Ok I have two important things to cover before the recipe. First, this recipe tastes amazing because of the amazing Macadamia nuts I get right up the street from my awesome friend Rina at Cali Mac Nut Company. She provided me with these delicious nuts plus gave me the recipe that I just made a few minor adjustments too. Second, I have not tried this recipe with any nut butter besides Macadamia. I have no idea if it will work with almond, coconut, sunflower seed or any other butter you can make. It might but I am not sure.
If you couldn’t tell, I tried to get all cutesy with the photos. I don’t know if I succeeded because I didn’t really have a stand out favorite. They aren’t the worst photos I have ever taken but I was having a creativity block when it came to styling. I hope they look good enough to get your mouth watering. Just so you know, the gorgeous drops of sweetness on the below photo is some honey I drizzled on the cookies. You don’t need it but I was in a sweet moment.

Macadamia Nut Apple Cookies
Ingredients
- 2 cups raw macadamia nuts 262 grams (If using premade macadamia nut butter it is 257 grams)
- 1 large egg
- 4 tablespoons unsalted butter 60 grams
- 1/3 cup raw organic honey 87 grams
- ½ teaspoon sea salt
- ¼ teaspoon allspice
- ½ teaspoon cinnamon
- ¼ cup coconut flour 40 grams
- 1 teaspoon baking soda 7 grams
- 1 small apple diced
Instructions
Macadmia Nuts
- Preheat your oven to 325 Degrees Fahrenheit (163 Celsius)
- Place your macadamia nuts in your food processor or Blend-tec and process to a coarse butter scraping down the sides as needed
- Add your egg, butter, and honey and process to combine
- Add in your salt, all spice, and cinnamon and process to mix well
- Add your coconut flour and baking soda and process one last time
- Transfer to a large mixing bowl and stir in your diced apples
- If your dough is hot because of your food processor, chill your dough in your refrigerator
- Using a medium cookie scoop I got 16 cookies but you can make them whatever size you would like
- Spread your cookies out on a parchment paper lined cookie sheet and press them down to look like cookies
- Bake for 15 minutes for a still chewy but nicely baked cookie
- Remove from the oven and let cool
Macadamia Nut Butter
- Place your macadamia nut butter in a large mixing bowl
- Melt your butter and then add to the mixing bowl with the egg, honey, salt, all spice, cinnamon and using a hand mixer or whisk, mix well
- Add in your coconut flour and baking soda and mix until incorporated
- Add in your diced apples and mix by hand
- Using a medium cookie scoop I got 16 cookies but you can make them whatever size you would like
- Spread your cookies out on a parchment paper lined cookie sheet
- Bake for 15 minutes for a still chewy but nicely baked cookie
- Remove from the oven and let cool

I love using Grade B Maple Syrup! It’s not as thick as honey, but it should work just as well.

Hi! I’m wondering if I could take out the apples? Do i need to replace them with anything else? I’m worried that it won’t keep as long if I added a fresh apple.

You can take them out, you can substitute with any fruit you want or leave them out

I made this recipe with hazelnuts and they are sooo good! I was a little surprised by the stickiness of the dough it was really hard to get it out of the bowl and onto the pan but a little greasing with some butter helped. Thanks for another great recipe. I am going to make these for Passover next week.

I just made these cookies and have eaten 4 still warm :) They are very very good! I diced the apple up very small and cannot taste it (not a warm fruit kind of person.) I followed the recipe exactly but mine came out not flat at all like the pictures. I cooked a few extra minutes bc of this. Hopefully there will still be some left when my husband gets home :)
