I have a confession, I LOVE COOKIES. I know that may not seem like much of a secret but I love trying to create new cookies that are delicious and everyone loves. I believe I hit a home run with these. They are easy to make, cook fast and stay nice and soft. The level of joy that shoots through my body when I taste that first bite of melting chocolate paired with the hint of sea salt just throws me in an entirely new happy place. Wow, that was a really sensual description of my first bite, good thing I didn’t take any video of it. Honestly though, I am so excited to read your comments and see what flavors you have added and who you tricked with these beautiful cookies. Just a reminder, I love reading your comments but sometimes I know other prefer different social platforms like Instagram. Before you make these delicious cookies, I have a secret to tell you. My app is being released on July 23rd, 2013. Double Chocolate Chip Cookies
Ingredients
- 2 cups blanched almond flour 185 grams
- 3 tablespoons coconut flour 30 grams
- 1/2 teaspoon sea salt
- 1/2 teaspoon baking soda
- 1 egg 50 grams
- 1 tablespoon vanilla extract
- 1/2 cup butter or coconut oil melted (107 grams)
- 1/2 cup raw organic honey melted (150 grams)
- 1/2 cup enjoy life chocolate chips 90 grams
- 1/4 cup enjoy life chocolate chunks 45 grams
Instructions
- Preheat your oven to 325 degrees Fahrenheit (177 Degrees Celsius)
- In a mixing bowl or stand mixer, combine your almond flour, coconut flour, sea salt, and baking soda and mix well
- In a smaller mixing bowl, combine your egg, vanilla, coconut oil and honey and mix well
- Add your wet ingredients to your dry ingredients and mix ensuring you incorporate all of the ingredients
- Fold in your chocolate chips and chocolate chunks and mix by hand to spread them out evenly
- Using a medium cookie scoop or tablespoon, spoon the batter onto a parchment lined cookie sheet leaving room for the cookies to spread
- Place in the oven and bake for 13-15 minutes or until done
- Remove and place your cookies on a cooling rack
- Enjoy

Just made these today. After a disappointing almond flour version from paleo grubs, I’ll admit I was a tad dubious. I did replace the honey with a 1/2 mix of maple syrup and coconut sugar. It is soooo good. It’s perfectly dense yet choc-tastic. It’s obviously calorie dense and to me, if you’re going to go there, make it count, and this is the best!

This is the best cookie recipe I have found. This is the real deal folks. The cookies melt and spread in the oven. Used a mechanical icecream scooper to drop them because they like to stick. The only think I had a problem with was the cookies being too flimsy. I cooked them for 16 min. Let them cool completely. Took them off of the parchment (carefully because they can fall apart) and put them on a clean tray. Preheated the oven to about 250 turned it off and stuck them back in for 5-6 minutes. Seems this helped to dry them out without over cooking them. Now they are firm with a chewy center.

Delicious! I have only been following Paleo for two weeks and am starting to miss “desserts”. These were perfect! Mine didn’t spread out at all either, but toward the end, I just smushed them down with the bottom of a glass. Lol! I tweaked the recipe just a little. I did half butter, half coconut oil. And added just a few drops of maple syrup and agave.

I have made these several times and they have been my saving grace as cookies are my weakness. I used to bake and eat a whole tube of toll house or pillsbury premade cookies. Anyway, they always turn out tasty but very soft. What can I do to firm up the recipe without adding more volume? Extra egg maybe?

Thanks for the awesome recipe! These are by far the best tasting GF/DF cookies I have had!!! I ran out of coconut oil (and I never eat butter) so I ended up using 1/4 cup coconut oil and 1/4 cup almond butter. SO YUM!!!

Just made these cookies and they are awesome!!! My 10 year old daughter says she loves them!! She posted a picture to show how great they look. Ours did come out a little darker than the picture shown here. I’m guessing the vanilla made them darker..any suggestions on how to make them lighter? Either way we love them!!!

OOOOhhh mmmmy mmmy mmy! Per my boys,these are Awesome; Mom…your the best cooker ever; howd you make these sooo yummy; Can we eat all of these?!! And me? I am smiling from ear to ear, very ok to celebrate by joining my boys in the cookie fest! =-) My family has many food allergies, so I tweeked these bad boys like so: omit coconut (allergy); omit egg, and added 2 Tbls ground chia seeds to dry ingredients; omit dairy/coconut oil (allergies), sub 1/4 C. each of mashed banana and grated (refrigerated) lard; subbed out maple syrup for honey (allergy). I baked them at 350 for 20-23 minutes. Let them cool before you eat =-) Hope this helps anyone that has any of these allergies!! Thank you so very much!!!!!

I LOVE baking during the holidays and I’ve had to put that on hold the last year b/c I couldn’t figure out how to bake with the almond & coconut flour; nothing would come out right or even kinda edible. I made cookies following your recipe tonight and holy cow they are AWESOME!!!!!!!!!!!!!!!!!! Love these – I add chopped nuts and shredded coconut, and only use half the recommended amount of mini chocolate chips, and leave out the chocolate chunks. It’s still pretty chocolatly this way. We won’t eat them any other way now, gotta add those nuts and coconut!
It’s so great to have a tasty treat without feeling guilty. It’s also nice to know that – if I grab a cookie in the afternoon if I’m hungry or losing energy – that I’m getting healthy fat and protein, and not just a sugar rush.

