These taste as great as they look and they’re easy to make. They’re perfect for an after school snack as well. You also don’t have to stress about getting the dough right. Enjoy!

Pizza Muffins

Ingredients
  

  • 3 large eggs
  • 2 teaspoons coconut oil
  • 1 tablespoon ghee
  • 2 tablespoons coconut milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/3 cup almond flour
  • 1/4 cup pepperoni
  • 1/4 cup sun-dried tomatoes
  • 2 tablespoons yellow onion diced
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon oregano
  • 1/8 teaspoon basil

Instructions
 

  • Preheat your oven to 400 Degrees F
  • Mix together your eggs, oil, milk, salt, and vanilla
  • In a separate bowl, mix together flour, spices, and baking powder
  • Add your flour mixture to your egg mixture and mix until there are no lumps left
  • Fold in your vegetables and pepperoni
  • Pour into 7 lined cupcake pan and bake for 15 minutes
  • Enjoy

    Is there any way to substitute the almond flour? My son has anaphylaxis allergies to peanuts and tree nuts. TIA :-)

      Hmmm I would try to leave it out and do a test bake, and if that doesnt work, replace it with maybe 1/4 Cup of Coconut flour and add an extra egg
