Pizza Muffins
Ingredients
- 3 large eggs
- 2 teaspoons coconut oil
- 1 tablespoon ghee
- 2 tablespoons coconut milk
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon baking powder
- 1/3 cup almond flour
- 1/4 cup pepperoni
- 1/4 cup sun-dried tomatoes
- 2 tablespoons yellow onion diced
- 1/8 teaspoon garlic powder
- 1/8 teaspoon oregano
- 1/8 teaspoon basil
Instructions
- Preheat your oven to 400 Degrees F
- Mix together your eggs, oil, milk, salt, and vanilla
- In a separate bowl, mix together flour, spices, and baking powder
- Add your flour mixture to your egg mixture and mix until there are no lumps left
- Fold in your vegetables and pepperoni
- Pour into 7 lined cupcake pan and bake for 15 minutes
- Enjoy

Hmmm I would try to leave it out and do a test bake, and if that doesnt work, replace it with maybe 1/4 Cup of Coconut flour and add an extra egg
