Holiday Lara Bar
Ingredients
- 1 1/2 cups packed dates 240g
- 6 tablespoons raw almonds 80g
- 1/2 teaspoon organic vanilla extract
- 1/2 teaspoon ginger
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- pinch of cloves
- pinch of sea salt
- 1 tablespoon coconut oil
Instructions
- Place your dates and almonds in a food processor or really strong blender.
- Pulse until your dates and almonds are in small chunks and transfer to a mixing bowl
- Add in all remaining ingredients and using your hands, mix well to ensure an even coating of everything
- Once mixed, using parchment paper, flatten out your mixture to the size of bars your want or you can use individual ziploc bags and form them inside the bag
- Place in refrigerator and let cool, then enjoy
- I keep mine refrigerated or frozen until I want to eat them, good luck having them last more than a day :)

I’ve seen some recipies wherein suggests soaking the nuts then dehydrating them in the oven…is that an unnecessary step?

The coconut oil made ours a little bit greasy. I rolled them in unsweetened cocoa powder and they tasted like chocolate truffles. We tried another batch without the coconut oil and added cayenne powder instead of the cinnamon/nutmeg/clove and that was also a huge hit.

That sounds amazing, so glad you got them to work and people loved them :) I never realize the coconut oil being too much as I keep mine refrigerated and also depending on the size of the dates etc the moisture changes.

If they aren’t sticky enough add a few more dates or just refrigerate them longer

I just used the small container and blade and did they all together. They were medjool dates

Which paddle/blade did you use with the Ninja? What type of dates did you use? I had a hard time chopping the almonds up and the dates were sticky, but they still turned out amazing and I even put too much nutmeg in. Thanks, awesome recipe!!
