If you’ve never had a tofu scramble, you’re missing out. Tofu scramble is so good that you’ll never miss scrambled eggs again – if you make it right.
The perfect savory and protein-rich breakfast dish, tofu scramble goes with just about anything. Serve it up with your favorite bread or rolls, broiled tomatoes, diced potato hashbrowns, and some veggie sausages.
Here’s our recipe for a perfect tofu scramble that won’t harm any chickens in the process.

Tofu scramble
This recipe serves 4 people.
Ingredients
- One brick of firm tofu, 14 ounces
- 1 shallot or small onion, finely diced
- 1 teaspoon coconut oil (or olive oil, if you prefer)
- 2 tablespoons nutritional yeast (which has lots of nutritional benefits and tastes cheezy!)
- A healthy pinch of turmeric powder
- A healthy pinch of paprika (or smoked paprika, if you prefer)
- Freshly ground black pepper and sea salt, to taste
- 4 tablespoons plant-based milk (any kind, unsweetened)
- 1 green onion, finely sliced
Method
Take the tofu out and rinse it. Drain off any excess water using a paper towel or a Tofubud tofu press.
Melt the oil in a nonstick pan or skillet on medium heat.
While the oil is melting, crumble the dry tofu in your hands into small pieces and set aside.
Now sauté the shallot or onion in the pan for 1 minute or till translucent. Add the crumbled tofu and sauté for 2 minutes more.
Add in all of the spices and cook till the tofu starts to brown – about 3 minutes.
Pour in the plant-based milk and simmer for 2 minutes, adding the green onion.
Serve while hot and enjoy!

- hash browns or another type of breakfast potatoes

Other optional ingredients
The wonderful thing about tofu scramble is that it lends itself to all kinds of variations. Here are just a few ideas.
Italian style
Sauté some sweet peppers with some onions and garlic, and add these to your tofu scramble just before serving.
You could incorporate an Italian-style tomato sauce by frying up some tomatoes and basil or oregano, or make a cream-based sauce with vegan cheese or oat cream and garlic. Serve your chosen sauce on the side or over accompanying veggies or fried potatoes.
Greek style
Toss in some delicious olives with your tofu scramble, and include some cubes of vegan ‘feta’ style cheese.
Or simply serve some thin slices of cucumber and tomato topped with the olives and a drizzle of olive oil, a bit of vinegar, and salt.
Mexican style
Huevos Rancheros are easy to make with tofu scramble: just make a quick fresh tomato salsa. In a food processor (or dice by hand), cut up some fresh tomatoes, red onion, and fresh cilantro. Add in a drizzle of lemon or lime juice, a dash of Tabasco or Habanero sauce, a pinch of salt, and you’re ready!
You can serve refried beans on the side, along with warmed up corn tortillas. Delicious!
English breakfast style
Serve your scramble alongside some broiled tomatoes, baked beans, and a side of toast with your choice of coconut oil, olive oil, or other vegan spread. You could also add some vegan cream cheese and fresh chives to your tofu scramble. This breakfast will keep you going for hours!
Indian style
When you add the spices to your tofu scramble, include a healthy pinch of garlic powder and a tablespoon of curry powder. Add in some canned chickpeas (rinse them first), and serve topped with fresh cilantro and some tomato chutney on the side.
What to do with leftovers
If you have any leftover tofu scramble, here are some ideas on what to do with it:
Refrigerate the rest and use it for stuffing burritos, pita bread, or enchilada wraps
Make a large amount and keep it in the fridge for breakfast throughout the week (tofu scramble will keep for up to 4 days in the refrigerator in an airtight container)
To reheat your tofu scramble, you can use a microwave or a pan over low heat. Tofu scramble tends to dry out a bit when stored, so drizzle a little bit of water or plant-based milk into the mixture. Stir it before reheating.