So I was a bit skeptical at first. But now. WHOA. I am a true believer after making these. Like previous posts from others, my cookies do not look anything like your picture, mine came out more “macaroonish” in texture. Nevertheless, they are da bomb yo. I’m going to make another batch *ahem* not sure where the first one went, and take in to work for my Marines to try. I know, I know, we’re not the most discerning bunch when it comes to taste, they usually eat anything. But I think it will blow their minds when I tell them these are actually not bad for them! I love these cookies! So excited to find a treat that tastes like it has all te bad for you junk in it but doesn’t! The texture is a little more macaroon -ish (which is not a bad thing). I think my almond flour is still not fine enough. I made the cookies on the pan and Jen popped them in the fridge for 15 min before the oven and they turned out perfect! Thanks for the recipe! And the stars are not working on my phone but I want to give it 5!!! :(

I just made made these cookies and they are so YUMMY!! I did add 2 tsp. Extra almond flour because of the high altitude here in Colorado. I didn’t have enough honey so I added some agave. The cookies did not spread and were very soft!! I will definely make these again. Your recipes are wonderful.

Wow…I have been clean/doing a Paleo diet for the last year. My friend has celiac’s and we were talking about how there are NO good chocolate chip cookie recipes out there. And believe me, i miss my cookies so i’ve been on a mission. These were AMAZING!!!!!!!!! They taste like real cookies. I didn’t have honey (and left it out based on your comment above) and if they taste this good, i don’t know if they can be better!!!

I’m so glad I came to read the reviews. They were delicious but did not spread. Mine also pretty much fell apart but I do not care. I loved them anyway. At first I thought it was my almond flour since I make it myself. Could be why they fell apart though.
P.S. Just watched you on the Primal Cooking Workshop. Think we’ll be having bacon wrapped pork chops tonight.

So I made these over the weekend… like a few people on here, mine didn’t spread out at all. So I flattened them down myself before they were finished cooking… and although I can’t say they turned out better than the flattened ones in your pic (since I haven’t tasted those), I can say these tasted amazing! Seriously, delicious! Even my father, who makes fun of this “diet” I’m on, ate multiple cookies :)
These will be in the rotation – and will likely be a snack I take to my xfit coaches in the future!

Words cannot describe how satisfying these cookies are. My only weakness in staying paleo is SUGAR, and these chocolate chip cookies are heavenly for any sugar addict! I added a little extra coconut flour to my batch because it was a bit oily. They came out light, fluffy, and outrageous!! I can now be a paleo cookie monster!

You can make an egg substitute with either flax seeds or chia seeds…1 table spoon of ground flax or chia then add 3 tablespoons of water and let it sit for a min or so to gel up for each egg in a recipe. I have not used it for this recipe, but have for others with good results. It’s best to grind them yourself for freshness.

I’ve tried this recipe without the eggs, I just did a little bit less coconut flour so it wasn’t too dry. came out great! (try about 2 tbs coconut flour!) I also used maple syrup instead of honey, not sure if that made a difference. but it was a great cookie!!

I just wanted to let anyone with egg issues know I made these without the egg today and it did work. It was completely by accident. I have made these a dozen times and I love them so much! I couldn’t figure out why they were dryer than usual though so I added a little extra coconut oil and it wasn’t until after i baked them that i realized i forgot the egg. They weren’t as delicious but they look more like “regular” cookies and are still good just a little bland.

P.S. I have made them with maple syrup instead of honey on another occasion and I like them much better with honey. They also seemed to take a lot longer to cook with maple syrup for some reason.

just a thought for those who might want cookies that don’t spread as much. with a traditional CCC you can fridge the dough overnite and bake the next day. Not sure if that will help but might be worth a try

Made these last night. Mine looked nothing like yours! I scooped them with a melon baller & left plenty of room in between in anticipation if spreading, @ 12 minutes still in their cute original shape. I’m not into measuring wet stuff like oil & honey so I eyeballed it & usually I’m pretty accurate. So, probably just needed more oil. But I don’t really care cuz the taste was spot on & my cookie monster hubby LOVED them. Added a tsp or so of cinnamon & some nutmeg cuz I always do to choco chip cookies. Perfect, easy, adding to my favorites!

I made these last night, and they were delicious!!! They were far too easy to make, and resulted in barely a messy kitchen (win- win!) My only complaint is the fact that almond flour is expensive. I wish coconut flour cookies turned out half this good… invent a great recipe for me George???? please?!

I think it’s around $4-5/lb at nuts.com if you buy 25 lb. freeze it and it will last a long time, or split 25 lb with a few friends!

This one looks like a winner as usual, George!!! Just made another batch of your macadamia nut chocolate chip cookies (BTW, walnuts and pecans sub quite well too if you’re short on macadamia nuts). The chocolate chips are easy to come by, chocolate chunks, not so much. 40 miles to the nearest Whole Paycheck… heading that way in about a week and a half, so I’ll have to check then… and stock up!!

These are great. I used my small cookie scoop and they didn’t spread much. Ended up making two bite cookies. DANGEROUS!! The old recipe I used spread a lot and fell apart. I’ll probably throw some shredded coconut in next time for an almond joy taste.
