Happy Easter

I am loving this 30 Day Sugar Detox I am on, I FEEL AMAZING and have had absolutely no cravings.  But I would be lying if I didn’t say the best part of waking up in the morning is checking myself out in the mirror seeing if I can find any more definition with no effort what so ever haha.  Please forgive me for being vein, but it happens when you used to weigh 247 lbs, EEEEK, I can barely lift that, can’t believe I used to WEIGH THAT.  Don’t believe me, HERE YOU GO.  Oh yea enough of that. Ok so enough about me, two quick things I want to hit on before the recipe, and in no particular order:

  1. My new friends over at US Wellness Meats are absolutely amazing.  Forget about the food for a minute, they are the sweetest and most down to earth people ever.  Don’t tell them, but I sometimes call instead of emailing just to have an awesome conversation, haha.  I think I kept Tressa and Amanda both on the phone for an hour a piece cause I needed a break from work, SHHHHHH!!!!!  Yea so I just wanted to say thanks for being so awesome.  I also want to tell you all right now, if I was a follower of my blog, and I liked giveaways, HUGE giveaways, you may want to check back on May 1st, there may be something huge in the works
  2. Friends mean the world to me, and the other day you saw a quick rant about my awesome friends Juli from PaleOMG and my BFF Jessi from PaleoFriggenDelish.  Well honestly, if I was to sit here and talk about all my friends, I would need a new website appropriately called Civilized Caveman Confessions because it would just be pages and pages of thank yous to all my amazing friends and family.  So I will save you that, but real quick, I have an amazing friend Shayna who has known me longer than the internet has been around, for reals, way before Al Gore invented it, haha.  But yea, I may have been crushing on her heavy in 7th grade but I figure its been 15 years, its ok to talk about now, so just in case you didn’t know Shayna, now you do.  But she has a gorgeous child she is going to raise Paleo, woot woot.  And she has a blog she is starting.  It looks great and is covering the basics of homemade Paleo baby food and meals.  Do me a favor and go check it out, show her some Paleo Love.  You can find her here: Caedmon’s Mom

Fresh Cucumber Salsa

Ingredients
  

  • 1 cucumber chopped into 1/2 inch cubes
  • 1/2 red bell pepper finely diced
  • 1-2 tablespoons fresh cilantro finely chopped
  • 1 clove of garlic minced
  • Juice of 1 lime
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste

Instructions
 

  • 1 cucumber, chopped into 1/2 inch cubes
  • 1/2 red bell pepper, finely diced
  • 1-2 tablespoons fresh cilantro, finely chopped
  • 1 clove of garlic, minced
  • Juice of 1 lime
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • Toss all of your ingredients in a bowl
  • Serve chilled aside your grilled beef franks or any delicious summer dish

    I came here through a gluten free recipe site, yes that is gluten free ;) Anyway, to make those into corn dogs, make up your favorite gluten free cornbread mix, add a BIG handful or two of shredded cheese then cut those dogs in half and smush them into a muffin tin half filled with the cornbread mix. Bake as directed on the cornbread mix and you have a corn dog and an AWESOME lunch!!

    Don’t have a grill; I am assuming I could do these in the oven on a grill rack under the broiler but how long would I have to cook them on a broiler setting?

    Made these today for lunch. Happened to have bacon, GF hot dogs, and left over Pico de Gallo in the fridge. We blended up the pico, and got some veggies to make the salad. It was superb. Thank you for this recipe! We are primal-ish.. so we added some feta to the top of the salad and it was amazing, like a combination of Greek salad, summer barbeque, and the cilantro gave it a Mexican twist.
