Wow, so what a week it has been already. As most of you know, I am normally not one to complain, but there might be some eeeekkksss or ooooohhhhss while I type this post. As amazing of a week as it has been, with the launch of my Ebook with The Fat Burning Man (which you can check out by clicking above), it didn’t end so lovely. I was unfortunately involved in a car accident courtesy of the awesome people in front of me that were texting and driving and not paying attention. They slammed on their brakes going from 50 to 0 and I was left with the decision to either hit them or go curb hopping. I chose the curb which had the lovely result of smashing my head into my drivers side window while I used the side of the other car to slow me down. To make a long story short, I am ok besides being angry for being at fault for someone else’s negligence with their cell phone. I had x-rays and all that jazz done, and I just have a horrible case of whiplash. Actually, I would probably get hit by the doctor for sitting here typing this, but I am stir crazy not being able to do much. Luckily, I had this recipe waiting to share with you and all I had to do was type and share. Without further adieu, I bring you these yummy Macadamia Thumbprint Cookies from the new Paleo cookbook.
When I got my review copy of Paleo Indulgences in the mail, I did what any excited 29 year old male, who has the excitement of a 2 year old would do, I ripped open the package in the driveway and stood there flipping through the pages. Never mind the fact that my car was still running, but hey, at least I remembered to put the e-brake on so it didn’t roll away. Needless to say, I was thoroughly impressed with what I was seeing and I was super excited to dig in. I flipped through all the pages in search of something quick to whip up for a friends birthday in a few hours that required little effort. That is when these beauties graced my vision, and it was a winning selection. I mean it was easy for me since I am a complete closet macadamia nut addict. It would be wrong to cheat myself of my addiction. To ensure I didn’t devour the whole batch, I convinced myself I was making them as a birthday present to my awesome friend Meg, and that kept me in check. In the end, 11 cookies got delivered, which is good considering there were only 12. I feel like someone should give me a medal for showing so much self control.
So I know you are reading this on the internet and you don’t know how much time has elapsed since I typed that paragraph above, so I will just tell you: about 14 hours. Why you ask, well because I had to take a muscle relaxer to sleep after the car accident and I am pretty sure it zombiefied me. Yes I am aware that ZOMBIEFIED is not technically a word, but it is now because its my blog haha. So yea, I can’t wait to not be in pain anymore because this cloudy feeling taking over my head is not fun. I think I have thought of a genius way to fix it though, I am going to make more amazing desserts and absorb the meds. Scientifically I know that is not possible, but my fat kid genes convinced me it was, so I will do it. With that being said, one more paragraph and I am off to cook and get Paleo Fat.
So this whole post was supposed to be dedicated to a book review of Paleo Indulgences, which it partially is but my brain is just not working correctly. And you all thought my ADD was bad before, this one brought it to a whole new level. But seriously, this book is awesome. There are so many indulgences that I can’t wait to dive in to and use for anything from birthday parties, fight nights, holiday dinner tables, etc. And just so you know, this book is not just limited to “Desserts” It also has a section for restaurant remakes with pancakes as well as amazing recipes like BACON DIP. Yes BACON dip, you read that correctly. I will forewarn you though, if you are like me and can not tolerate any dairy, there will be a few recipes you can not make as described but you can always substitute. But if you can, then you’re in business and can go bat-crap-crazy. With that being said, I won’t keep you any longer. Buy the book by clicking on the image below and then ENJOY.
Raw Macadamia Thumbprint Cookies
Ingredients
Thumbprints
- 1 cup 150g roasted, salted, macadamia nuts
- 1 cup 90g unsweetened, fine shredded coconut
- 1 teaspoon pure vanilla extract
- 1/4 cup coconut oil melted
- 1 tablespoon pure maple syrup
- 1/2 teaspoon orange zest optional
Instructions
Thumbprints
- Place the macadamia nuts in a food processor and pulse into a coarse meal but not so much to make butter
- Add the coconut, vanilla, coconut oil, maple syrup, and orange zest (optional) and pulse until well combined, about 30 seconds
- Scoop rounded tablespoons of dough onto a waxed-paper lined baking sheet
- Press your thumb into each ball to create a well. If the dough is too soft, refrigerate for 15 minutes or until the cookies firm up
- Set aside, then top with ganache, and refrigerate for at least an hour
Chocolate Ganache
- Combine the coconut oil, maple syrup, cocoa powder, palm shortening and arrowroot starch in a small mixing bowl
- Whip with a hand mixer until smooth and fluffy
- Store in the refrigerator if not using right away; soften at room temperature before using

Any substitute for the coconut. Ok with small amounts like the oil…just not regular coconut.

Wow, I’m so sorry to hear about your accident. That totally blows, especially because you’re at fault for another persons recklessness. Hoping the whiplash gets sorted out quickly and that karma works a number on this one ;)
