Tomato Basil Crockpot Chicken

This was a 9 o’clock at night, need to figure out what I am going to eat for dinner tomorrow night but won’t have time to make type of meal. Luckily I left my crock pot on my counter and that was the end of it, nice and easy. Throw chicken in a crock pot with some nice Paleo sauce from Fresh and Easy or Trader Joe’s, with some veggies and call it a day. Prepped in 10 minutes on Monday night, put in the crock pot Tuesday morning and it should be delicious and waiting when I get home. Enjoy

Tomato Basil Crockpot Chicken

Ingredients
  

  • 4-6 boneless skinless, chicken breasts
  • 25 ounces organic tomato basil marinara
  • 14 ounces diced tomatoes no salt added
  • 1 white onion diced
  • 4 carrots sliced to your liking
  • 3 cloves of garlic
  • handful of fresh basil
  • 1 tablespoon oregano
  • salt and pepper to taste

Instructions
 

  • Place chicken in the bottom of your crock pot
  • Add your onions, carrots, garlic and whatever other vegetables you want
  • Add the diced tomatoes
  • Pour the tomato basil marinara sauce over everything, sprinkle with salt and pepper to taste
  • Place your fresh basil on top
  • Cover your pot and cook on low for 6-8 Hours
  • Serve over a bed of spaghetti squash and enjoy

    This was delicious over rice. The chicken was super tender, it fell right apart and was easy to shred. We ended up using a homemade marinara sauce, and I added a little sugar for sweetness. Thanks for the recipe! Great find!

    Tastes great but created a whole lotta sauce. Next time I’ll try it without the can of diced tomatoes and just stick with the marinara. Thanks!

    Do you have an approximate weight of the amount of chicken used? Even organic chicken breasts vary hugely in size which can turn crock pot recipes either soupy or too dry. Heading out to Wegman’s now to grab some more almond meal to make your lemon poppy seed muffins.

    This was delicious! I didn’t add any salt or pepper and the kids only needed a pinch once it was served. Didn’t have spaghetti squash, so we ate it over sweet potatoes! GREAT dish, will definitely make regularly! Thanks for the great recipe George!
