Yes that is right, these are PALEO Belgium waffles that are so simple to make, easy to freeze and warm up in a toaster, and taste better than the real thing.
I was going to post this recipe sooner but I wanted to get some serious testing done on it. I had 5 different people taste them as well as 4 kids and they all loved them. That was enough convincing for me to share with everyone. Plus I have been warming one up in the toaster every Saturday morning for breakfast and am shocked every time at the ecstasy contained in every single bite. You will absolutely love this recipe and you can prep a bunch in advance to be able to grab and go from the freezer. All about time saving now. Simple Frozen Waffles
Ingredients
Waffles
- 1 banana 143 grams
- 1 apple peeled and cored (141 grams)
- 1 cup almond butter 260 grams
- 2 eggs
- 1 tablespoon arrowroot powder Can use coconut flour 1:1
- 1 tablespoon vanilla
- 1/2 teaspoon baking soda
- coconut oil for greasing waffle iron
Whipped Topping
- 1 can full fat coconut milk refrigerated overnight (only thick white stuff, not the water)
- 1 tablespoon honey
Instructions
Waffles
- Puree apple and banana in a food processor.
- Whip almond butter on high for 2-3 minutes until smooth and fluffed using hand mixer.
- Add puree and remaining ingredients to whipped almond butter and continue to whip until combined.
- Grease your hot waffle maker for every waffle you make.
- Use about 1 ladle of batter per 8-by-4-inch waffle onto hot waffle iron for 3-5 minutes until browned. Do not fill up entire waffle maker, leave about 1/3 unfilled so that the batter can spread.
- Eat immediately or store flat in freezer and make your own breakfast by reheating in toaster - the waffles will be firm enough!
Whipped Topping
- Using a stand mixer or hand mixer whisk coconut milk (only the thick white stuff, not the water) on high for 3 minutes
- Add honey and whisk for an additional 3 minutes.
- Serve over waffles and enjoy

I have used flaxseed meal as a sub for eggs, but I do not use any water, as it can make the final product gummy or sticky sometimes. I use 2T flaxseed meal for each egg. Mix it in to the wet ingredients and let it sit for a few minutes to give it time to absorb the moisture before you mix in the dry ingredients.

These were delicious! I’m very new to paleo but they were super easy to make and I just put them in the fridge for the next morning. I’m guessing it was a chemical reaction with the baking soda and something else, but the inside had turned green by morning. Didn’t change the taste at all though!

Use a banana that isn’t ripe, and you shouldn’t taste it. I like to use bananas that are still green at the stem.

Just made it for breakfast and it’s the best Paleo waffle recipe hands down. I didn’t have apple so doubled the banana, subbed 1 1/4 cups ground almond flour for the almond butter, and added 1 tablespoon of chia seeds and they came out fantastic. Thank you, George!

These look great! I have been thinking about refrigerating the coconut milk. Every time I do, I make a mess trying to get the cream off the top of the coconut milk leftovers…My brain storm is to lay the can of coconut milk on its side, then when firm, pour off the liquid into a container to save for later. THEN, you can scoop out the coconut cream, and voila! No mess! Thanks, George, for all you are doing for the paleo community!

Going to try these as a substitute for the vans gluten free waffles I let the kids eat on school mornings. Much more protein which is a bonus. I buy the maranantha almond butter at Costco on the big jar and it makes these nut butter recipes doable coat wise. I believe it is 6.79 and would probably yield enough to make this 3 times.

I just made these….awesome! I used a Vitamix and just put everything in (pureed apple/banana first, then mixed in almond butter, then added all the rest) to save on the clean-up…worked perfectly.

I wanted waffles this morning and I haven’t eaten any in over 2 years since going Paleo/Primal. Oddly enough I saw this recipe on your facebook page today and so i tried it. These are SO GOOD! I couldn’t believe it! The only thing I did different was I used coconut flour instead of arrowroot flour because i didn’t want to drive all the way out to Whole Foods for a TBS of flour. I’ve tried numerous paleo pancake recipes that were just disastrous but this is so legit! Thank you so much! I’m so stoked on this recipe!! I wonder what other fruit could be added to this?

How many waffles does this make? I often cook for one so I like to know up front what the yield for a recipe is. It also helps to estimate calorie and fat amounts. Some paleo nut and nut butter based recipes are incredibly calorie dense.
