So this is one of the many muffin recipes I have, you are really only limited to your imagination on these ones. You can do any flavor, fruit, or nut combinations you want, Your kitchen is your canvas and your palate is judge. Live a little!
Strawberry Mango Muffins
Ingredients
- 3 eggs
- 2 tablespoons coconut oil melted
- 1/4 cup coconut milk
- 1/4 cup + 2 tbsp coconut flour
- 1/4 teaspoon baking powder
- pinch of salt
- 1 cup diced mango
- 1 cup diced strawberries
Instructions
- Preheat oven to 400 degrees farenheit
- Whisk eggs, melted coconut oil, coconut milk together in a mixing bowl
- Sift together the coconut flour, baking powder, and salt
- Add the dry ingredients to the wet
- I used my food processor to dice the fruit (don't overdue it, you don't want a paste)
- Add the fruit to the batter
- Spread evenly between 12 muffin tins
- Bake for 20-25 minutes or until done
- Enjoy

i made these and they turned out kind of like macaroons…they’re just coconutty little fruit balls. plus, i only made 6 from the entire recipe. :(

Will this work with frozen fruit?

You will need fresh fruit for this recipe. Frozen fruit ends up having too much water in it, and has a mushy texture.

I had a mango about to turn for the worse and strawberries in the fridge so I HAD to make this recipe!
I did not find them too eggy, however, we have been paleo for two years now and are very used to our muffins containing a lot of eggs due to the absorbency of coconut flour!
My mango’a ripeness did make for some rather fibrous muffins, but these were a yummy, moist, not too sweet treat :) Perfect for using up random fruit bits!
