Honey Dijon Crockpot Chicken

Ok so I normally roast my chickens in the oven but now I am thinking about all you workaholics like me who don’t have time during the week to roast a chicken, instead we shall make it taste better and leave it in a crockpot all day. Enjoy

Honey Dijon Crockpot Chicken

Ingredients
  

  • 1 whole chicken mine was 3 pounds but whatever you can fit in your crock pot works
  • salt and freshly ground pepper to taste
  • 3 sprigs fresh rosemary
  • 1 lemon zested, halved, and juiced
  • 1/4 cup organic honey
  • 1 tablespoon dijon mustard
  • 1/2 white onion quartered
  • 3 cloves of garlic peeled

Instructions
 

  • Rinse your chicken under cold water and then pat dry with a paper towel. If you have a chicken that is roughly prepared, just remove the giblets, etc and then clean and pat dry.
  • Season the outside and inside of your chicken generously with salt and pepper and then place the chicken in the crockpot. It does not matter how you place it in there but lets keep it simple, just like it would sit on a shelf is what it should look like in your crockpot.
  • Chop up 2 sprigs of rosemary and depending on how you zested your lemon, chop that up too.
  • Place the rosemary, lemon zest, lemon juice, honey, and dijon mustard in a bowl and mix well. If your honey is thick you can microwave it for 15 seconds or so to soften it up and help it mix.
  • Place your remaining sprig of rosemary, the quartered onions, the garlic, and the lemon halves inside the cavity of the chicken.
  • Now using a brush, take your honey dijon mixture and brush all over the chicken and coat heavily, you should use all of i.t
  • Now cook on low in the crockpot for 6 hours
  • Serve with anything you like or just eat the whole chicken like I plan on doing.

Notes

Be very careful when you are removing your chicken from the crockpot, it is gonna want to just fall apart from being so tender so carefully remove it if you are trying to plate it or serve it on another dish, if not let all the meat fall off the bones and enjoy

      Yes it will turn to chalk. Does your crockpot have an auto off or time setting? This shouldn’t cook for longer than 6 hours on low

    I’m really interesting in making this dish, except that I would prefer to use chicken pieces rather than a whole chicken. I’m new to using a slow cooker, so I’m wondering how using pieces rather than a whole bird will affect cooking times. Is there much of a difference?

    Great chicken! Followed recipe exactly, except once the chicken was done, I scooped out the juices and put in pan with an arrowroot flour water mixture to make a delicious gravy for the chicken.

    Awesome–I'm definitely going to try it this weekend.
    I've been paleo for 5 weeks now (I am gluten intolerant, so having been GF for so many years, paleo was a relatively easy transition for me and I feel even better now!).

    I know people asked about using chicken breasts in other recipes in which you use a whole chicken, but do you think it would work here?
    It looks awesome (I love using rosemary), but I was just curious to get your thoughts before I try it with chicken breasts instead.
