We have gotten a few requests for some quick desserts, and specifically some mug desserts. We know we are going to have some people that don’t want to make this in a microwave, so we added the instructions for how to do it in an oven as well.
Please save your flack for us cooking in a microwave and just skip to the oven instructions!
Apple Mug Muffin
Now, you can classify this as a dessert, or a quick grab and go breakfast as well. It all depends on your views and how you eat. We would eat it for either and love it both ways!
We have a confession to make too, we made this the same day that we made the amazing Paleo waffles. So you could say that we overindulged a bit. It’s not our fault though, we have to continually taste test to ensure we get the recipe perfect for you every time… man it’s hard to lie to ourselves!! But we are all good now because we are back on the clean-eating street again.
But… I can’t eat eggs
You may be surprised how often we post a dessert recipe and someone comments on how they can’t eat eggs. So since we know (all to well) the struggle of having to modify recipes for one’s own lifestyle, we did it for you this time!
Yes, you read that right. We made this into an egg-free option too!

Egg-Free Apple Mug Muffin
Ingredients
- 1 tablespoon coconut oil melted in mug
- 2 tablespoons unsweetened applesauce
- 1 1/2 teaspoons ground chia seeds
- 1 1/2 teaspoons ground flax seeds
- 3 tablespoons water
- 1/4 teaspoon vanilla
- 1 teaspoon maple syrup
- 1/2 teaspoon plain gelatin
- 2 tablespoons coconut flour
- 1 teaspoon arrowroot starch
- 1/2 teaspoon cinnamon
- 1/8 teaspoon baking powder homemade
- Pinch of salt
Instructions
- Combine and mix your coconut oil, applesauce, chia seeds, flax seeds, water, vanilla, maple syrup and gelatin in your mug
- Let sit for 3-5 minutes or longer
- Add in your coconut flour, arrowroot, cinnamon, baking powder and salt, mix well
- Microwave for 2 1/2 minutes and let cool
- Enjoy

George, also, do you think I could use the leftover almond meal from making my own almond milk, instead of the dried purchased type? I wring it really hard until no more milk drips, so it’s very clumped out of the bag but then all the grains fall apart when it hits the bowl. I was just thinking that this might be a great way to use it up that same day.
If I try it, do you think it best to cut back on 1 tsp of the applesauce, or add an extra tsp or so of dry almond meal or coconut meal? Or do you think those adjustments wouldn’t be necessary?

Hi George. Popping in to say thanks for the recipe. I’ve made this a half dozen times and it really hits the spot when I’m feeling something “bready” for breakfast. I haven’t bothered with the streusel topping but, with a lil blob of plain yogurt (full fat, oh yeah!) and a sprinkle of shredded coconut, it’s the bees knees. Just a teeny, teeny bit sweet. Not enough to awaken the sugar dragon :-)

Did you make a bigger batch of this and put it in the oven? This is a microwave recipe. I don’t calculate nutritional as it is too time consuming and there are no macronutrients in The Paleo Kitchen either. This recipe is not in The Paleo Kitchen, but there are tons of other desserts in there.

Just came across this recipe this morning and made it for all three of my kids who can never ALL like the same thing at once. They loved it! It is sure to be a regular breakfast in our house. I used the almond flour but, wonder if I use coconut, how it will differ. I am new to Paleo so not too experience baking without wheat flour. I just made this (except with finely chopped apples instead of applesauce and only half the maple syrup) and it was delicious! I am low-carb due to high triglycerides (I’m a type one diabetic), so I’m trying to find recipes that don’t have traditional flours/etc, but also don’t have a ton of sweetener. I think it could have used the whole amount of syrup, but it was very satisfying! Thank you!! I’m not paleo, but your recipes are often exactly what I’m looking for.

Not to put anyone off, but breaking down macros is a time consuming process. Additionally, I don’t personally count my macros and don’t really encourage it either. There are plenty of sites that can help you break down the macros if you would like to have that information. I understand your desire to know this information, however it’s not something I plan to include. Sorry.

Just made this. I decided to use the oven as I had the time to do. I’ve used the microwave before on a different recipe, and the verdict it seems, is that the oven makes it more into a baked good.
I doubled the recipe, used coconut flour, added 1 part coconut oil and one part butter, and one part honey one part brown sugar (oops-cheat!). I think my favorite tweak in the recipe is that instead of strudel topping, I baked diced apples into it. Yum!

I love this apple recipe. I pulled out my pumpkin gingerbread recipe and tweaked the apple one. I subbed out the apple sauce with 2 tbsp of pumpkin and then instead of just cinnamon : I used ginger, nutmeg, allspice, clove: With more ginger than the other spices. I also put some walnuts on top with the pinch of butter. And of course choc chips…I could not resist. Had this with a mug of hot tea….YUM!

