Shortbread Cookies: The Greatest Joy In The Simplest Cookie
These shortbread cookies are classically delicious on their own, but also incredibly versatile, leaving room to add a little dimension.
Sometimes the greatest joys are found in the simplest things. For me, it’s a hot cup of coffee in the morning, with a splash of almond milk and some cinnamon, before everyone else wakes up. There’s just something about the quiet and stillness of it all. To bring that feeling into a cookie just seems like a no brainer!
Feel free to add 1/4 tsp of your favorite extract (almond would be divine), or sprinkle in some zest from a lemon or orange. My favorite way to eat them is to add a little homemade jam on top, or by dipping them into a cup of tea or coffee.
A quick tip – You want your butter very cold! Use butter straight from the refrigerator to cream with your sugar. Also, don’t skip chilling the dough. If you do, the cookie could fall flat in the oven.

Shortbread Cookies
Ingredients
- 6 tbsp coconut or maple sugar
- 1 cup grass fed butter
- 1 1/2 cups almond flour
Instructions
- Heat your oven to 325°
- Cover a large cookie sheet with parchment paper
- With a stand, or hand, mixer - mix cold butter and sugar until creamy
- Slowly add in the almond flour until just combined. Careful not to mix. Dough will be sticky.
- Chill dough for 30 minutes
- Roll the dough until 1/2 inch thick
- Cut as desired and place onto prepared baking sheet
- Bake for 25 minutes. Cookies should be lightly browned
- These cookies are best stored in the refrigerator
