You can never go wrong with a perfectly cooked juicy burger. There is something comforting about that familiar bite when a little grease drips down your pinky. At least there is for me. It really is hard to make burgers better, but I discovered the secret. This avocado stuffed burger recipe is life changing. Don’t believe me, go read the comments because these become a weekly staple in most households.
Avocado Stuffed Burger
So this recipe was born thanks to some awesome farmers I always have at my local farmers market. I will admit that I am lucky I live in California and always have access to delicious avocados. One of my local farmers at a plethora of ripe avocados and he threw me a bag. My first thought was what am I going to do with all of these and then I realized I shouldn’t be complaining about the excess of green gold.
I only needed 2 avocados to make this delicious avocado stuffed burger. I remembered that I had a couple pounds of delicious grass fed ground beef defrosted from Butcher Box and just started looking around for inspiration. Sun-Dried Tomatoes and Lemons caught my eye and I decided that’s where I was going with this one. Boom, avocado stuffed burger for the win.
Like I stated earlier, this avocado stuffed burger recipe is phenomenal and you will find yourself eating more of the filling than you put in the burgers. I am a self admitted happy fat kid and you should have seen my face making these burgers. Truth is, if you ever catch me in the kitchen my face is normally covered with some sort of delicious creation. Avocados from these burgers, chocolate from all my brownie creations and so on. My theory is I am saving dishes by licking the bowl.
Avocado Recipes
If you run into a similar problem as I did with the extra avocados, you will need some other recipes to use. Of course I would recommend this avocado stuffed burger the most, and here are some other favorites.

Avocado Stuffed Burger
Ingredients
- 2 pounds grass-fed ground beef from the awesome Butcher Box
- 2 avocados ripe
- 1 cup sun-dried tomatoes chopped NO OIL
- Juice of 1/2 a lemon
- Zest of 1 lemon
- 1 tablespoon black pepper
- 2 teaspoons sea salt makes it salty depending on your sun-dried tomatoes
- Bacon fat Optional
Instructions
- Preheat your grill to medium-medium high heat
- Put your ground beef in a large mixing bowl and add black pepper, 1 teaspoon of sea salt, and the zest of one lemon
- Mix well and then using your hands form into thin patties all the same size (you need them thin because you will be using two of them to make one patty)
- In another mixing bowl combine avocados, sun dried tomatoes, lemon juice, and the remaining teaspoon of sea salt.
- Mash the avocado and mix ingredients well to get as smooth as you like
- Place your avocado mixture on top of the bottom of half of the burgers, ensuring you leave room to seal the burgers without it leaking out
- Put your other patty over the top of your mixture and pinch the edges of your burgers together to seal all the way around
- Now go out and grill to your liking. I normally do about 6-8 Minutes per side on my grill but yours may be different. Ensure you cook evenly on both sides of the burger or you will end up with an undercooked and an overcooked side
- While grilling, I drizzle my burgers with bacon grease and it adds an amazing flavor
- When done grilling, allow your burgers to rest for 10 minutes and then serve. You can use the rest of your avocado mixture to top your burgers with and go to town
- Enjoy!

We tried these avocado burgers last night. There is SO much potential, but the 2 TBsp of pepper was overpowering. Didn’t anyone else think so?? We will try again with about 1/2 TBsp of pepper next time. Otherwise, these are going to be awesome.

I have been wanting to make these Avocado Stuffed Burgers since I first saw them after I bought your Caveman App (which is awesome by the way) when it was fist launced and I finally made them last night for supper and wow they are delicious. However due to living in Northwestern Ontario we have a ton of snow this winter and our BBQ is buried so I made them on the stove in a frying pan and they were still delicious. Just an FYI, in your Cavemen Feast android app, while the ingredient list says 2 teaspoons salt divided, the directions say to add 1*tablespoon* salt to the ground beef. Thankfully I’ve made this enough times that I realized it before adding it (one of my go-to recipes–I simply *love* this dish! ).

These are fabulous!!! So glad I made enough to have for dinner again tomorrow night. Because of my forgetfulness & lack of time I was forced to tweak the recipe a bit…forgot sun dried tomatoes so I used garlic…no time to fry bacon for the fat, so I let a pad of butter melt on each patty during the 10 minute rest. The were so yummy that my husband didn’t even use catsup…which is a big deal!

I made these tonight, and they were ok.
The burger meat was great, but the avocado filling was just far too salty.
I think my problem was the sun dried tomatoes. I brought dried ones to make sure they where not swimming in nasty cheap oil, but forgot that the dried ones are generally about 10% salt to preserve them. I soaked them for a bit in hot water, and chopped them into the avocado mix. at the time, it looked a lot of tomato, and wish I had only put in a bit at a time and tasted it, as the saltiness of the tomatoes ruining the avocado filling.
will try again though and adjust the recipe to either exclude the sun dried tomatoes, or use far far less of them.

I have made these before and they were great, just like everyone else has said. I do love the lemon/sundried tomoato mixture, but I also just love the basic idea of stuffing the avocado inside the burger! I might try some other flavor themes too like chilli powder/chpotle with salsa on top, or even a curry flavor with caramalized onions on top… Anyway, I just wanted to mention in case anyone else was wondering that I don’t hve a grill and these worked great in the oven too. Just laid them on top of some parchment paper on a cookie sheet at about 400 for maybe 10 min or so? Can’t remember exactly but just keep an eye on them and no need to flip. Thanks!

This concept is fantastic – I will most definitely make these again but with some tweaks.
The one major problem I found with this recipe is that the avocado mix (after cooked)
came out way too salty! It was so salty that I had to scrape out the avocado mixture from my burger.
I would recommend
1. maybe 1 teaspoon vs 1 tablespoon for the avocado mix.
2. kick up some more spices for the meat and possible add some very finely chopped onions
Otherwise this is great.. starts to get me thinking of what else I can stuff inside these burgers

Man, these were awesome! I ate them with portabello mushrooms for buns. They looked so good even my non-paleo husband wanted to try one. I gave him a half, because I only made two and he had already had his own two regular burgers. He found it delicious, too. So next time I’ll have to make avocado burgers for the both of us. I made your advocado burgers last week for my family. I did not have the tomatoes on hand so I sustituted with some fresh spaghetti sauce I had on hand but other than that followed the recipe to a ‘T’. Loved the recipe. I decided to make these this night and they were amazing. The first bite oozed the warm comforting avocado and it melted straight away. And the blend of the lemon and beef combined so well with the avocado. I seriously recommend whoever is reading this to try this recipe. And don’t hold back on the pepper it adds a wonderful smokyness to these burgers when they brown on the grill. Honestly even though this recipe was simple it was oh so intoxicating. I made these on grilled eggplant as buns with a little bit of bleu cheese crumbled on them. Although next time I might try goat cheese. But anyway enough of the sexual food talk. Great recipe and great site! Quick question: Why do you say no oil on the sun dried tomatoes? I was forced to use store bought olive oil packed sun-dried tomatoes and made sure to drain off as much of the oil before mixing. The recipe turned out fine, so i’m left wondering, “Could it have been better if I didn’t have the oil?”

I rarely ever use eggs in my burgers, especially in grass fed beef but these stay together just fine. If you are nervous just add an egg but you don’t need them

Question for you – I am just getting started on the Paleo lifestyle (still working on cutting out grains and such) and I can guarantee my bread obsessed husband is going to have a tough time eating these without a hamburger bun. Any suggestions for an alternative to a hamburger bun? I thought maybe a portobello mushroom, but he outright refused that because the “texture will be different”.
