Apple Cider Donuts
I have been Paleo for just under 4 years. I started my Paleo journey to overcome a 12 year battle with bulimia as well as heal my body from the inside out. Once my body started healing I learned that I had many food intolerances. I suffer from Celiac disease, I am lactose-intolerant and pretty much any food that isn’t paleo causes me to peel paint off the walls.
I used to look at my circumstances like they were limiting or unfair. The truth is, they created the space for me to truly explore health, my body and my relationship with food. The best part of that journey so far has been discovering how amazing foods that are gluten, grain, dairy and soy free taste as well as nourishing my body. One of those amazing recipes is looking right back at you now, these apple cider donuts.
Another thing I grew up eating were munchkins from Dunkin Donuts. Those things were phenomenal and phenomenally bad for me at every bite. After you are done making these apple cider donuts you should try my glazed chocolate donut holes next. Just to be clear, I wasn’t intending this post to be bossy, it’s just delicious food makes me somewhat passionate. Just to recap what “I think” you should do today :)

Apple Cider Donuts
Ingredients
Donuts
- ½ cup 56 grams coconut flour
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ⅛ teaspoon finely ground sea salt
- 2 large eggs at room temperature
- 2 tablespoons liquefied coconut oil
- 2 tablespoons honey
- ½ cup warm apple cider
Cinnamon Sugar Coating
- 2 tablespoons ghee or unsalted pastured butter or liquefied coconut oil
- ½ cup granulated coconut sugar or ¼ cup coconut sugar plus ¼ cup maple sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat a mini donut maker, or if using a standard oven, preheat the oven to 350°F and grease a standard donut pan.
- In a small bowl, whisk together the coconut flour, baking soda, cinnamon and salt.
- In a medium-size bowl, whisk together the eggs, oil and honey.
- Add the dry ingredients to the wet ingredients and stir until combined.
- Add the apple cider and mix until fully incorporated into the dough. Allow the dough to rest for about 3 minutes to ensure the moisture is absorbed by the coconut flour.
- Scoop the donut batter into the preheated donut maker. (A cookie scoop makes it easy; use one that measures about 1½ tablespoons.)
- Close the lid and cook for 2 to 3 minutes. If baking in an oven, bake in a prepared donut pan for 20 minutes. Remove from the oven and allow to cool for another 20 minutes before removing from the pan.
- Carefully remove the cooked donuts from the pan.
- Either brush the donuts with melted ghee or dip them in to cover both sides. Toss the donuts with the cinnamon-sugar mixture until coated.

Can you use apple juice instead of cider? Its June so no one sells cider at this time. Thanks!
George Bryant
I think so, I haven’t tried it but it should work in theory
Jennifer
Can the brand of coconut flour affect the batter? My batter only filled 7 standard sized donuts in a pan, not 12.
George Bryant
YES IT CAN. I only use Tropical Traditions
Jennifer
What can you use if you have a coconut allergy?

We made these into muffins this morning and all 7 kids loved them!
I didnt have apple cidar so i substituted 1/2c applesauce plus 11/2tsp apple cidar vinegar. They sprinkled sugar mixture over the top and yum, yum! Baked for 15 minutes at 350*. I love everything I’ve ever tried from you! Thank you!
George Bryant
Oh I will have to try that now :)
Marie
Is that supposed to say “baking powder” instead of “baking soda?” I used baking soda like it says, but my donuts didn’t rise. I have apple cider chips. I haven’t tasted them yet. They just came out of the oven. Thanks.
Renee
I just want to share with you not to use apple cider VINEGAR. No where does it say vinegar in the whole recipe…why would I use it? I have no clue. They are still pretty tasty. Can imagine how tasty they would be with regular apple cider. I will try again tomorrow. SMH. Sigh….
George Bryant
Hahahaha, thanks for the tip
Mark
Love the recipe! Even though I messed it up the first time. Lol
George Bryant
Even mess ups can taste delicious
Lisa
I’ve seen the Ina Garten use a donut shaped baking pan and bake similar donuts in the oven. I guess we’ll just have to try it.
George Bryant
Let us know how it works

Following up on the previous comment, can these be made into muffins or mini muffins for those of us sans donut pans?
Thank you!
George Bryant
That is what I would do
Yoli
Hello, any options for those of us who don’t have a donut hole pan or maker?
Thanks a bunch,
Yoli
Isaiah
You could do a circle cutter and then put a hole in the middle
George Bryant
Another great idea, thank you
George Bryant
Make them into muffins :)
Yoli
Hi, well, the muffins are in the oven now and I forgot to warm the apple cider. Is that okay? I had to push them down in the muffin pan and it is taste like apple cider? The mix taste too much apple cider is that right?
Thanks, we me luck,
Yoli
