For this, you need one cup of chopped almonds, one cup of chopped walnuts, one cup of unsweetened coconut flakes, one-fourth cup of sesame seeds, two tablespoons flax seeds, two tablespoons chia seeds, half teaspoon ground cinnamon, half teaspoon ground clove, one teaspoon pure vanillas extract and half teaspoon kosher salt, one-fourth cup coconut oil and one large egg white.
To make this recipe you can preheat the oven to 350 degrees and grease the baking sheet well. Now mix all the chopped nuts and seeds and mix in the remaining grounded ingredients like clove and cinnamon, vanilla extract and salt.
Take a separate bowl and beat the egg white until foamy and then add it to the granola. Next, you can add coconut oil and stir it well until all the ingredients are coated. Prepare the baking sheet and pour the ingredients and spread it evenly. Bake the mixture for 20 to 25 minutes until the mixture is golden. Once done let it cool completely and then you can have it will milk or keto ice cream.
If you love mushrooms you can enjoy it the right way with eggs, kale and garlic. This brunch recipe is easy to make and is fiber rich and gluten-free as well. Eggs are one of the best foods to eat on a keto diet.
For this, you need 250 grams of mushrooms, one garlic clove, one tablespoon of olive oil, 160 grams of kale, and four eggs.
Take a large non-stick frying pan and heat the olive oil. In the meantime, you can slice mushrooms and crush the garlic clove. Fry the garlic for a minute on low heat and then add the sliced mushrooms. Cook until the mushrooms are soft and later add kale. After a few minutes, the kale will wilt and that is when you add the eggs to it. Let the eggs cook on it for 2-3 minutes. Cover the lid of the frying pan and cook for another 2-3 minutes Make sure that the eggs are cooked to your preference. Once done you can serve it with bread to have a delicious brunch.
While there is no room for pancakes in a healthy diet you can certainly make changes to it and make it healthier. However, for this, we will switch to almond flour instead of regular wheat flour.
For this recipe, you will need four eggs, 75ml almond milk, one teaspoon stevia, one teaspoon baking powder, a pinch of ground cinnamon, 175 grams of almond flour, and half a teaspoon vanilla extract.
To begin with, you can whisk the eggs and almond milk together in a bowl. Later you can add stevia, baking powder, cinnamon; almond flour and vanilla extract to the bowl and stir well. On the other side, you can heat a frying pan on medium heat and pour in a couple of tablespoons of the batter. Cook the batter until the edges are set and then flip and cook it again. Repeat the same process with the rest of the batter. You can enjoy these pancakes with maple syrup or just add a few blueberries to them.
