Shortbread Cookies

3 Ingredients, simple, buttery perfection

Ingredients
  

  • 6 tbsp coconut or maple sugar
  • 1 cup grass fed butter
  • 1 1/2 cups almond flour

Method
 

  1. Heat your oven to 325°
  2. Cover a large cookie sheet with parchment paper
  3. With a stand, or hand, mixer - mix cold butter and sugar until creamy
  4. Slowly add in the almond flour until just combined. Careful not to mix. Dough will be sticky.
  5. Chill dough for 30 minutes
  6. Roll the dough until 1/2 inch thick
  7. Cut as desired and place onto prepared baking sheet
  8. Bake for 25 minutes. Cookies should be lightly browned
  9. These cookies are best stored in the refrigerator

Notes

These cookies are incredibly versatile. Feel free to add 1/4 tsp of your favorite extract, or some lemon or orange zest, to spice them up a bit!
