Pumpkin Spice Latte
Ingredients
- 1 cup coconut milk
- 1 1/2 tablespoons pureed pumpkin
- 1 tablespoon organic vanilla extract
- 2-3 tablespoons raw organic honey optional
- 1/4 teaspoon ground cinnamon
- pinch of nutmeg or allspice
- 1/2 cup Hug In A Mug Coffee or espresso
- pinch of cocoa powder
Instructions
- Brew Hug In A Mug Coffee or espresso first however you like. I used organic regular coffee and used 2 tbsp ground coffee to every 1 cup of coffee
- In a sauce pan over medium heat, add coconut milk, pureed pumpkin, and raw organic honey until your coconut milk is bubbling and steaming
- Remove from heat, stir in vanilla, cinnamon, and nutmeg
- Pour into the bottom half of a coffee cup, then pour in your strong coffee or espresso on top of it
- If you have or have made coconut whip cream you can add it on top and then sprinkle with some cocoa powder
- I served mine with my Homemade Holiday Lara Bars

What a delicious way to enjoy pumpkin. Its look delicious. Thanks for sharing.

After trying this recipe this morning, I was disappointed with the result. Unlike most pumpkin spice latte recipes with coconut milk that I have previously used from other sources, this variant does not involve frothing the coconut milk to make it foamy. The end result is a uninspiring looking pumpkin spice latte, which also ends up being too sweet.
George Bryant
Thanks for the feedback, try frothing it then if the flavors work. If not, then I hope you find a better one. I will have to revisit this recipe and see if I can improve it.

If I wanted to double or triple the recipe so that I can have it easily in the mornings on my way to work. Do you think I could store it in the fridge and just heat it up in the mornings before I put the coffee on top?
Cait
Love this recipe! I adjusted by using 1 teaspoon of pumpkin pie spice, which has cinnamon/nutmeg/ginger/allspice/cloves. Also, I used about 1.5 tablespoons of maple syrup vs. honey. It was so good I made a triple batch for easy re-heating throughout the week.
Brooke
A tablespoon of vanilla? Surely that’s a typo. Right?
Cait
I made mine with 1 tablespoon, and it tastes fine. Then again, all of the similar recipes I’ve seen call for about a teaspoon, so maybe try that and add a touch more if you think it’s needed.

This is crack. Wowza! My husband and I are sipping {inhaling} our lattes right now! I haven’t been able to drink a PSL for years due to illness and food allergies, so this is an indescribable treat! I can’t do coffee (or caffeine of any kind, even decaf), so I used a cinnamon spice tea and cut back on the ground cinnamon. Added half a TBSP of raw honey to each of our cups. Perfection! Thank you so much for such a great recipe!! (The rating stars won’t let me click FIVE, only four, but this is a five-star concoction!)

Can’t wait to make this! Can you please share the link for the coconut whipped cream?
Jennifer
Heaven, I’m in heaven!! Thanks! So yummy and my 3 yr old likes the mix sans coffee. Great fall morning treat :)
Amanda
George, I adore you for this recipe! Pumpkin spice is the best flavor ever ever, so to see a paleo version just makes my entire life! I wonder if you could make other latte recipes.
You are a genius. Do it for the coffee lovers. Do it for the fans. Do it for bacon.
George Bryant
I will see what I can do :)

2 years later and this post is still awesome.
My changes:
Diluted 1/2 cup full fat coconut milk with water because I’m skinny I’d like to stay skinny! ;)
1tsp vanilla
After everything mixed except the coffee, I blended it and then poured the coffee over it.

It is literally -20 degrees here in Toronto. I was in need of something to warm me up & made your Pumpkin Spice Latte. It is fantastic! Easy to made with tons of sweet flavours and aromas. Great job, George :).
Maria
This is such a great recipe! However, I am going through TONS of organic vanilla. Do you have any recommendations for a substitute? :)
George Bryant
Have you considered leaving it out? Unfortunately I don’t know of any substitute except other flavor extracts like almond etc
Allison
Made this one cold night last week, so easy and SO good!!
George Bryant
I am so glad you love it. And yes I love this so much more than Starbucks.
Ann
I made this twice this weekend (it’s finally fall!) – once with vanilla and once with maple extract – both were delicious.

Yummy. So happy you enjoy

George, I finally found your amazing site last week. I don’t know how it took me so long, I follow many of the sames sites you have listed on your page.
I’m blown away by your passion for life, food and others.
Congrats on your new journey going back to school!
I wish you continued success and blessings!
Oh, and about this recipe, it was amazing! I have been looking for a way to make something like this for Fall, and this hit the spot! Now I have another treat I don’t have to feel guilty about!
Rock on George!
Nat :-)

Do you think I could make the mixer in bulk and store in the fridge to mix with hot coffee in the morning. or do you think the pumpkin will clump up? I just never have much time in the morning so it would be nice to make it a added “creamer” of sorts.
thanks! it was delicious when i made it :)
CivilizedCaveman
I have honestly never tried, I think you would be good at least for 1-2 days
Kim
Hi, are you referring to coconut milk from the can…or the cartons like “So Delicious” brand? Thanks…can’t wait to make it!
CivilizedCaveman
From the can
Carine
Oh my George! This was amazing. We had these with breakfast since it is a nice fall morning here in the PNW. I will never miss the big-chain version of this ever again. Keep up the good work. We always use your site!
CivilizedCaveman
Thank you so much Carine. I am so glad you enjoyed. Do me a favor and keep being awesome, your encouraging words were much appreciated this morning
Qajaq
That seems like a lot of Vanilla Extract? Is the measurement correct?
Civilized Caveman
When I made it that is how much I used. You can definitely adjust
Michelle P
I agree with Qajaq; I 2 TBSP seems like a lot for 1 cup!! Maybe your brand is not as strong? I have the costco vanilla and I used 1 TBSP and it was still too strong– couldn’t taste the pumpkin at all; just vanilla. Fortunately, easy to fix by adding more pumpkin! But just thought I’d add that you may want to say vanilla to taste or something because 2 TBSP would’ve totally ruined the pumpkin flavor. I also added pumpkin pie spice flavoring to help with getting the right flavor. But otherwise, a great recipe! Thanks!
George Bryant
I will note that. Thank you
Shari
Yum! I’ve made this several times, and can’t wait to have it this morning!
Civilized Caveman
So glad you enjoyed. I love this one
George
Thats so awesome to hear, keep rocking it Monica

This drink is amazing. I have made it myself but using almond milk and persimmons instead of pumpkin. My non Paleo friends don't even notice how healthy and sugar free this is. I love the vanilla……Great touch.
George
You are most welcome Rikie :)
Rikie
I made this yesterday and was asked to make it again this morning. :) Awesome recipe, thanks!
George
I do, give it a shot Joline :)
Joline
Think this would work with chai tea? I think I might try it….I miss starbucks :(
