Cranberry Ginger Cookies

I couldn’t be happier with how these amazing Paleo Cranberry Ginger Cookies turned out.  It is taking all of my power not to eat the whole batch so I have plenty to share with friends.  I hope you all enjoy these delicious cookies and make, and remake, and share and then make again and keep the Paleo love spreading :) Enjoy

Cranberry Ginger Cookies

Ingredients
  

  • 2 1/2 cups almond flour
  • 1/2 cup almond butter
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup dried cranberries
  • 1/2 cup honey
  • 1/4 cup coconut oil melted
  • 1 egg
  • 1 tablespoon ground ginger
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda

Instructions
 

  • Preheat oven to 350 degrees fahrenheit
  • Combine all the ingredients above except for cranberries in a mixing bowl and mix well with your hand mixer
  • Fold in your dried cranberries and ensure an even distribution by hand
  • Using your cookie scoop, place scoops of cookies on a parchment lined baking sheet leaving room between the cookies because they will slightly expand
  • Using the back of a spoon or your hand, slightly flatten the cookies
  • Bake in the oven for 10-15 minutes or until done but ensure you continually check it so you don't burn them, some peoples ovens will be hotter than others
  • Remove from the oven, place on a cooling rack or plate
  • Enjoy

    George, I’ve read multiple studies on how high quantities of almond flour are not healthy to ingest. Any thoughts on that? Have you read any similar studies that share that same concern?

    Oh, these were great! I didn’t have any ginger on hand so I used a table spoon of lemon extract- it’s now a light, “breakfast” cookie. Thanks for sharing : D

    Do you have any good recommendations to substitute the Almond flour. We are just starting out our Paleo eating, but have a daughter who is allergic to all nuts :( which is making some recipes hard.

    I made a variation of these this afternoon…Made for friends who don’t like coconut. I eliminated the shredded coconut and added mini-chocolate chips. I left the oil in…it’s not noticeable. Also, substituted dried orange peel for ginger. The orange peel was too subtle with the almond flour/butter. But they still taste AMAZING! I think my max time should be 10-11 minutes. Any more than that and they are going to burn.

    Simply the best gluten free cookies I’ve tried so far. Mine were just a little thicker so I let them a little longer on the oven and like you said, I kept watching them so they didn’t burn… they were sooooo good! I had to make another batch as we were basically fighting over them :)

    I found these while looking for a low sugar/ sugar free cookie for my in-laws who have diabetes. Didn’t want to use artificial sweeteners so I searched “paleo cookies” and this was one of the top hits. Sounded too good to be true, but I tried them…. Seriously, amazing. Thank you so much for this fantastic, easy, healthy recipe! I couldn’t find unsweetened cranberries unfortunately– are they hard to find?

      Ben it will not work in this recipe, the almond flour is used for consistency and shape

    Omigosh . . . . making these for a cookie swap tomorrow. I don’t know if 2 dozen will make it to the party. I LOVE these! I’m a big fan of ginger though, so I’m gonna increase the ginger in the next batch.

    Obviously catching up on all of my reviews tonight (while the banana bread is in the oven!)… Made these for a holiday party and they were good!! Unfortunately I burned the bottoms a bit so i only was able to bring a handful or so to the party. But i will be making these again and I’ll keep a careful eye on them next time!

    Holy Moly Chrissy have you tried putting a thermometer in your oven to see if the temperature is what it says? Your cookies also could have been thinner than mine so no worries, glad your second batch came out better

    Hey, made them!! Gotta say I'm not a fan of the ginger…I'm going to make them again and use cinnamon or nutmeg. or a combo of both. My man and my son loved them, however :) I also used less salt than the recipe called for.
