Macadamia Nut Coconut Cookies

You can never go wrong with a tried and true chocolate chip cookie recipe. Even if it is shaped like a macaroon. We have many other delicious cookie recipes on the site, but this was one of my originals and the first photo I ever took with a DSLR camera. It was almost like a promotion to becoming a food blogger.

Macadamia Nut Coconut Cookies

Ingredients
  

  • 1 cup coconut flour
  • 1/2 cup coconut oil
  • 1/2 cup raw honey
  • 4 omega-3 eggs
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon sea salt
  • 1/2 cup macadamia nuts roughly chopped
  • 1/2 cup of shredded unsweetened coconut
  • 3/4 cup of enjoy life chocolate chips

Instructions
 

  • Preheat oven to 375 (Thats degrees faranheit with the oven set to Bake for you non kitchen people)
  • In a large bowl, combine coconut oil, raw honey, eggs, vanilla extract, and sea salt. (To make your life easier, in a small bowl on the side, combine the raw honey and coconut oil and melt in the microwave before mixing it in)
  • Add in your coconut flour.
  • Stir in the macadamia nuts, shredded coconut and chocolate chips.
  • On parchment lined baking sheets, drop heaping tablespoons of cookie batter.(Ensure you form them to look like the cookies you want for a final product as these do not rise or spread like conventional cookies, which also means you can place more on a baking sheet without worrying about them touching)
  • Bake for 14 minutes or until golden brown.
  • Remove from the oven, transfer to a cooling rack and then enjoy with a nice glass of almond milk.

    I tried to post this about 8 hours ago but it must have failed so let’s try this again. I was really looking forward to making this and the ingredients are pretty common so I was all for it. I finally got a chance yesterday and they leave something to be desired. I think the coconut flour is the culprit. Good flavor, just a very chalky consistency. I have actually never made a recipe twice using coconut flour – including your banana bread (I use almond flour with great results). The sponginess and dryness caused by coconut flour just doesn’t do it for me and if you don’t have something to drink with it, you might be in trouble.
    Give it a try tough – maybe you will have better luck.

    I have a question about the chips: The first ingredient is “brown sugar” which is white sugar + molasses. How is that usable in paleo recipes? (unless the links have changed). On another note, these look amazing and I will try them (but I am not doing paleo yet…just greatly reduced the grains)

      Where did you find those ingredients. I have been using those chocolate chips for years but technically no they are not paleo, they are a better option :)

    Wow! Made these tonight and my husband and I both had to make ourselves stop eating them! The recipe made 32 small scoop cookies and it’s hard to eat only 2! I will be making these again…no question!

    I’m new to the paleo diet and sweets are the hardest for me to give up! i was so rxcited to find your page. this recipe was so good! everyone i shared them with really enjoyed them. I used almond flour instead of coconut and I’m wondering if that’s why the consistency was more runny. I compromised and made a cookie cake instead! excited to try your other recipes!

      Thanks Emily. Yes you can NOT exchange almond flour for coconut flour. It won’t work at all. I am glad you still liked them. Make sure you tell me what else you like

        If you do use almond flour because thats all you have, if you add in about a cup more of the shredded coconut, it seems to absorb all the runny-ness. :)

    Looks so delish…totally new diet in our house, part paleo part vegan due to new discovery of allergies for ds: soy, dairy, eggs. Have you had an tries subbing flax/water for the eggs in one of your recipes? Or one with coco flour in particular…..

    It is such a shame that a person would be so ignorant as to insult someone over a. Recipe or its infridienta. This lifestyle i a choice! Not everyone can afford to go 100% organic. Reaearch and learn about what to substitute. Freedom of speech is a benefit that we have but please do your best to at least sound somewhat educated. The insults were uncalled for.

    I just want to say…FUCK YOU! That’s right! I said it, LOUD AND CLEAR! Where the FUCK am I supposed to buy all this SHIT? Do I look like a goddamn organic grocery store? That is even affordable. SPECIAL BULLETON: THIS JUST IN!….EVERYONE is so poor they can’t afford to eat macdamia nuts or even afford shelter more and more of the time. So take your pretentious-ass ingredients and you’re rich yuppy ass ball recipe and go F yourself and the horse you rode in on.

      Hi everyone. I just wanted to apologize. First of all for being dumb enough to post inflammatory comments from an anonymous profile, so anyone else could post subsequent comments using my name, pretending to be me. Secondly, yes, I’m looking for yuppy ass ball recipes, and I’m just kind of upset that I can’t afford the type of nuts that I’d most enjoy filling my mouth with. Also one time when I was younger I wanted to date a first cousin. God bless you all. And please remember: if you’re feeling generous, please find me and stuff my mouth full of cheap nuts.       I understand how you feel about the ingredients being expensive; some of them are. I assure you that most of us that ascribe to this lifestyle aren’t rich, by any means. Perhaps I can give you some ideas of substitutions for ingredients that you feel are too expensive, or give you some ideas of where to find these ingredients that don’t involve spending your whole paycheck.

      I am a huge fan of the author’s recipes. For me, NOT eating this way is not really an option. I’m severely diabetic and this is the only method that has literally kept me alive and changed my life. I have spent a lot of time figuring out substitutions for ingredients and experimenting with recipes. As I said, none of us are rich. I’d be happy to talk if you’re interested.
