Pumpkin Macadamia Nut Buttet

Wow, wow, wow, wow.  That is all I have to say.  I swear to God they are going to create a television show on TLC about me and my pumpkin addiction.  It is just something about fall being in the air, it makes me happy.  I put on my footed pajamas, poured a glass of wine (water), and sat by my fireplace over-indulging on pumpkin nut butter.  Sounds fun, huh?  Well if anyone wants to join me, leave a comment and I will give you my address.  I really am a good friend; I cook a lot, just don’t like cleaning.  That is a fair trade though, you get to be my Paleo taste tester and all you have to do is the dishes.  And lucky for you, I am one of those clean chefs, I can’t stand when dishes pile up so I wash them as I go.  Hmmm, the more I type I realize this is a sweet deal for someone, I think I am going to raise my standards.  You have to keep my wine glass or Norcal margarita glass full too.  That may not be fair but it will make me happy.

Macadamia Pumpkin Butter

So which one of these photos is your favorite?  Personally, the Macadamia Pumpkin Butter wins in my book hands down.  I also hate the almond pumpkin butter one at the bottom, but I was so tired of taking photos I could not make it look any prettier.  Sorry.  Oh, and because I am a dork and I love flashy things, hover your mouse over a photo!!! Almond Pumpkin Butter

Completely off topic but it just happened and I need to vent: Spotify confuses the ever living hell out of me.  Pandora is so simple, all I do is pick a genre which is never really accurate, and then hit thumbs up or down to agree or tell it to pound sand.  Spotify never does what I want.  I think Pandora is winning in this relationship, the spontaneity keeps me on my toes.  Wow, exciting life I live huh?  Don’t jump up in excitement, I will be able to handle this by myself haha.  For real, I know I am a slave to technology but I just don’t have the patience for this one.  Pandora wins.  Bonus point, I find out about new music I would never know about if it wasn’t for Pandora knowing what to play, true story.

It is just something about fall being in the air, it makes me happy.

I am out of things to talk about, two blog posts in one night and my mind is mush.  Instead, I pose a question, what would you like to see next on my site or improved?  Honestly, I would love some feedback, leave it in the comment below.  Just don’t be too harsh, I ran out of band-aids.

Macadamia Pumpkin Butter

Ingredients
  

  • 1 cup raw macadamia nuts
  • 1/4 cup organic pumpkin puree
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice

Instructions
 

  • Place raw macadamia nuts into your food processor or blendtec
  • Blend until you have a nut butter consistency
  • Add the additional ingredients and continue to blend until fully incorporated, making sure to scrape down the sides a few times during blending
  • To use this to make Pumpkin Butter Cups, go follow the recipe HERE

    I’m truly a pumpkin addict because it’s been over 100 every day this week and I STILl crave pumpkin … nothing to do with fall in the air! I’ve made your pumpkin cookies many times (my roomies love them and they’ve been a hit at a BBQ now too!) Now it’s time to try these nut butters!

    Just made the macadamia pumpkin butter…with a Vitamix. Hey, you gotta use what you got, you know? It didn’t come out quite as creamy as I would of liked, but still excellent. Stirred in some maple syrup as that is just how I roll. As for improvements on your site? More pics of the caveman, haha. And I would love more ground turkey recipes. :)

    Let me tell you how much I love pumpkin! I have been drinking pumpkin lattes to satisfy my pumpkin urges, but so much coconut milk! I was looking for alternatives, and found your coconut pumpkin squares and the chocolate pumpkin cups and this pumpkin butter… You are my hero! Can’t wait to try this recipe!

    Recipes and photos are great! If you are looking for inspiration, this time of year also produces some of the best apples. I am making a venison roast in apple cider with apple slices, celery, garlic and thyme. If you are in the mood, experiment away!

    Your pictures are perfect and amazing. Combined with the recipes, I’m getting a little hot and bothered. I’m ready to run into my kitchen to make mad magic with chocolate cups (that sounds wrong, but let’s just go with it, if that’s okay). The only problem is deciding which pumpkin butter to make first!

    I really love to read your posts- and am a bit sad that you live too far from LA for me to apply for friend/taste tester. I would be perfect for the job, though, because I find peace in making anything like new – from a dirty pan, broken waterheater or overgrown garden. (I am so happy that my kids can be pigs sometimes!) I just don’t like to think up what’s for dinner.

    Thanks for your help with that. If I could only think of some way to give back…

I am making the Chocolate pumpkin cups tonight for a party this weekend I was just wondering How many chocolate cups does one of the filling recipes fill? And has anyone made them using paper cupcake sleeves? Does the chocolate stick?

      Thank you Tim. One recipe of the nut butters makes approximately one cup of nut butter. Depending on how much filling you are using depends on how many you can get. But if you only use a teaspoon per large muffin cup, you can get like 30-40 cups.

    Thank you for your recipes. Your energy amazes me. The photos look great. The only thing I would change is to make sure the surface that the food is laid on isn’t smudged with oil or garnish. I love the pin it button. The like buttons are distracting. I imagine the pumpkin almond butter isn’t so good, since I tried a pumkin bread made with almond butter and it was nasty. I’ll try to pecan butter.

      Thank you Rachel. I don’t mind the surface being dirty lol since thats how I use it haha. It’s more real cause I make a mess when I cook haha. The developers are also working on that like plugin to make it collapsible. It will be there until that happens because the benefits totally outweigh the cost.

    We’re trying to make this right now but have not had success with our filling, almond pumpkin butter. Follwed recipe to the T and it’s extremely dry. My Ninja couldn’t work it (the butter just spun to the sides of the jar and no matter how many times I wiped it down, it was helplessly going nowhere). So we transferred to a blender which might work but it’s still much too dry. I added more pumpkin which didn’t help so I may try more coconut oil (melted this time) and pumpkin. It tastes good, just added a pinch of salt, but it’s just not the right consistency at all. I’m using raw, soaked and dried almonds and canned pumpkin which I suppose could be drier than fresh pumpkin. Any suggestions? How about adding water? I’m worried too much coconut oil will change the flavor too much. Thanks!

      No you don’t want to add water. Since you soaked and dehydrated the almonds a lot of the natural oils were lost I am sure. If your using expeller pressed coconut oil it won’t change the flavor at all since its tasteless. That is your only option to get the consistency right. And making nut butter in ninjas don’t work well since the blade doesn’t hit the bottom. I used to have the same problem unless I was making huge batches. A food processor is your best bet and you have to make the nut butter before you add the remainder of ingredients. Adding pumpkin is just going to give you almond flour with pumpkin if you haven’t gotten the butter made first.

      1. Eat them with a spoon
      2. Dip in chocolate
      3. Dip fruit in
      4. Fill muffins with

    I shouldn’t have opened this post until I was home for the day. Now I am at work, dreaming of pumpkin nut butters (and pumpkin nut butter cups) with no way to make them until after I’ve survived 8 hours here and done a WOD (that involves one of my least favorite moves ever…). Sigh. I should know better. Flip side – I have something to look forward to all day!

    How do I submit my application for friend/taste tester? I promise I’m fun, find “dude” stuff hilarious, and have no problem doing dishes AND cleaning toilets. Just not at the same time. Eww. And, you can’t possibly be as messy as my 2 year old son.
