Primal Pot Roast

So here is a tried and true classic that never ceases to amaze me.  It is so simple yet so delicious and in that awesome category of us workaholics with not a lot of time. Hope you enjoy.

Primal Pot Roast

Ingredients
  

  • 3 pounds chuck roast or meat of your choice
  • 4-5 carrots peeled and sliced
  • 1 large red onion sliced
  • 1 large white onion sliced
  • 1 head of cauliflower cut into florets
  • 1 red pepper sliced
  • 1 green pepper sliced
  • 6 cloves of garlic halved
  • 2 cups of beef broth no salt added
  • salt and pepper to taste

Instructions
 

  • Place enough of your diced vegetables to cover the bottom of the enitre crock pot
  • Poke 12 holes in your roast using a long thin knife and insert garlic in each hole
  • Place the roast in the crock pot on top of all your vegetables
  • Take all remaining vegetables and place around and on top of the roast
  • Pour in your 2 cups of beef broth and sprinkle salt and pepper to taste
  • Place lid on crockpot and cook on low for 8 hours
  • Enjoy

    I made this yesterday, and everyone loved it. My daughter’s not-wild-about-vegetables-boyfriend even loved it, and asked me to send a recipe link to her email. I did make a few alterations, though.

    After inserting the garlic (I was a tad more liberal with about 8-10 cloves of garlic – we love garlic here), I seared the roast in a hot cast iron skillet, while bringing my bone broth to a rolling boil on the stove top, too. (I held that at a simmer until I needed it.) Instead of putting a layer of all the mixed vegetables in the bottom of the crock, I placed a layer of rather thickly sliced red and Vidalia onions to rest the roast on. I then dusted the roast liberally with smoked paprika, surrounded the roast with the cauliflower and peppers, added my simmering broth, and topped with the remainder of my slightly thinner onion slices. Before adding the lid, I also added a little splash of port wine. We usually add salt at the table, so I did not add any to the pot.

    After we tried it, I might have done two more things. I forgot to add pepper, so I would have probably added a little white pepper when I dusted the paprika, and several cups of thickly sliced mushrooms to the pepper/cauli mix.

    All in all, a good, solid recipe, great inspiration. Thank you for posting this.

    Can one just use water instead of beef broth? I don’t want to use packaged beef broth, typically those are of really low quality, and I’d rather not have to first make a bone broth in order to make this recipe. Thoughts?

    Thanks so much for this! It was so easy and I love all the veggies. I’m not a fan of veggies, though this was excellent! As believer in the paleo diet and a mother and wife to Paleo diet family members. so! This was perfect for us.

    Question though, its only fault was it was slightly bland.. we ended up adding a bunch of salt. any ideas on how to flavor this up?

      So glad you enjoyed. I know it is a little bland because I try to keep things basic as some people don’t like different flavors. I would just add some smoked paprika or like you did salt to liven it up.
