Raw Chocolate Pumpkin Pecan Macaroon

Sorry it took a few days for me to get this recipe posted.  When I asked on Facebook which recipe everyone wanted first, the Paleo White Chocolate won by a landslide.  My intention was the post this the next day but life gets in the way sometimes.  We all have our ups and downs, and even though I was never down it doesn’t mean people weren’t trying to drag me there.  Little do they know, I am about as stubborn as they come and I can out will anyone.  Mainly because I just don’t like to give up so I keep fighting with the biggest smile on my face knowing that Sunny Days will come and I will still be there leading by example.  In my short tenure on this earth I have learned that no matter what happens or what people think, if you stay true to your morals and standards, no one can ever bring you down.  Lead by example and eventually everyone will follow.  And my preaching is over, now on to DELICIOUSNESS.

I really made this recipe so everyone could have a delicious dessert to bring to ANY holiday party and have it ready in literally 5 minutes.  You will be shocked at the Paleo or non paleo heads you turn with these ones.  Trust me, I tested these on about 15 people, only 5 of which were Paleo.  The rest just would not stop eating and I knew it was a winner.  Plus they just look sexy and I can tell you that sexy and delicious is the best combination you can have.  Oh crap, I forgot to mention in the first paragraph.  I am humbled to have been nominated for best recipe for Paleo Magazine with my Lemon Cucumber noodles and the best Food centric blog for the year.  I am not going to beg for votes, but if you think I deserve it, I would truly appreciate the vote.  You can vote HERE.

Raw Chocolate Pumpkin Pecan Macaroons

Ingredients
  

  • 1 cup unsweetened shredded coconut
  • 1/4 cup pecan flour or almond flour
  • 1/4 cup cocoa powder
  • 1/4 cup pumpkin puree
  • 1/4 cup raw organic honey
  • 2 tablespoons coconut oil melted
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • pinch of salt

Instructions
 

  • Combine your coconut, pecan flour, cocoa powder, cinnamon and salt in a bowl and mix well
  • Add in your pumpkin, honey, coconut oil, and vanilla and stir well until all ingredients have been evenly incorporated
  • Use a medium cookie scoop or tablespoon and scoop rounded balls onto a plate or cookie sheet
  • Place in the refrigerator for at least an hour to solidify
  • Store in the freezer or refrigerator and serve cold

    Im making these as a welcome back gift for someone who’s been recovering from surgery for the past 6 weeks and is returning to the box tonight! Anyway, my question is, can I substitute the pecan/almond flour for cashew flour?
    BTW I have already tried this recipe for valentines day (no substitutions) and they were a hit! Thanks :)

      I would try using some dark chocolate chips (I use the Enjoy Life brand- they are dairy, soy and nut free) and some canned coconut milk :)

    What do you recommend as a sub for the nut flour in this recipe for those with nut allergies – a real problem for me with so many of these great paleo recipes.

    I have been searching for a recipe similar to this!!! YEAH!
    I plan on tweaking it to try to mimic my new favorite cookies by Wonderfully Raw… the Lemon Pie Coco-Roons.
    I absolutely love those cookies, but at $8 per tiny bag… they’re a bit out of my budget.

    These have become my go-to weekend treat!! So delicious and ridiculously easy to make. I have autoimmune issues and I’m following AIP at the moment, so I can’t have the chocolate nor the nut flour, but I leave out the chocolate and use coconut flour and they are such a great treat. Thank you thank you thank you! :)

    These look awesome and would accommodate most of the diets ( a few vegans, a gluten free, and a diabetic) at my home right now. Any idea how they are on carbs? I’m a temporary diabetic and am in search of a natural low carbs desert (not using artificial sweeteners.)

        Oh thanks for those links. I will for sure use myfitnesspal.com for future carb search. Very useful. Just FYI the whole recipe comes out to be 120-124 carbs… any ideas how many servings or individual balls this will make? Also learned a lot about this awesome carb alternative almond flour by researching the ingredients. Will most defiantly have to go buy some of that now. Thanks a bunch!

    Super Easy to make. That much honey seemed to overwhelm them a tad. Perhaps that will lessen as they get colder (used organic raw sourwood honey). Might try Stevia next time, although not sure how much would be equivalent to 1/4 cup honey. Otherwise very tasty and a nice treat.

      In my opinion, stevia is horrible with chocolate. You are welcome to have a different opinion, but I have heard this from others as well so I just thought I’d warn you if you haven’t tried it yet. :)

    Thank you so much for this recipe. All other paleo snacks/desserts I have tried taste kind of funky with an odd texture. But these are amazing. My non-paleo father asked me to make more and I will now be quadrupling the recipe from now on. I look forward to trying more of your recipes. Keep up the great work.

    I understand why most of the macaroons to not make it to the refrigerator. this recipe is delicious, and I made the mistake of trying some of the batter. But having read many glowing reviews before making , had enough sense to double the recipe.

    Dear George Love your recipes and am changing my life. Have been a bad diabetic for 17 years but on this diet I have dropped my blood pressure 25 points diastolic and systolic and my blood sugars over 100 points and all in just a few days and lost 16 pounds in 3 months.Your recipes help me stick to it a thing I never could do in the past. Please, What brand and from where do you get your coconut flour. I am having trouble getting it here.

    Oh George, you are changing my kitchen one recipe at a time. I made these with the pear butter I just put up in the pantry. Then coated them with white chocolate from last week. Now I just need to find a really good hiding place before the hungry minions descend upon the kitchen and gobble them up.     Do you think this would work with coconut flour in place of the almond flour? Maybe with half the portion because coconut flour is more absorbent? (I ask only because I have a ton of coconut flour right now…)

      Do you have any almonds or other nuts? Just grind any nuts you have in your food processor or blender and use those

    These are very easy and really good! I must confess while they are fantastic on their own, I melted some dark chocolate with a little bit of coconut oil and dipped them and then sprinkled them with sea salt and they were delicious. Although much better for you sticking by the original recipe. Thank you so much for all your inspiration and wonderful recipes!

    These sound simply amazing. I do not have any pumpkin puree on hand at the moment (confession: we ate it all in a paleo pumpkin custard last night). What other fruit purees might work? I have a banana, some applesauce, and some pear butter (spiced) on hand.
