Balsamic Grilled Chicken with Sun Dried Tomatoes

Delicious 30 Minute Paleo Grilled Chicken meal on the grill. This is just an easy and delicious meal to make up for lunch on a warm sunny day and spend a few minutes outside grilling. I hope you enjoy this simple meal as much as I did, it comes out absolutely amazing.

Balsamic Grilled Chicken with Sun Dried Tomatoes

Ingredients
  

  • 2 boneless skinless chicken breasts
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon dijon mustard
  • 1 tablespoon thyme
  • salt and pepper to taste

Instructions
 

  • Combine all ingredients except chicken and mix well, place in a ziploc bag
  • Rinse your chicken breasts with cold water and pat dry
  • Place your chicken breasts in the ziploc bag with the marinade and ensure you get a nice even coating
  • Place in the refrigerator and let marinade for 30 minutes or up to 24 Hours
  • Preheat your grill on medium heat to around 400 degrees
  • Once your grill is warm, grill your chicken breasts until done, should be about 8-10 Minutes per side depending on the thickness of the breast
  • Plate and top with some sun dried tomatoes marinated in olive oil and serve with some steamed vegetables
  • Enjoy

    Continuing my “no take out food” during Covid19! We loved this recipe. The marinade was excellent. We grilled it and served with marinated tomatoes. The chicken came out soooo moist. Served it with a homemade coleslaw and veggies. Definitely going to be on my summer meal rotation.

    DELICIOUS to much for 1 person but I am sure to bat will be better again I have use coconut oil to grease my pan that make a little bit of sauce and next time will add more coconut oil will do it again thank you

    I will do this recipe to day I will do it in oven because too cold to bbq here seam to me so good sure I can give a 5 stars before taste because I like all ingredients in this recipe Thank you I like this kind of recipe not to many ingredients and fast to do.

    How are there no comments for this?? :) Since I don’t have a grill (stupid condo rules!), I just threw this in the oven and added some sliced zucchini in the pan with it. So great and easy to make! Thanks!
