BBQ Bacon Asparagus

I don’t eat Asparagus a lot but my friend bought it and loves it so I decided to make it a little differently to ensure I like it no matter what.  I LOVED IT, I ended up eating most of it and she was mad she didn’t get much.  Here is a super simple way to eat it and you can bake it or grill it, the choice is yours.  You will get more BBQ Flavor out of grilling it but the option is yours.  Hope you enjoy :)

BBQ Bacon Asparagus

Ingredients
  

  • 1 lb fresh asparagus spears trimmed
  • 8-10 slices of nitrate free bacon
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika

Instructions
 

  • Preheat your oven to 400 degrees fahrenheit
  • Slice your pieces of bacon in half crosswise
  • Mix your salt, pepper, garlic, onion, and paprika in a dish and mix well
  • Wrap each of your asparagus spears with a half strip of bacon leaving the end and tip exposed
  • Lay your spears out on a aluminum foil lined baking sheet shiny side down
  • Take your spice mixture and sprinkle it over all of your asparagus to your liking
  • Bake in your oven for 20-25 minutes or until your bacon is done
  • Remove from oven and serve
  • Enjoy

    I did it a little differently: I wanted the spice to shine a little more, so I spiced the bacon while it was all layed out flat and THEN wrapped the asparagus. Delicious!!

    These were certainly a success in our house. I had a lot less bacon than I thought I did so I bundled my asparagus in 3’s and wrapped them (which only made 6 bundles since i only had 3 pieces but i just cooked the others in between the bundles so they still cooked in the bacon fat…this part I must say…my non green veggie eater of a picky son ate 3 bundles on his own. This kid cannot be paid to eat green vegtables so you can imagine my surprise when he asked for seconds and then thirds!! Two thumbs up on this easy recipe!
