Cake
- 6 eggs
- 3/4 cup coconut flour
- 1/2 cup coconut oil melted
- 1 cup dried blueberries
- 2 tablespoons raw organic honey
- 1/2 teaspoon sea salt
- 1 teaspoon baking powder
Frosting
Instructions
Cake
- Preheat your oven to 350 degrees fahrenheit
- Mix together eggs, oil, honey, and salt

- Fold in the dried blueberries
- Pour into a greased loaf pan and bake for 40 minutes
- Remove from pan and cool on rack
- You can top it with the chocolate frosting recipe below or cut the bread in half like I did and layer it with the chocolate frosting and then put back together
- Enjoy
Frosting
- In a small sauce pan over low heat, melt the chocolate chips and the coconut oil together
- Once melted, add in the honey, vanilla, and sea salt and continue to stir until mixed well
- Remove from the heat and place in the freezer for 15 minutes to cool
- Remove from the freezer and whisk until you get the consistency you want
- Use on cookies, muffins, cakes, or this blueberry bread. Just make sure you only use it on Paleo Food :)

It was a bit too crumbly and dry. I think I’ll add water or coconut milk next time. I love how easy the recipe is. Thanks for sharing.

HI, I combined all the ingredients. My batter looks very dry. is it how it suppose to be?
and I am adding frozen cherries.
Thanks
Amy
Could you use unsweetened chocolate in the icing and it taste ok?

I can’t see in the recipe what you do with the blueberries. Do you just add them to the batter? In the beginning or end or does it matter? Do you rehydrate them first or add them dry?
EllenFitz
I don’t see in the directions what you do with the blueberries. Do you just mix them in to the batter? In the beginning or end? Do you rehydrate them first?
George Bryant
Mix them in the batter at the end
