Coconut Chocolate Chip Cookies
Ingredients
- 1/2 cup coconut oil
- 1/2 cup raw honey or natural sweetener of your choice
- 4 omega 3 eggs
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon sea salt
- 1 cup coconut flour
- 1/2 cup of shredded unsweetened coconut
- 3/4 cup of Enjoy Life chocolate chips
Instructions
- Preheat oven to 375 (That's degrees Fahrenheit with the oven set to bake for you non kitchen people haha)
- In a large bowl, combine coconut oil, raw honey, eggs, vanilla extract, and sea salt. (To make your life easier, in a small bowl on the side, combine the raw honey and coconut oil and melt in the microwave before mixing it in)
- Add in your coconut flour.
- Stir in the shredded coconut and chocolate chips.
- On parchment lined baking sheets, drop heaping tablespoons of cookie batter.(Ensure you form them to look like the cookies you want for a final product as these do not rise or spread like conventional cookies, which also means you can place more on a baking sheet without worrying about them touching)
- Bake for 12 minutes or until golden brown.
- Remove from the oven, transfer to a cooling rack and then enjoy with a nice cup of coconut milk.

What is the nutritional content of the cookies?
Nice page, Preserve the wonderful job. Thanks for your time!.
thank you
What about maple syrup for the honey as a sub?
You could totally do that.
thanks for sharing ..these are in the oven now. fingers crossed!!
Of course Laura, enjoy
Are the ingredients right? I ended up adding another cup of coconut flour as the batter was too liquid.
Yes
They don’t look like the picture at all either.
These taste really good but even though the dough looked just like regular cookie dough they don’t hold together at all. I am getting discouraged trying to find good Paleo baking recipes. I have tried many different things and none has benn something I would make again. And its usually because it falls apart.
I finished baking these cookies right now and they turned out great! Thank you for the amazing recipe!
However, I melted the honey and the coconut oil in a bowl filled with hot water. I don’t think it’s healthy to use the microwave :-)
I agree with that method, glad it worked out for you
love these cookies. My kiddos really wanted those prepackaged cookies and I am transitioning them to the paleo lifestyle. So I said lets make some together at home that are a lot healthier for us. Anywho we all loved them, I really wanted more but one is filling and satisfies the sweetooth well! so I had another couple hours later…Thanks for the great recipe
Oh that makes me so happy. So glad you loved them :)
These are the BEST cookies I’ve found that use coconut flour. Most suck the moisture right out of you. They stirred up quickly, which is a plus. I used sucanat instead of a liquid sweetener like honey or maple syrup. They were ALMOST too sweet. Perfect for an after dinner sweet treat.
Made a batch of these on Sunday and they were a hit. They all disappeared!
How well do these hold up in the freezer? (I have to limit my consumption of eggs each week)
You can definitely freeze these.
I might hate you for bringing these into my life. I have my second batch this week in the oven (I live alone, hence the problem) and I love them. I love them so much that on discovering I was out of shredded coconut I decided to make them anyway but use almonds. I have a problem. Thank you these are delicious.
You might hate me, but you also might like me for bringing them into your life… a lot?
Hello! Thanks for the recipe- the first 9 are in the oven now. Something went oddly though because my batter was very thin, not cookie batter like but more like pancake batter. So- I added (twice) a half cup of ground rolled oats (so twice half a cup to equal a full cup). The batter was then more stable but was still a loose chunky. I live in Holland- who knows- maybe being at sea level matters..?
Wow I have never heard of that. Hope they turned out :)
The flour being coconut flour is probably important. I don’t know if you did or how much you used. Coconut flour is very absorbent and usually soaks the liquid up like instant mashed potatoes. :) I also misread this and used three eggs instead of four. There needs to be a dash in there or something to clarify.
I’d like to make these for a cookie exchange – could you say about how many cookies this makes? I need to know if I should double / quadruple the recipe to make enough for a crowd!
It makes roughly 12-16 cookies :)
With some recent findings coming out about the health benefits brought by coconut this cookies are very timely. Thankyou for the tip on the raw organic honey. Didn’t know that it can be a natural preservative. Can’t wait to try this out with my kids, I’m sure they will love it.
Delicious. Except mine fell apart. What did I do wrong?
I have no idea
I love these cookies! They’re so easy to make and they are delicious. My friend and I make them all the time. (Don’t eat too many or your stomach will hurt!)
Why is it these hurt your stomach? I love them but I get a horrible stomach ache and some GI issues.
These are great!
Awesome so glad you enjoy
Hi
We have tried to make these twice and both times the batter looks to have split. We tried baking the second batch to see and the top half looked great but underneath it was more the texture of an omlette. Any ideas?
We have made loads of your recipes and they have all turned out fantastic. Hope you can help as these look fantastic.
Many thanks
Can’t say for sure but anytime I’ve tried to use homemade cocnut flour in recipes it splits when baking, like you described. I invested in some finer ground and it works great.
That sounds AWESOME!
Hi
Help! I have tried twice to make these and both times the batter looks like it splits, we tried cooking the second batch and the top looked ok but the bottom had more of an omelette texture. What am I doing wrong? Desperate to try these as we have tried a number of your recipes and all have turned out fantastic but we are scratching our heads on this one.
Look forward to hearing from you.
Thanks
Neil
Neil I have never heard of that, this recipe is made all the time with the utmost success. Unless I watched you I am clueless, unless you aren’t using raw organic honey and it is too liquidy. The other possibility that is if you heat any of your ingredients that they are cooking the eggs before you bake them
Delicious! Next time I’m going to leave the chocolate chips out, then dip them in melted chocolate – I think they’ll taste even better than my chocolate macaroons! Thanks for another great recipe :)
OMG that sounds amazing
These were awesome! These cookies turned out soft and yummy (and not “yummy for paleo cookies”), but really yummy!!!
