of it all
- Divide your batter between your 24 cupcake cups and bake for 30-35 minutes or until it passes the toothpick test.
- Enjoy

No, any nut butter would do. Where are you? You can make almond butter easily. You throw almonds in a food processor and let it run for 7-10 minutes

I just made these and yes, the batter was really thick. I used my KitchenAid stand mixer with the paddle attachment and had no problems, but if you were mixing by hand it would be difficult.

Love this recipe! I have tried several variations but there was one I wanted to share. Instead of the almond butter I used homemade cashew butter(cashews and coconut oil) and left out the bacon and added mini non-dairy, gluten free, soy free chocolate chips. They were incredible!! I love this recipe as a base for my brownies. I have added blueberries and coffee and did make them with the bacon. SO yummy!

I made this last night for my Hubby to share with his evaluator during his check ride (USAF flyer). The batter alone was AMAZING. I did have to tweak it because I didn’t have enough or all of the ingredients. Only a cup of Almond butter, cacao chips melted because I couldn’t find powder (don’t ask, its Nebraska), added half a cup of Shakeology to add back a bit of the dry ingredients, and almond milk instead of coconut. Okay so maybe I REALLY had to tweak it lol but it was still SOOO delicious. I had two squares this morning before I could finish boxing them up with the rest of his lunch! Definitely my go to brownies from now on!!!!

My boyfriend is pretty into the Paleo thing right now so I thought I’d try making this recipe for him for Vday. I was pleasantly surprised at how much I like these considering I have a vicious sweet tooth. Thanks for the recipe and I will be referring to your site again for more ideas!! The only thing I would do differently was not cook the whole package of bacon when the recipe only calls for 8 slices. I think I “sampled” a bit too much of it as a result.

I would be curious if they are allergic to both of the egg white and yolk but thats another story. To be safe just take them out and double the coconut milk. You are going to get a different consistency but it should still work

Hey man, I just wanted to let you know this recipe was amazing. 5 months ago I cut all grains and sugars completely. Lost weight. Then the mental switch flipped, I needed to change my way of eating completely. Recently went Paleo, and enjoying berries. This recipe made 52 mini-cupcakes. (perfect size for my kids!). (I lowered the cooking time to 12-15 min, until toothpick came out clean). This recipe is terrific and they are delicious! Thank you!

I made these tonight, sans bacon. Also reduced the agave to 3/4 cup. Sweet enough for me! Very good. My wife even loved them, and she's quite picky. :)
