Apple Cinnamon Cookies

Whoever said it needs to be fall to enjoy an apple?!

These apple cinnamon cookies are made with coconuts and almonds! They are super simple and were inspired by my Carrot Cake Cookies, which received tons of positive reviews!

Seeing the love for the carrot cake cookies made me want to make a healthy and fruity cookie too! So I went to the kitchen and wasn’t leaving until I had success!

One idea, two apples.

Armed with apples and cinnamon, I had the success I was looking for! Creating a cookie that could be made as a dessert, a snack, or even pan fried in coconut oil and served for breakfast!

These cookies will have anybody asking for seconds!

Apple Cinnamon Cookies

Ingredients
  

  • 2 cups chopped red apples skin on
  • 2 cups raw almonds
  • 1 cup shredded coconut unsweetened
  • 1 tablespoon cinnamon
  • 2 teaspoons vanilla
  • 2 teaspoons coconut oil melted
  • 3 eggs

Instructions
 

  • Preheat your oven to 350 Degrees F
  • Combine all of your ingredients EXCEPT your eggs in a food processor, pulse it until all the pieces are small but still a little chunky. If your food processor is not large enough to accommodate everything just split it up. I did the almonds first, then the apples.
  • Combine that mixture with the eggs in a large mixing bowl and mix well
  • Using your hands, form the mixture into "patties" and place on a parchment paper lined cookie sheet. The size of the "patties" are up to you, or you could make the into bars. I made mine about 2 inches across and got about 15 cookies
  • Bake until done, around 30 minutes
  • Enjoy

    Awesome! My kids are already almost paleo…just have some,coconut sugar, maple or honey sometimes…but we have Ste a challenge…no sweetness for a month! These fit the bill! I reduced the almonds by 1c and swapped in 1/4c coconut flour as I love that stuff! Also put in a pinch of salt. Worked out so well!

    These were really good. I didn’t have almonds so I used almond flour. And even though I may have processed the apples a little too much, these still turned out fabulous!! Perfect amount of sweetness. These are my new favorite treat! Thank you!

    Could I do raisins instead of almonds, just to change it up a bit. I newbie to Paleo so I am not sure if raisins are Paleo friendly…:)

    OK, so this might souind like a stupid question, but I’ll ask anyways. :) If I want to do make these into “bars” would that batter fit in a 13×9 or more like 9×9 pan? I making these this week!! I need something quick and easy for breakfast in the morning during the week, this may be one of solutions! :) Loving these recipes…can’t wait for the book to come out!!! I just went Paleo and love it…feel great now that I really pay attention to eating clean.

    I have this in the oven now and it smells like apple pie!! uhh heaven. my sister’s nickname has been Apples for many years now so I baked these for her!! she follows a pure junk food diet so I am excited to see what she thinks. this is the ultimate test- for non-paleo eaters to like paleo foods.

    Good only wish they were sweet. These aren’t sweet at all and I personally would like them better if they were. Maybe I’ll add honey next time.

      Amosannette these were made to purposely not be sweet, you for sure can add honey or drizzle them with honey

      I made sandwich cookies out of them with some peanut butter in the middle
      The sugar in the peanut butter made them a bit more palatable and added some good protein

      Dave, you will have to google conversions to know what a cup translates to in measurements. As for calorie content, I don’t measure or track any of that. You can find it by plugging the recipe into myfitnesspal.com or fitday.com

    These came out of the oven a few minutes ago and are almost gone already! I halved the recipe (short on almonds) but since you can’t “half” three eggs I added some raisins so they wouldn’t be too moist. They are delicious and the raisins varied up the texture nicely. Thanks for the recipe!

    I made this as a loaf and then cut it into slices and then baked for more time like biscotti. (at least 10 minutes per side at 350, I went longer to dry them even more)

    Here’s a little tip, if you don’t want to bake up all the batter at once. Scoop balls onto parchment paper lined baking sheet. Then freeze for 30 mins. Then place the balls into a zip lock bag and store in the freezer. Then bake off the cookies as you need them.

    So after a slight hiatus from eating pure paleo I am back and ready for some treats. these cookies are really Yummy! It’s a nice change from almond-flour based cookies. The bits of chunky pieces of apples and almonds are a nice surprise. I added chopped pecans to mine for a bit more sweetness. Top them with some grass-fed butter..delish!!!

      It wouldnt be the same but you could try it, I would say start with a cup and see what kind of consistency it gets you

    I didn't have quite enough almonds so I threw in a 1/2 c of macadamia nuts…they were tasty! I think I could have cooked them a bit less though. This is my first time trying any of your recipes, and I am excited to try more!

    Oh yes you need coconut oil plus cook them a little less, they are really delicate depending on the size. And veggie oil isn't paleo

    Yes almond meal will work, just start with 1 Cup and if its too liquidy just add it by the quarter cup, I am guessing it will end up being around 1.5 cups

    Made these last night. Yummy! These would be good with raisins or cranberries added. Trying to make "treats" for my 15 year old daughter so she can stay Paleo to get her excema cleared up. She is doing really well and her skin is slowly starting to look better.Love your recipes!
