I absolutely love me some grilled vegetables with a nice char on the outside, especially cauliflower. This is a perfect summer time recipe that pairs well with anything you can cook on the grill and is super simple, prep, wrap in foil, and grill. Hope you enjoy :)
Garlic Grilled Veggies
Ingredients
- 1 head of cauliflower cut into florets
- 1 to mato diced
- 1 onion sliced
- 4 cloves of garlic minced
- 2 tablespoons extra virgin olive oil
- salt and pepper to taste
Instructions
- Place all of your ingredients above in a mixing bowl and toss until you have an even coating of all ingredients
- Make an aluminum foil packet and place all of your vegetables in it and seal it shut
- Place on your hot grill and leave it on there for at least 20 minutes so the vegetables will steam while you cook anything else you like
- Remove and serve
- Enjoy

George, I have a question regarding this recipe. Do all of the veggies need to be flat in the packet or can they be stacked? (large flat packet vs. small fat packet) Thx!

They cook more thoroughly when flat.

I always leave the garlic cloves just smashed if not whole and I like a little more direct heat for color and crispness, also I don’t own a grill so everything is done in the oven. Guess that’s more roasted veggies then grilled. I think I just made my own words meaningless =D

I choose steaming on the grill so that I am not at the stove tempted to be cooking bacon! No I’m kidding. For a change and for nutritional reasons. What you did sounds delicious though. Enjoy :)
