I have been waiting 3 years for a perfect Paleo chocolate frosting and this one was an amazing mistake. I feel like the planets aligned because when I added the coffee flavoring to this, the chocolate seized and created this recipe. I knew coffee was the nectar of the gods and this recipe proves it. I used to buy tubs of crappy store bought frosting and now I realize what I was missing. Homemade chocolate frosting for the win :) Now for the serious note, I was going to save this recipe for a membership site I am building but decided it was too good not to share. With that being said, I need you to help spread the love of this recipe by sharing every where you can. Use this handy bar I installed above this paragraph and spread the chocolate frosting love. Now the teasing begins, don’t you just want to lick that spatula?
So I wrote it in the notes, but I want to make sure that you read it as many places as possible to ensure success. I have only made this recipe twice, and that was because I messed up the first recipe I was trying to make twice. I have only tried it with coffee extract so I am unaware if vanilla or peppermint extract will work. Chocolate seizes when liquids of different temperatures are added to the chocolate but this one worked warm as well. I also haven’t tried this recipe with anything but enjoy life chocolate chips so if you do, I can’t guarantee your success.
Coffee Chocolate Frosting - Paleo Frosting
Ingredients
Instructions
- Place coconut oil and coffee extract in a double boiler over low heat
- Once warm, add your enjoy life chocolate chips and stir constantly until the chips have melted and your chocolate is thick
- Remove from the heat, add a pinch of sea salt and stir until smooth
- Keep warm to spread and as it comes to room temperature it will harden like frosting
- Refrigerate the leftovers and when you want to use it again, warm it in the microwave or over warm water

Lor-Ann Oils makes highly concentrated flavoring extracts specifically for chocolate that won’t make it seize up. Otherwise extracts often do that, but oils don’t (ie peppermint oil).

This was perfect! I used ENJOY LIFE chips, and real vanilla I brought home from Mexico. :) Loved getting the right consistency the first time-THANK YOU!
George Bryant
Oh that is awesome and sounds delicious

Hi there! I genuinely want to make this succulence but quick question: will the frosting melt after some time at room temperature? I mean, if I want to make this for some cupcakes for a birthday party, will they start to melt if not kept on the fridge until served? I just don’t want a melted surprise, you know? Thanks, in advance :)
George Bryant
No it stays solid
Abby
how much does this recipe make?
George Bryant
Enough for one sitting of me eating it :) I think around 3 cups
Sarah
Can you use regular coffee instead of coffee extract?
George Bryant
You can try, the flavor will not be as intense
Sasha Cory
I finally got around to making this and it’s amazing! Inused Vanilla and it worked great. You’re a genius!
George Bryant
Thank you Sasha, glad you enjoyed :)

Just so everyone knows- I just tried this with vanilla extract and palm shortening (for my very-picky-i-hate-all-things-coconut eater and it worked like a charm! Thanks George!

I made this for my daughter’s cake. It is great. I forgot the salt though so not sure how much better that would have made it. One of my daughter’s is allergic to sugar but she doesn’t have a reaction to the evaporated cane juice so this is an absolute perfect alternative, and tastes just like the real thing, if not better. I get your emails and follow you on facebook but am a silent fan… until now. I really want to say that I love you! I’m married with 5 children (ages 6 to 2 weeks), so it’s in context. :) Thanks for being so awesome and impacting people’s lives the way you do, without even knowing the magnitude of your impact.
George Bryant
You’re very welcome. Thanks for all of your kind words :)

This is the best “mistake” I have ever come across. Please make some more mistakes :)
George Bryant
I know. I was happy I made this mistake!

Made this last night using orange extract so hubby and I could dip strawberries and it for Valentine’s Day. :-) He loves the taste of chocolate and orange together. It was absolutely fantastic! Thank you, George! :-)
George Bryant
You are very welcome :)

Has anyone tried this with vanilla extract to see if it will work? I looked at whole foods and they did not have coffee extract, but did have the peppermint so I bought that. However, I want to dip strawberries in this tonight and am not sure how strong the peppermint would taste…if it’s strong I don’t think it will taste good with strawberries. Does the extract make a big difference in ‘seizing’ or does the temperature make the difference? Any advise is appreciated! Thanks!

Hi George. So I just made the red (pink) velvet cupcakes but used beets for color cause I didn’t have the powder and topped them with this frosting. Nommmmmmmms. I used almond extract cause I didn’t have coffee and as I was “taste testing” it kinda has a hint of Irish baileys to it… Food for thought in case you were planning for st party’s I think you could create a smashing Irish baileys frosting.
Outstanding, thanks for all the yummies, as usual.
George Bryant
Thank you SO much for the suggestions. That really does sound awesome.
Tina
I was planning on making those soon, did you use beet juice? If so, how much?
Darlene
Where does one find the enjoy life chocolate chips? I can’t find them in any stores.
George Bryant
I know you can get them on Amazon. I’ve also seen them at Target, Sprouts, Whole Foods, etc.
Hayley
I buy mine from Albertsons.

Awww this is bittersweet, it sounds like in the near future I’ll have to pay to get my Civilized Caveman awesomesauce fix, but on the other hand coffee chocolate frosting with the possibility of a peppermint chocolate success?!?!
Velesa
Love this idea! Coffee to perk me up and chocolate to make me sweet! Not to mention the health benefits!

Frosting straight from the bowl is the best. :)
Christina
Yum! Is it ok if I just make it by itself & eat it? Lol!
George Bryant
That is what I do :)

I have not tried the Enjoy Life chips but when coconut oil is added to chocolate wafers, like the kind you make candy with, it makes a chocolate shell when put on ice cream…..oh man I said ice cream! Sorry…….but it does!

You are now a personal hero to my children this Valentine’s Day. Bring on the cake and chocolate coffee frosting!

It didn’t go to spam, and yes they do but it is a healthy alternative that I eat

Am confused: Enjoy Life chips contain evaporated cane juicejuice, which is processed and a high glycemic sugar. I thought that is a huge paleo no-no???
George Bryant
This isn’t a eat every day recipe. Enjoy life chocolate chips don’t upset my stomach and are the best option out there. You can for sure try with dark chocolate
L Olsen
Paleo diet and chocolates. Let’s do this! Haha! :))

Yum! Coffee and chocolate are two of my favorites – and I love how simple this recipe is!
George Bryant
Me too. Such a time saver :)

Peppermint extract will totally make chocolate seize too – trying to make a chocolate peppermint bark I failed to get the almonds in since it was a bit of a mess. Not sure it would have been spreadable as frosting either though (but I hadn’t added coconut oil either).
George Bryant
Awesome, I have peppermint extract so I will try that too :)
