Who’s ready for another recipe round-up?  I was so thrilled and grateful to hear that you all loved the first bacon edition we launched on April 1st.  Despite the day, it was no joke and your response has really pumped me up to deliver an even better list for your next holiday dinner… Easter!  For those of you who don’t celebrate this particular holiday, why not gather your friends and family for a springtime celebration and make these amazing concoctions just for the fun of it?  Forget those stale, processed Peeps and sugar-coma-inducing Jelly Belly’s – here’s what I hope to enjoy seconds of this year.  We also created an AMAZING Easter Shopping list to go with all of these recipes that you can download here.

Honey Baked Ham with Spiced Apples and Peaches

This is probably the most perfect Easter dish I could deliver to you guys.  I mean, what says springtime, family, comfort, holidays, and utter joy better than a honey baked ham with spiced apples and peaches?  This entrée is personally guaranteed to wow your loved ones – Paleo followers or not.  If you add this crowd-pleaser to your Easter menu, (which you should) be sure to send me your address… so I know where to show up for dinner!

Grain-Free Stuffed “Shells”

Yeah, yeah, I realize this one is NOT strict Paleo, but isn’t life all about finding balance and aren’t holidays all about a little indulgence?  Besides, Kristen, the Food Renegade, is a real-food advocate first and foremost and only shares the best of the best with her readers.  This guest post from Nourshing Days is no exception and will not only warm your soul, but is sure to nourish your body and have your guests begging for seconds.

Now that we’ve covered the comfort food course, we can slip in something super Paleo-friendly from my buddy Diane.  Easter offal, anyone?  I’m sure some of you haven’t ventured into the exciting world of cooking with organ meats yet, but now is as good a time as any!  Liver is a super-food, loaded with nutrients, so I encourage you to serve it up to anyone and everyone who is willing to give it a try.  And even if your friends and family aren’t fans, it’s sure to leave you with a great holiday story, if nothing else.

For the artistic folks out there, these bacon and balsamic deviled-eggs from Kelly at Primally Inspired are sure to get a few “ooh’s” and “aah’s” out of your Easter guests.  I might just stick to what I’m good at – the bacon ingredient, of course.  But, this side-dish would be a very welcome edition in my house if someone wants to get their craft on and send a dozen my way.  (hint hint)

The next recipe might be one of the most delicious ways to eat kale – ever.  This Marin Mama dish will convert the biggest leafy green haters into raving worshipers.  A quick and simple side salad to throw together, it packs a punch of flavor and a touch of heat that will have your guests pleading for the recipe.  Tell them Civilized Caveman hooked you up with this one!

These have to be the most delicious looking carrots I have ever seen in my life.  I’m sure the Easter bunny will be hopping to your house the second he spots these on the menu, but you should definitely save them for yourself.. and maybe your guests as well.  This dish adds the perfect pop of color to your table.  Of course, you can use plain old orange carrots as well, but ombré is the latest trend – or so I’ve been told.  Why not give your Easter dinner a little makeover this year?

Healthier Peanut Butter Eggs

Before you alert the Paleo police to a second offense, Megan of Detoxinista has provided us with an easy alternative to the peanut butter called for in this popular Easter candy redo (see her final note!).  It’s always acceptable to sub in your favorite nut or seed butter on this type of occasion.  These peanut butter eggs have the same dreamy, creamy chocolaty goodness of the not-so-real deal without the side order of shame.

Even though I’ve never understood the appeal of Peeps personally, it really doesn’t feel like Easter without these mushy marshmallow chicks hanging around.  This homemade honey-sweetened version is something I can actually get on board with and I bet your kids would love to help you make them, too!  Just make sure to hit your local specialty store or Amazon ahead of time, because a few ingredients like grass-fed gelatin and quercetin won’t be prominently displayed with the typical holiday foods at your average grocery giant.  Consider it a grown-up Easter egg hunt for healthy pantry staples.  I promise the extra effort will be worth it.

    Great round-up! Those roasted rainbow carrots are beautiful! Where can you find them? It’s still a little early for farmer’s markets (at least here on the East coast).

    I really enjoy your weekly meal plans and your Easter recipes. It is seriously a HUGE help and a blessing. I was going to order some healthier candy for my daughter’s Easter Basket, but now I can just make her the Chocolate/Almond Butter Eggs. Your recipes have really helped my family out. My husband and I are completely Paleo and my 5 yr old is well on her way.. I am so thankful that she loves any meat and is VERY willing to try new things. These themed recipe collections are awesome… would love one for a kids birthday party, perhaps? :)