I made a batch and baked it in my minicupcake-maker. Worked great! I was very happy with how they turned out. Instead of streusel I topped them with some cinnamon and shredded coconut. Everyone loved these little one-bite muffins.

Lower power microwave here, so cooking time took about 3 minutes. It popped in/out of the mug without any problem, which helped us test for how it cooked the first time. Loved it–even the kids did. We put small apple chunks in the mix, too.

Got super excited after reading the reviews.
I followed this recipe exactly and all I got was a big mushy pile of who knows what. Not one to judge a food by how it looks, I tasted it. Big mistake…I thought I made an apple mug cake, not an egg cake. Even went so far as to cover it in almond butter. Nope. Didn’t work.
Disgusted, I tossed it all out.
Won’t be trying this again, that’s for sure.

George! You. Are. Awesome! I’ve made this several times now with different variations (and have come to the point now where I don’t need to reference the recipe at all!!). I love how versatile this recipe is! My last one was with butter, mashed banana, honey, 1 Tbsp coconut flour and 1 Tbsp cocoa powder. I threw a few mini enjoy life choc chips on top after it was done for good measure – yum yum!! Though I typically cook mine for 90 seconds… not sure if it’s my microwave, but 70 seconds tends to leave the top and inside a little undercooked. Thanks again for an awesome recipe; my husband actually requested I make this for him the other day (he’s picky about his Paleo baked goods) and then stole some of my choc muffin this morning :)

Just made these – didn’t have any applesauce, but I did have a couple Granny Smith’s! Peeled them and put them in the food processor. They didn’t turn to applesauce, but they chopped up real fine. Mix 1Tbsp ground flaxseed with 3Tbsp water (per egg) and let sit a minute until viscous, then mix in like the egg(s). Better than egg replacer and still Paleo!

I wouldn’t call flaxseed Paleo. They have found remains of the fiber used dating back to 30,000 years ago, but it wouldn’t have been used as a food crop til much later, since seed crops don’t give enough of a return per plant to small nomadic tribal groups. The first signs of it grown as a crop appear to have been found in the Fertile Crescent, or Iraq ten thousand years ago. In other words, as a food it’s neolithic.
I’d more call it gluten-free and an acceptable cheat. It’s not good to over-rely on it as a source of omega-3s because many of us don’t have the genetic framework to do the necessary conversions to make the omega-3s in flax usable. And if you buy it pre-ground you’ll be eating it rancid and that’s really bad for you too. (For the same reason, I never use the oil in food, even if it is sold from a fridge. I have no idea what it went through before it got to the store.)
If someone is inclined to use Egg Beaters then they are not allergic to eggs. In my opinion, in such a case the correct answer is “Don’t use Egg Beaters, use real eggs. We have been eating eggs for a long time now and even today’s dietary health gurus can’t make up their minds whether eggs kill us or not. So unless you’re allergic, the obvious answer to the ‘do eggs kill you’ question is ‘No’.”
Meanwhile, if someone *is* allergic to eggs I’d use chia seeds over flax. As far as what our bodies are properly adapted to eating, we used herbs for longer than we used flax, and we’re more adapted to broadleaf plants than to grasslike plants. I really don’t get the buzz over chia, it’s basically Mexican sage seed packaged up pretty with health claims all over it, but if you need a binder in your recipe then you need a binder. *shrug*

It depends on the person, Paleo isn’t a strict set of rules, it is a framework for you. I can tolerate grass fed butter so I use it. You can make this with coconut oil instead if you like

Nomadic herders who kept cows and sheep had a lifestyle closer to the Paleolithic hunter-gatherers than to the Neolithic farmers. I’ve heard that the development of animal husbandry depended on sedentary farming but at least nowadays some of them seem to live without farming pretty well (i.e., traditional Mongolians–when they do buy farm food it’s apparently for variety, not because they’d die without it). And apparently some study or another showed that dairy protected us from the worst effects of transitioning to a grain-based diet. So unless you react to dairy I think it’s an acceptable food, especially the fat.
FYI, I find that medium-chain fats act differently in cooking and baking than longer-chain fats, which means coconut oil behaves more weirdly than butter or ghee does. Protein tends to stick when sauteeing on the stove, and any muffins I make with coconut oil stick harder to their muffin cups. So I prefer tallow for sauteeing, and ghee for baking, and I’m taking a long hard look at lard to replace ghee for some baking applications since traditional cooks already use it in pie crusts. (I’m not 100 percent sure how I do with ghee. I find any dairy with a significant amount of casein in it seems to be associated with me retaining water.)

I had some leftover chicken stew (lotsa veggies & bone broth) and I thought the kids might like a little something on the side. These muffins were the perfect side-kick!
I just made them in microwavable bowls and the kids ate them right out of the bowls w/a spoon.