Woohoo, so glad you loved them JB
Just came out of my oven and YUM! This recipe is a keeper for sure!! Thanks for a great treat and doesn’t taste like “health food” cookies.
So glad you love them Becky :)
These are very yummy!! Combination of my two faves, chocolate & coconut!!! They are a teeny bit sweet though! Even our 7 yr old son loves em!!
Thanks Corina. You could reduce the honey a little next time
HOLY WOW!
Yeah, these are going in my “weekend cooking” plan right beside caveman crunch. At this rate my entire eating plan is going to be made up of things from your site! :)
Now… how do I not eat the whole plate of cookies in one sitting? ;-)
That makes me happy, please make everything off my site :) And that is a good question, freeze them lol

was certainly compelling and beneficial! In modern society that
is difficult to do. Regards, Martin
Would maple syrup work in place of the honey? Or would it be too runny?
That should work perfectly
These are very good. Soft but don’t fall apart when you pick them up. Tasty and a welcome treat for a cheat.
These are so delish! I have a craving for them and was going to make them but just realized I am out of eggs and considering there is the biggest snow storm ever going on right now….they will have to wait until tomorrow :( The Caveman Feast cook book is mandatory to any paleo kitchen!
Sorry you don’t have eggs and thank you for the kind words about my cookbook
Scrumptious! So quick to make, sustaining so I wont need another one…for a wee while :0) I used the sabayon method to mix the eggs & oil…is that what you do C.Caveman?
Also I used 85% dark organic fair trade chocolate…divine! Thanks for your awesome recipe, will be trying others of yours :D
Well Sheryl if I had the slightest inclination as to what the sabayon method is, I would concur. So in other words, I mix my stuff whatever way seems faster :) Hope you love more of my recipes :)
These are absolutely freaking amazing! And, so easy! Why feel the need to really cheat when you can have cookies like these? YUM!!!
That is a true story, so glad you love them :)
What are the calories, fat, etc counts ?
Aileen, I do not count calories or calculate them for any of my recipes. You can use stuff like fitday.com or myfitnesspal.com to calculate them if you would like though
what does it mean 4 omega 3 eggs? It it 4 or 3 eggs?
4 eggs, I labeled them as being omega 3 rich eggs
These are AMAZING! My wife made them last night and I can’t get enough. They are dangerous in that regard. Thanks for sharing!
Your welcome Todd. So glad you enjoyed
I made these yesterday and they were crazy awesome. So good that I couldn’t stop eating the batter.
Woohoo :)
Did I read this right? 4 eggs? My batter was way too runny. What did I do wrong?
Could you use almond flour instead of coconut flour?
No Lorie, they do not work 1:1
Did I read this right? 4 eggs? My batter looks way too thin and am now wondering how to fit it.
Yes Lori, it will thicken when you add the coconut flour, I am assuming you haven’t added that yet
Seems like maybe I did something wrong! The dough was very dry and wouldn’t hold together well. I added a couple tablespoons of water and it helped some but I still ended up just making a pan cookie. When baked they are fairly dry and somewhat crumbly. If that’s how they should come out, then I am good, otherwise… any ideas? Thanks for all your great recipes!
No it is not supposed to be like that. I have never added water but they always come out perfect as long as I use raw organic honey. Mine are never dry, crumbly or bland. The raw honey keeps them moist
Mine were dry too, but then I realized my shredded coconut said “reduced fat” on the bag. I didn’t notice that when I bought it. Also I used agave cuz that’s what I had on hand. I’ll stick with raw honey next time.
Ah yes Andrea I have never heard of reduced fat coconut but those words should never be together. And the raw honey is what provides a lot of the moisture in these
I’m very new to paleo and just found your blog, which is awesome btw!! I don’t live near a whole foods or trader joes or any kind of organic selling grocery store. Where can I find almond flour, coconut oil and coconut milk? And how do I know what brand to buy? Thanks!
Awesome, welcome Amy. The best place for almond flour is amazon. Coconut products all from Tropical Traditions which you can see linked on my right side bar.
Do you have a good suggestion as a substitution for the choc chips? We’re trying to stay away from cane juice :)
Yep any dark chocolate you want
Quick question, on the 1/2 cup coconut oil, is this measured while solid or melted? Can’t wait to try these!
It is measured melted Leanne, sorry about that
These are AMAZING!! And my boys loved them too. next time I will try the banana trick and cut back on the chips.
So glad you guys loved them. Let me know how the second batch works out
These cookies are great! What is Kimberly talking about with “the banana trick”? I like banana’s!
So glad you enjoyed
I had these recently at someone’s house and I ate four of them. So wonderful!
Thank you
I just made these and they are FANTASTIC! i used 1/3 cup agave syrup instead of honey b/c that’s what i had on hand
I am so glad you enjoyed :)
I did that too! And I subbed bananas and unsweetened cocoa powder in instead of chocolate chips. TO DIE FORRR!
Awesome Rachel. Glad you like them
Was wondering how much cocoa powder you used?
There is no cocoa powder in this recipe
It sure would be nice to have a “print” option for the recipes. I cook a lot where I don’t have computer access so need printed versions. I’m excited to try this one!
There is a print option on the bottom with all the social media outlets, its called print friendly
I have been doing Paleo for 2 weeks now, and was seriously craving some sweets.
This did a great job of getting me thru my cravings!! I cooked just a little to long, but they turned out great. Thanks for sharing!!
You are most welcome, I am so glad you enjoyed :)
These are on the "to bake this weekend" list!
Yes you can mix it in whenever, I am fixing it now
There's no note on when to add the coconut flour…I'm assuming with the liquid ingredients? Then the coconut and chocolate chips?
