Fire Roasted Bacon Meatloaf
Ingredients
- 1 pound grass-fed ground beef
- 1 pound bacon minced
- 14 ounces can of fire-roasted tomatoes
- 1 red onion minced
- 1 bell pepper minced
- 3 cloves garlic minced
- 2 eggs
- 1 cup almond flour
- 2 tablespoons oregano
- 1/2 tablespoon sea salt
- Pepper to taste
Instructions
- Preheat oven to 400 Degrees Fahrenheit
- If you have a meat grinder, use it to grind your bacon and beef together, if not mince your bacon as fine as possible and combine in a mixing bowl with your beef
- Add all remaining ingredients to the bowl, and using your hands mix well to ensure an even distribution of ingredients
- You can now form it into a loaf and put it in a pyrex dish, put it in a loaf pan, or form into meatballs and put in the pan
- Bake for an hour or until the meat is cooked through, internal temperature needs to be at least 165 Degrees F because of the bacon
- Remove from oven and let sit for 10-15 minutes before slicing and serving
- Serve drizzled with some Beasty BBQ Sauce
- Enjoy

I made this last night but I think I did something wrong. It was very souppy. It could not be made into a loaf. Should I have drained the tomatoes? It tasted very good and the sauce too but just not firm.
Also I froze the bacon first and it was easier to cut.
This was delicious and I will definitely make it again. One change that I will make is to try and find a butcher that will ground the bacon for me or try myself in the food processor. It was very difficult to cut without cooking it first. Thanks George

Well at first I thought it was too rich for my tastes. Then…I tried it again the following day and WOW…it was awesome! I just finished it all :(. I will definitely be making this again. Question: What do you think about making it as such and then freezing it before cooking? How do you recommend I do that and will it change the cooking time?

I made this last night and it was delicious! I threw the bacon and all the veggies in my large food processor and they all came out great, which really cut down on prep time. Next time, I plan on draining the liquid from the can of tomatoes first. I had just cleaned my oven this past weekend, and when I opened the oven door after an hour, I found a huge mess in the bottom from the loaf bubbling over. I hate cleaning the oven and wasn’t happy to have to do it twice within just a few days. I’ll probably put the loaf pan on a foil covered cookie sheet, too, just to be on the safe side. (Oh, and George, you might want to fix the spelling of Fahrenheit in the recipe.) :)

Planning on making this tonight… maybe a stupid question but do you mince the bacon raw and add it to the meatloaf? or add cooked bacon to the meatloaf? most bacon recipes I’ve made involve pre cooking the bacon so wanted to be sure i didn’t over cook it!
You can do either but I normally add it raw
Success, I made this last night and my wife loved it. My son just picked at it and said it was good except for the onion and peppers. I myself found it pretty awesome, I play on frying up a piece or two tonight for dinner. My wife of course made Mashed potatoes and mac and cheese (She doesnt get the paleo thing yet)

I’ve made this a couple of times and it is of course AWESOME! However, I can’t for the life of me have it stay together. If I wanted a “prettier” meatloaf to serve to guests, would I add more egg or more almond flour? I only do 1 pound of burger as that’s all that will fit in my bread pan.
More egg would help keep it together

I made this last night and it was delicious! I probably should have used a different pan because I used a bread pan and it didn’t hold together well, but I didn’t care; I just ate it from a bowl instead. I didn’t make the Beasty BBQ, but adapted one of Juli’s recipes for a meatloaf sauce. I look forward to the leftovers. I’ve already had some for breakfast this morning!

It may, just make sure the bacon is as cold as possible, like 45 minutes in the freezer

Thank you, thank you, thank you!! It was delicious!!! Made this with your Beasty BBQ sauce. Only had one slice left over. Definitely going to be eating the last piece tomorrow for lunch. The meatloaf was very juicy. Not one piece of it was dry. Highly recommend. The next I make this though I want to try it without the can of tomatoes. The combination of the sauce and tomatoes were a little bit too much. But still it was delicious. Thanks again!!!

This just came out of the oven – I made a few meatballs and put the rest in the loaf pan – My son preferred the meatballs (I think I over cooked them). I loved the meatloaf. I need to get a meat grinder as mincing the bacon took a long time. I will be making this again!!

This had amazing flavor. I made it with half the bacon and half the almond meal because that is what I had in the house. Was still awesome. Cooked a little longer to get it a bit dryer. But…wow it was good!!! Thank you!

I made this for my parents when they visited last week. My dad was excited, because the special ingredient of the night was bacon rather than carrots (made the crock pot stuffed peppers the previous night). Mom was happy, because she could see I’m eating well and not starving without grains, soy, and dairy. I was tempted, though, to run off, hide in the closet, and eat the whole meatloaf; it smelled soooooo goooood! Now I’m making it again to take with me on my vacation (cabin in the mountains). Ok, this is officially my new favorite meatloaf recipe, hands down! From the comments about it being too soft, I added in an extra heaping Tbs of almond flour and I think it’s perfect. Had a different Paleo BBQ sauce on hand that I made last week but def need to try the Beastly BBQ sauce you have. Sounds like it would taste a lot better! Also, I like my meatloaf outside to be crispy so broiled it right before it was done.

We had this last night and my husband could not stop raving about this dish! This is coming from a man who has never liked Meatloaf before! He LOVED it!!! Question for you-I used 1.51lbs of beef but did not change the egg or Almond quantity so it came out pretty soft for Meatloaf. If I increase the amount of beef do I increase the egg and/or Flour content? Thank you so much for your amazingly delicious recipes. You make it so easy to stick to a Paleo lifestyle!
This one in general stays pretty soft because of all the moisture from the tomatoes. You wouldn’t need to change the eggs but could try increasing the almonds if you want to try. Personally I don’t care what it looks like cause I would eat it off the plate with no silverware :). And I am so glad you all enjoyed. Thank you for the support

This was delicious but my meatloaf fell apart. I think the bacon I had was more on the fatty side so there was too much rendered fat. I might try it with less bacon next time.

Made this for dinner last night and it was delicious. My left-over weary husband also decided we are having this again for dinner tonight, so I’d call that a hit! My only substitutions were to leave out the garlic due to an allergy and to add hot red pepper flakes for some kick. Thank you for the awesome recipe!

Ps…I have just made a paleo berry/pie/slice dessert and I used almond flour and desiccated coconut as coconut flour substitute. I also increased the nut content to counter the ‘soupy-ness’ I read about. I think it rocks. :)

You don’t need to here, if you dont like the almond flour leave it out, but almond and coconut flour are two very different things