How do people make these who don’t have and don’t use microwave ovens? I’ve seen mug cake recipes on other sites and have been curious. I have not owned or used a microwave oven in more than 25 years and I do not plan to buy one ever again.
I assume that you are not aware of how microwaving alters the chemical structure of foods, particularly proteins, in unfavorable ways. They also destroy more vitamins and antioxidants than other cooking methods.

They make them with an oven like I put in the instructions. It is an individuals choice to use whatever they want as it is yours.

This was so easy to make, and so delicious! I didn’t have any apples, so I used some fresh blueberries instead as a topper, with some sliced almonds. So good!!!

This was amazing! I was convinced it would stick to the mug but it came out clean. I used pumpkin purée and pumpkin pie spice instead of the apple and it was fantastic. I’m sure the oven cooked version would have more depth of flavor but what more can you ask for in under 2 minutes?! Btw, had to cook mine on high for almost 2 full minutes, it was still raw after 70 seconds. But obviously microwaves vary. :) I’m going to try banana next and then venture into other purées and baking vessels. Thanks for this George!

Converting my almost 4 year old to Paleo has not been easy. He eats French toast (real bread!) almost every morning. I have tried paleo versions of pancakes/waffles and French toast with very little success. But this morning I made this muffin! However, I spliced it after to make 3 little discs instead of one big muffin and drizzled a little extra maple syrup and he thinks they are breakfast cookies and is chowing down!! I think we have a hit! They are very tasty and quick. I have been looking for quick, especially for him since we have to get up and get to preschool very early. Thank you!

I just made this with a few mods. I can’t have apples, so I chopped up a peach. And instead of a struesel, I just used more chopped peach, some fresh basil, and a little maple syrup. It was very tasty and will definitely go into the food rotation. Thank you!! My husband says that this is exactly the kind of food you’d come up with downrange, which makes the fact that this is delicious even more awesome.

When making this you say we need 1/8 tsp homemade baking powder but the notes shows to make it we are using 1/8 baking soda plus 1/4 cream of tartar which when mixed equals 3/8 tsp so once mixed do we just throw out the extra 1/4 tsp or am I mis understanding something.
Thanks and by the way I make your banana bread as the banana bread and as the muffins on a twice/month (at least) rotation. It’s the best ever and it keeps my hubby very happy. I add in chocolate chips to some of them too. 5 stars for the banana bread and muffins….Thanks George :)

You only use 1/8 tsp but when making your own, I wasn’t going to calculate out 1/32 or 1/16th measurements because no one has those measuring spoons. So you can bake something else :)

Thank you for posting. I have several of these quick muffin recipes. I work third shift and find myself many times grabbing at the last minute for something for 4 am at work. These microwave muffins save me from grabbing the things I shouldn’t.

Made this for breakfast right away! It was a little too moist, but I think I just needed a few extra seconds in the microwave (my mug was small and I was impatient!). Next time, I might grease the mug with coconut oil and pop it out onto a plate like in your lovely photo above.
Verdict: Super tasty and will definitely make again!!! (I’m now wondering if I could sub the apple sauce & cinnamon for pumpkin puree & pumpkin pie spice in the fall… hmm!)

Made some this morning (microwave version). The kids said “ehhh, it’s good” in a non-excited voice. The wife said “needs salt.” I agreed with all their comments. A pinch of salt would add more fullness to the flavor. What I loved: FAST and EASY. In fact VERY fast, and VERY easy. Will I make them again? Yes. With salt. :-) As part of a breakfast I think I’ll try putting an over-easy egg on one of these (mmmmmm). As a desert I think I’d serve them with a bit o’ whipped cream.

This sounds wonderful! We are new to the paleo diet but have been somewhat GF for a few years and my husbands favorite dessert is apple pie so this is right up our alley. Just curious why you use homemade baking powder rather than a store bought version??

Thank you so much for another wonderful recipe! It got me out of bed this morning. I ended up making six of these! I made three just as you did then I experimented with an egg free version.
I have to say your original version was the best but I did finally get an egg free version that was just about as good. The egg substitute that worked the best was 3TBS warm water mixed with 1Tbs flax meal, let it rest until it starts to gel. I did have to microwave almost twice as long. We generally avoid flax but sometimes it is the best substitute for my egg allergic daughter.
I also tried warm coconut milk mixed with baking powder but it did not bake at all, just cooked all over the microwave!
So just curious, why did you name it the St. Louis muffin?

thanks so much! Although we don’t make a habit of using the microwave for cooking, there are times that you need something quick and there is NOTHING quick to be had! yesterday we had an appointment that went WAY over the time allotted, so got home and were supposed to be celebrating a birthday , but the cake hadn’t gotten baked (too late home), and there just isn’t anything available in the store to be bought in an emergency, either! This would be sweet to have in those kinds of situations! :) Thanks, certainly a keeper!

Laura, it is not a 1 for 1 substitution, if you are going to, I would start with maybe 1 tablespoon of coconut flour
