Pumpkin Pancakes

Here is a great October breakfast in May of Pumpkin Pancakes.  After a dear friend asked me the best way to modify another recipe to make Pumpkin pancakes, I decided just to do it for her, bring her the results and then share the recipe.  These turned out absolutely amazing since I ate all 10 of them by myself, OOPS.  Enjoy and feel free to make double or triple the recipe, these are great frozen and then warmed up for breakfast :)

Pumpkin Pancakes

Ingredients
  

  • 6 eggs
  • 6 tablespoons coconut milk
  • 3 teaspoons honey
  • 1/2 teaspoon sea salt
  • 8 tablespoons coconut flour
  • 4 tablespoons pumpkin puree
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 teaspoon allspice
  • coconut oil to grease pan

Instructions
 

  • Combine all the above ingredients except the coconut oil in a medium mixing bowl
  • Make sure you beat them until there are no lumps, you can do this by hand with a whisk.
  • Preheat a griddle or pan with coconut oil to about 350 degrees or a medium heat on a burner no different then you would cook a regular pancake
  • Spoon the batter on your pan to the desired size you would like
  • They won't bubble on the top like traditional pancakes but should take about 4-5 minutes per side, you can do the spatula test and see how well it slides under.
  • Once they are complete, plate and serve as is or with 100% pure maple syrup.
  • Enjoy

    They turned out too dry for me. They scratched my throat going down. I added some apple sauce to the second half of the batch and it helped, but they were still suffering from that “coconut flour is a thirsty mistress” problem. The flavor was fantastic though. I am wondering what would happen if I tweaked it to use a mix of coconut and almond flours.

    I can’t blame the recipe for how I screw up the flip every single time. :p

    Does anyone have tips for preventing these types of Paleo pancakes from sticking to the bottom of cast-iron skillets? This recipe looks great, and I’m hoping not to end up with scrambled pancakes yet again :).

      Max you need I get your cast iron skillet properly seasoned and over time it will stick less and less. My friend Michelle from nomnompaleo.com did a whole post on this. You can search her site

    Did this one today without agave nectar and substituted steamed sweet potato pith for the pumpkin. I topped them with a paste made from pecans, coco powder and stevia… Notella so to speak. As always George, your recipes are bomb. Thank you! Time to hit the gym.

    Made these this morning, halving the recipe. A must add: raisins. I soaked some in boiling water with a splash of brandy and vanilla. I have to have raisins in all things pumpkin. Another great add in: smear a little coconut butter on top of each pancake as you stack them…ahhhmazing. Thanks, George, these were great and I was glad to find a pumpkin pancake recipe without almond flour. 5 stars!

    Lu I am sorry, I have tried that before and it takes as long as it does to type a post for me to get nutritional information. On Paleo I don't count but you can always go to http://www.myfitnesspal.com and put in all this stuff and it will calculate for you. Hope this helps

    These are great, my 1 year old ate 4 of them at one sitting, yeahhh! I love knowing my kids are getting real quality food and not just junky fillers, and they are still super yummy! I will be making a big batch in the morning and trying to freeze them for breakfast throughout the week.
