Coffee Roasted Chuck Roast

One of the most common questions I receive is how to eat paleo on a budget? The truth is, when starting out it can be overwhelming with all of the changes and new shopping requirements. The best tip I can give, transition in phases and don’t think you have to change it all overnight. Another tip is to learn how to make more economical cuts of meat taste delicious. That is where this I can help with this chuck roast recipe.

Chuck Roast Recipes

When I started eating paleo, I was working 80 hours a week and had very little time to cook. Recipes using a crockpot that required little to no effort were my favorite. Here are a few of my other favorites:

  • Crockpot Rump Roast
  • Crockpot Beef Tongue
  • Crockpot 7-Bone Roast (same as chuck roast)
  • Crockpot Balsamic Roast
  • Italian Style Chuck Roast
  • Primal Pot Roast

One of the reasons I love the chuck roast so much is that it contains a lot of connective tissue, including collagen, which partially melts during cooking. That collagen greatly enhances the richness of the meal as well as health benefits.

Coffee Roasted Chuck Roast

Cook Time 8 hours hrs

Servings 8

Ingredients
  

  • 2-3 pounds roast of your choice
  • 5 garlic cloves
  • 2 cups freshly brewed Hug In A Mug Coffee
  • salt and pepper to taste
  • 1 onion
  • 8 ounces of mushrooms

Instructions
 

  • Brew Hug In A Mug Coffee
  • Make 5 deep slits all over your roast and shove the cloves of garlic in it
  • Rub the meat generously with salt and pepper
  • Place the roast, mushrooms, and onions in your crockpot
  • Add coffee
  • Cook on low for 8 hours or done to your liking.
  • I am serving mine with roasted green beans with honey and walnuts as well as mashed cauliflower. Enjoy

    I have very little experience choosing meat cuts, so I have no idea what to buY when it comes to choosing your Roast, Any suggestions you can give me so I can go to the store and ask for it??

    Hi- I want to make this today but I don’t do crockpots (I think I’m the only person who ruins crockpot meals)! Any recommendations for the temperature I should cook it at in my oven? I’ll stick it in my dutch oven instead. Thanks :)

      I have not tested it so I really don’t know. The temperature of the crockpot on low is 200 so after some research it says your oven will be on 350 and the food would require anywhere from 1-3 hours.

    Do you think this would be good with a bison roast? I already have the bison and I’m trying to come up with a recipe that will please my non-paleo dad.

        Does it taste a lot like coffee? My husband doesn’t like coffee. Haha. Why am I considering this recipe? Probably because it sounds good to ME.

          Haha it has a coffee flavor. Why don’t you do like the 7 bone roast recipe with the bison.
